1 cup whole wheat flour
⅓ cup non-fat plain Greek yogurt
¼ cup all-purpose flour
¾ teaspoon baking soda
¾ teaspoon baking powder

½ cup dark brown sugar
2 large eggs, beaten
¼ cup butter, softened
¼ cup cane sugar
1 ½ teaspoons vanilla extract
1 ¼ teaspoons ground allspice
½ teaspoon ground nutmeg
1 cup mashed banana
¾ cup shredded unsweetened coconut
¾ cup confectioners' sugar
2 tablespoons unsweetened cashew milk, or more as needed
½ teaspoon coconut oil, melted
⅛ teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.
  • Mix whole wheat flour, Greek yogurt, all-purpose flour, baking soda, baking powder, and salt together in a bowl.
  • Combine brown sugar, eggs, butter, cane sugar, vanilla extract, allspice, and nutmeg in a large bowl; mix until well blended. Stir in flour mixture. Fold in mashed banana and shredded coconut until evenly combined. Spoon batter into the prepared pan.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes. Remove from oven; turn over onto a wire rack to cool, about 30 minutes.
  • Combine confectioners' sugar, cashew milk, coconut oil, vanilla extract, and salt together in a bowl; stir until mixture is creamy. Drizzle over cooled cake.

My Favorite Glazed Banana Cake image

I've searched high and low for the *perfect* banana cake; well, I think I've found it! This is moist and delicious, easy to make, and the perfect way to use up the oldest, blackest bananas you can find. The glaze topping is a nice change from the typical cream cheese icing, because it's not overpowering--it really allows the full flavor of the banana cake to shine through. Use your choice of ground walnuts or ground pecans in this cake--I've tried both, and either one works fine. I hope you enjoy this recipe as much as I do !! I think it's just fantastic!! (Chris says it reminds him of Entemann's banana cake, only better! How's that for a compliment!) Number of servings depends on how big you make your slices.

1/2 cup butter, softened
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups flour, all purpose
1 teaspoon baking powder

3 bananas, mashed (over-ripe is best, with black peel)
1/2 cup milk
1 cup ground pecans or 1 cup walnuts
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons milk (or more)
1/2 cup pecans or 1/2 cup walnuts, chopped,whole,or ground,for garnish (OPTIONAL)

Steps:

  • In mixing bowl, cream butter and sugar until light and fluffy.
  • Add eggs, one at a time, combining well, then add vanilla.
  • In seperate bowl, combine all dry ingredients (flour, salt, spices, baking powder, and baking soda).
  • Add dry ingredients to creamed butter mixture, alternating with milk and bananas (you can combine milk with mashed bananas to make this step easier).
  • Stir in nuts, and pour into a greased 9 x 13 inch baking dish.
  • Bake at 350 degrees for 30-40 minutes, or until done (insert toothpick or caseknife into center of cake-if it is clean when removed, cake is done).
  • Allow to cool in pan before glazing.
  • GLAZE: Cream butter and sugar, then add vanilla and just enough milk to reach spreadable consistency-you may need as much as 4 tablespoons.
  • Decorate surface of glazed cake with nuts, if desired.
  • This cake refrigerates very well, making it a great"make ahead" dessert.
  • For OAMC, freeze slices of unglazed cake-allow cake to thaw before glazing.

Deliciously moist, flaky, and crumbly banana nut scones with maple glaze. Not quite banana bread or banana muffins, but everything you crave for breakfast!

1 cup mashed bananas (about 2 large ripe bananas)
1/4 cup (60g) plain Greek yogurt (or any plain yogurt or sour cream)
1/2 cup (100g) packed light or dark brown sugar
1 large egg
1 teaspoon pure vanilla extract
2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
2 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon salt
5 Tablespoons (70g) unsalted butter, frozen
1 cup (125g) chopped walnuts (optional)
top before baking: 3 Tablespoons (45ml) milk and coarse sugar
2 Tablespoons (30g) unsalted butter
1/3 cup (80ml) pure maple syrup
1 cup (112g) sifted confectioners' sugar

Steps:

  • Preheat oven to 400°F (204°C). Line 2 large baking sheets with parchment paper or a silicone baking mat. Set aside.
  • In a medium bowl, beat the mashed bananas, yogurt, brown sugar, egg, and vanilla extract together. Set aside.
  • In a large bowl, whisk the flour, baking powder, cinnamon, nutmeg, and salt together. Grate the frozen butter (I use a box grater to grate it; a food processor also works for grating). Toss the grated butter into the flour mixture and combine it with a pastry cutter, two forks, a food processor, or your fingers until the mixture resembles coarse meal. Set aside.
  • Drizzle wet ingredients over flour mixture, add the walnuts, and then toss the mixture together with a rubber spatula until everything appears moistened. Try your best to not overwork the dough at any point. Dough will be sticky and a little wet. Drop scones, 1/4 cup of dough each, at least 3 inches apart on the prepared baking sheet. Brush scones with milk, then top with a little coarse sugar if desired for extra crunch. Tastes great!
  • Bake for 20-25 minutes or until lightly golden and cooked through. Remove from the oven and cool as you make the icing. The scones taste even better after they cool down!
  • In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the sifted confectioners' sugar. Drizzle over scones.
  • Scones are best enjoyed right away, though leftover scones keep well at room temperature or in the refrigerator for about 3-5 days.

8 whole bananas
1 pint heavy cream
1/2 cup sugar
1/2 teaspoon chopped candied fruit (as angelica or red cherries)
1 teaspoon black raisins
1 tablespoon chopped peanuts
1 tablespoon slivered almonds

Steps:

  • In a blender, beat mashed bananas, cream and sugar until frothy.
  • Pour into freezer trays and freeze for 1 to 2 hours until partially firm.
  • Cut 8 bananas in half lengthwise and then in half across.
  • Place 4 pieces in a row side by side on a dessert plate.
  • Spread the frozen bananas uniformly over the fresh bananas.
  • Sprinkle with toppings.
  • Serve immediately.

Stir flour, ginger, cinnamon, baking soda, cloves, allspice, and salt together in another bowl. Stir flour mixture into the banana mixture until just incorporated. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes. Let cool completely, at least 30 minutes. Turn bread out of the pan.
  • Combine 1 tablespoon milk, corn syrup, and butter in a bowl. Add confectioners' sugar and stir. Add vanilla extract and enough remaining milk to achieve a drizzling consistency. Pour glaze over the cooled bread.

Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
