CRACKER JACK COOKIES

This is a great batch of cookies to make for school bazaars or for your own home. Absolutely delicious, my kids love them. But this does make a large batch. I usually do half now and it makes 48 cookies. I vary the optional with coconut or chocolate chips or raisins. Sometimes I separate the batches and mix in chocolate chips in one and raisins in another.

Number Of Ingredients 14

1 cup margarine or 1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt (optional)
2 cups rolled oats
2 cups crispy rice cereal
1 cup coconut, shredded (optional)
chocolate, chip (optional)
raisins (optional)

Steps:

  • In a large bowl cream together shortening, sugars, eggs and vanilla. Mix well.
  • Combine dry ingredients and mix into wet ingredients
  • Add cereals and optional mix and stir well
  • Drop by Teaspoon fulls onto lightly greased cookie sheet.
  • Bake at 350 F for 10 or 12 minutes.

This is a very old recipe from at least the 30's. The name comes from the old expression meaning 'great'.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
2 cups quick cooking oats
1 ½ cups flaked coconut
2 cups crisp rice cereal
1 ½ cups chopped salted peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the butter, white sugar and brown sugar. Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, baking soda, baking powder and salt, stir into the creamed mixture. Gently stir in the oatmeal, coconut, rice cereal and chopped peanuts, try not to pulverize the rice cereal.
  • Drop dough by teaspoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.

1 cup butter
1 cup sugar
1 cup brown sugar, firmly packed
2 eggs
2 teaspoons vanilla
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
2 cups old-fashioned oatmeal
2 cups Rice Krispies
1 cup coconut
1/2 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine flour, baking powder and baking soda; set aside.
  • In a large bowl, cream butter, sugar, brown sugar, eggs, and vanilla.
  • Add flour mixture; mix well.
  • Fold in oatmeal, rice krispies, coconut, and nuts.
  • Bake on ungreased cookie sheet for 8 minutes.
  • Cool on wire rack.

APPLE JACK COOKIES

1/2 cup shortening
1 egg
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon nutmeg
1 cup apple, chopped unpeeled

Steps:

  • Cream together sugar and shortening.
  • Beat in egg.
  • Sift together dry ingredients; add to mixture.
  • Beat until well blended.
  • Stir in apples.
  • Drop in the shape of a ball on a greased cookie sheet.
  • Bake at 375°F for 12 -15 minutes.

Wow! These are outta this world tasting! My favorite cookie. So simple and quick to make. I usually make the icing more of a glaze, but you can make it thicker if you like. Delicious!

1 cup dates, chopped fine
1/2 cup chopped nuts
1 can Eagle Brand Condensed Milk
townhouse cracker
1/4 cup melted butter
1 teaspoon vanilla
powdered sugar
milk, to desired consistency

Steps:

  • Mix first 3 ingredients together.
  • Put in double boiler, cook till thick.
  • Cool.
  • Spread on Townhouse crackers.
  • Place on greased cookie sheet.
  • Bake at 300 degrees for 10 minutes.
  • Cool, then ice.

Combine the flour, baking powder, baking soda, cinnamon and nutmeg; gradually stir into the creamed mixture. Finally, stir in the oatmeal, coconut, crisp rice cereal and chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup stick margarine, at room temperature
1 cup light brown sugar, packed
1 cup white sugar
2 large eggs
2 teaspoons pure vanilla extract
2 cups quick-cooking oatmeal
2 cups Rice Krispies
1 cup flaked coconut
1 cup walnuts, chopped

Steps:

  • Preheat the oven to 350.
  • Lightly grease baking sheets. Set aside.
  • In a lg. mixing bowl, whisk together the flour, baking powder, soda and salt.
  • Transfer to a lg. piece of wax paper.
  • In the same bowl, use an electric mixer on medium speed to cream the margarine, brown sugar and white sugar until light and fluffy.
  • Add the eggs and vanilla. Mix well.
  • Stir in the dry ingredients mixing well.
  • Stir in the oatmeal, Rice Krispies, coconut, and walnuts.
  • Drop the dough by the heaping teaspoonful onto the prepared baking sheets.
  • Bake in the center of the oven about 10 mins., or until lightly browned.
  • Cool on wire racks.
