BAKED WALLEYE WITH SHRIMP RECIPE - (4.5/5)

Baked Walleye with Shrimp Recipe - (4.5/5) image

Provided by Carolanne

Number Of Ingredients 16

3 lbs. walleye fillets
1 egg
1/2 Cup water
1 Cup flour
1 tsp. salt (Cliff likes COARSE SEA SALT)
1 tsp. GROUND WHITE PEPPER
1 Cup bread crumbs
1-2 tsp. LEMON PEPPER, RUTH ANN'S MUSKEGO AVE. or SUNNY SPAIN, optional
1/2 Cup vegetable oil
1/4 Cup butter
1/2 Cup chopped onion (1 small)
1/2 Cup chopped celery (1-2 ribs)
1/2 Cup chopped red bell pepper (1/2 pepper)
1/2 Cup chopped orange or yellow bell pepper (1/2 pepper)
1 lb. medium shrimp, shelled (Cliff uses wild shrimp)
1/4-1/2 Cup shredded cheese, optional (Parmesan or mozzarella would both be nice)

Steps:

  • In a wide, shallow bowl, beat together the egg and the water. On a plate with a rim, combine the flour, salt and WHITE PEPPER and mix well. Put the bread crumbs on a second rimmed plate. Sprinkle the fillets with LEMON PEPPER, MUSKEGO AVE. or SUNNY SPAIN (if using). Dip the fillets in the seasoned flour, then in the egg wash and then in the breadcrumbs. Heat the oil in a large, heavy frying pan. Fry the fillets, being sure not to overcrowd, until nicely browned on both sides. Undercooking is better than overcooking. Set all the cooked fillets aside and keep warm. In the same pan, drain off the vegetable oil, trying to leave any browned bits in the pan, and melt the butter. Sauté the onions, celery and peppers until soft and set aside. Cook the shrimp until done in the same pan. Put the veggies in a baking pan; add the shrimp and then the walleye fillets in one layer. Sprinkle with cheese if desired. Broil for a few minutes to melt/brown cheese or just to crisp everything up and serve immediately.

WALLEYE CAKES

Walleye Cakes image

I have seen a lot of recipes for walleye fish, but they all seemed to be breaded and deep-fried or battered and deep-fried or just baked... So I figured if you can make fish cakes tasty with salmon and so on... Why not post a recipe up for walleye... Frankly I am just tired of deep frying up walleye once a week. It is time for a tasty change.

Time 55m

Yield 6

Number Of Ingredients 14

1 cup cornflake crumbs
1 cup dry bread crumbs
3 tablespoons all-purpose flour
18 ounces skinless, boneless walleye fillets
8 baby carrots, finely chopped
1 zucchini, finely chopped
2 small onions, finely chopped
1 tablespoon garlic, minced
2 large eggs, beaten
1 teaspoon dry mustard
3 tablespoons lemon juice
1 teaspoon salt
ground black pepper to taste
3 tablespoons butter

Steps:

  • Combine the cornflake crumbs, bread crumbs, and flour in a shallow dish; set aside. Grind the walleye fillets, or chop finely and place into a mixing bowl. Add the carrots, zucchini, onions, garlic, and eggs. Season with dry mustard, lemon juice, salt, and black pepper. Mix with your hands until evenly combined.
  • Form the walleye mixture into 1/3-cup cakes about 3/4-inch thick, and press into the cornflake mixture. Set the walleye cakes onto a baking sheet in a single layer -- do not stack.
  • Melt the butter in a large skillet over medium heat. Cook the walleye cakes in batches until firmed and golden brown on each side, about 8 minutes per side.
