Almond Crusted Salmon with Honey Garlic Sauce image

This recipe for almond crusted salmon with honey garlic sauce is a healthy and quick 7 ingredient meal that's full of flavor.

1 1/4 pounds salmon (, cut into 4 fillets)
3/4 cup roasted salted almonds (, finely chopped or coarsely ground in the food processor)
1/4 cup sesame seeds
2 tablespoons olive oil (, divided use)
salt and pepper to taste
3 tablespoons honey
2 tablespoons soy sauce
1/2 teaspoon minced garlic
Optional garnish: sliced green onions and sesame seeds

Steps:

  • For the sauce: mix together the honey, soy sauce and garlic. Add salt and pepper to taste. Set aside.
  • For the salmon: Mix together the almonds and sesame seeds and pour onto a plate.
  • Brush one of the tablespoons of olive oil evenly over the salmon fillets.
  • Press the top of each salmon fillet into the almond mixture. Season the top of each fillet with salt and pepper to taste.
  • Heat the remaining tablespoon of olive oil in a large pan over medium heat.
  • Place each salmon fillet, crust side down, into the pan and cook for 5 minutes, checking occasionally to make sure the crust isn't burning. Flip and cook for another 5-7 minutes or until salmon is at desired level of doneness. The length of time it takes to cook will depend in part on the thickness of the fillet.
  • After the salmon is cooked through, transfer it to a serving platter and pour the reserved honey garlic sauce over the top. Garnish with green onions and sesame seeds if desired.

3 tbsp honey
2 tbsp avocado oil
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/4 cup sliced almonds
Chopped fresh herbs
Lemon slices

Steps:

  • Preheat your oven to broil and place a rack on the top position.
  • In a small bowl or measuring cup, combine the honey, avocado oil, lemon juice, salt and pepper; mix vigorously with a fork or flat whisk until well combined.
  • Place the fish fillets skin side down on a roasting pan and brush them with about half the glaze. Place the pan directly under the broiler for 6-8 minutes, until the fish is cooked to your liking and the top is nicely golden and slightly caramelized.
  • Meanwhile, toast the sliced almonds in a small skillet set over medium heat until fragrant and slightly golden, about 2-3 minutes.
  • Remove the fish from the oven and brush the pieces with the remaining glaze and then sprinkle with the sliced almonds.
  • Serve immediately, garnished with chopped fresh herbs and lemon slices, if desired.

800 g salmon fillet with skin
70 g almonds
2 tbsp honey

Steps:

  • Place the salmon fillet in an ovenproof dish. Face the skin side down.
  • Coarsely chop the almonds.
  • Using a table spoon; distribute the honey on the salmon fillet.
  • Season with salt and then sprinkle the chopped almonds on the honey coated fillet.
  • Bake the salmon fillet for about 15-20 minutes at 200 C (400 F). The salmon is done when the meat turns light-pink and the meat easily fall apart.

½ teaspoon kosher salt
3 tablespoons honey
3 tablespoons water
1 tablespoon almond oil

Steps:

  • Spread almonds in a single layer on a baking sheet and place in a cold oven.
  • Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
  • Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
  • Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.
  • Transfer coated almonds to the large bowl sprinkled with sugar mixture. Sprinkle remaining sugar mixture over almonds; toss to coat evenly.
  • Spread almonds onto waxed paper to cool completely. Store at room temperature in a tightly covered container or plastic bag.

⅓ cup thinly sliced green onions
2 tablespoons soy sauce

I am sick *cough* so I am putting honey on everything. Don't judge me. I dredged salmon in honey and then freshly ground raw almonds, and then I pan fried in vegan butter. Again, don't judge me. It was lightly sweet, crunchy and made me feel better about feeling so miserable *hacking cough* I then went on the web and found this recipe at http://nordicfoodliving.com/baked-salmon-with-honey-and-almonds/. You can do it their way or use the ground raw almonds like I did. I also did not use salt. Judge me now.

1/2 salmon fillet, with skin (700 to 800 g or 1.5 to 2 lb)
70 g almonds (2.5 oz)
2 tablespoons honey
salt (optional)

Steps:

  • Place the salmon in an oven proof dish, skin side down.
  • Coarsely chop the almonds (I ground raw, unsalted almonds into coarse meal).
  • Using a spoon, spread honey on the fillet.
  • Season with salt (optional) and then sprinkle chopped almonds on top.
  • Bake the salmon fillet for about 15 to 20 minutes at 200 C (400 F). The salmon is finished when its meat is light pink, and the meat flakes apart. Warning: pan frying sucks. Do not use tongs. Repeat: do not use tongs!

Fast enough for a weeknight supper, and fabulous enough for a weekend dinner party!

Yield Enough for 2 to 4 servings, depending on appetites

Number Of Ingredients 5

Salmon fillet -- 1 1/2- to 2-pounds
Honey mustard -- about 4 ounces
1/4 teaspoon kosher salt and several grinds of fresh pepper
1/2 teaspoon dried thyme leaves
Sliced almonds -- about 1/2 cup, or enough to evenly coat the fish

Steps:

  • Center the oven rack, and preheat the oven to 425°F. Lay the fillet in a greased baking dish. Coat the fish with the honey mustard, and sprinkle with the salt, pepper, and thyme. Top with the sliced almonds, scattering them evenly over the fish. Gently press the almonds down with the back of your impeccably clean hand.
  • Bake in the preheated oven until the fish is cooked through, and the almonds color just slightly -- about 25 minutes. It is almost impossible to over cook the fish. The honey mustard will act as a sealant, and keep the fish from drying out.
  • Serve hot, along with blanched green beans, white or brown rice, and plentiful goblets of Pinot Grigio.

  • Mix breading ingredients together in large bowl. Set aside.
  • *NOTE: You can crush almonds by pulsing them in a food processor or high-speed blender, or by carefully cutting almonds with a sharp knife.
  • Whisk egg in a separate bowl.
  • Dredge the salmon in the egg, then the breading mixture.
  • Heat olive oil in a skillet on medium heat.
  • Once the pan is ready, add the salmon and let cook on one side for 3-4 minutes until golden brown. Flip and cook for an additional 2-3 minutes on the other side.
  • Serve salmon with a side of your favorite veggies. We used asparagus.
