BRITISH ROAST POTATOES - ROASTIES
The classic British way of roasting potatoes. Crispy on the outside and perfectly fluffy inside.

Steps:
- Add the potatoes to a large pan. Cover with water and bring to a boil. When boiling, add a good pinch of salt.
- Gently simmer for 15-20 minutes. They are done when a sharp knife easily inserts into one of the potatoes.
- Drain into a colander and shake them around too 'rough' up the surface, but not much that they break apart. Transfer them onto a baking cooling rack in an even layer to dry them out, about 10 minutes.
- Preheat oven to 400°F/200°C.
- To a high-sided roasting pan, add a thick, even layer of vegetable oil and place the pan in the oven to heat up the oil for 10 minutes.
- Carefully remove the pan and place the potato chunks in the oil in an even layer with a little space between them. Return the pan back to the oven for 30-40 minutes. Turn the potatoes every 15 minutes so they are evenly brown and crisp all over. Sprinkle with a light amount of salt while still warm.

REALLY EASY ROASTIES
The secret to really great roast potatoes, fluffy parboiled potatoes and hot oil - simple!

- Heat oven to 200C/180C fan/gas 6. Heat the oil in a large roasting tin in the oven. Cut any larger potatoes in half. Cover the potatoes in cold salted water, bring up to the boil and cook for 2 mins. Drain and steam-dry in a colander for 5 mins, then shake to ruffle up the outsides.
- Remove the roasting tin - be really careful as the oil will be hot. Tip in the potatoes and garlic (if using), and use a spoon to turn them so they are all coated in the oil. Sprinkle with sea salt and pepper, and roast for 1 hr 45 mins, turning every 30 mins or so, until really crisp and golden.

- Peel the potatoes and cut into chunks. Timings here are based on a medium potato being cut into about 5 pieces. Make sure all pieces are pretty even.
- Place the potatoes in a pan, cover with water and bring to a boil. Once boiling they should take about 5 - 6 minutes to become just fork tender. As soon as they do, drain through a colander then leave for a few minutes to steam dry before returning to the saucepan.

- Preheat oven to 220°C (200°C Fan). Put potatoes into a saucepan of cold, salted water, bring to boil over high heat and cook for about 7 minutes until almost fully cooked but still a bit hard in the middle.
- Meanwhile, use non-stick baking paper to line a roasting tin that will take all the potatoes in one layer, with a little room to spare around each one.
- You don’t want the pan to be overcrowded or your roasties won’t get the chance to crisp up properly.
