Oven-Baked Potatoes with Bacon image

A Welsh dish often called Miser's Feast. Serve with grilled sausages or lamb chops.

Ingredients

1 Tbsp oil
2 Tbsp butter
8 slice raw thick bacon, chopped
2 small onions
3 large potatoes
1 Tbsp chopped fresh sage (optional)
1 large leek
2 1/2 c chicken broth (or vegetable broth)
ground black pepper, to taste
chopped fresh parsley, to garnish

Steps:

1. Preheat oven to 375F. Heat the oil and butter in a Dutch oven over medium heat. Add the bacon and cook, stirring occasionally, until just beginning to brown.
2. Slice onions and potatoes thinly (peel potatoes, if desired). Wash and slice leek, white part and some of the light green part.
3. Add onion slices to bacon and cook 5-10 minutes, stirring occasionally, until onions have softened and turn golden brown.
4. Add potatoes and leeks and stir well. Pour in broth. Season with pepper. Bring to a boil, cover, and put pot into oven and bake 30-40 minutes, or until potatoes are soft.
5. Remove cover, raise oven temperature to 425F and cook another 15-20 minutes, until top is crisp and golden brown. Garnish with parsley serve.

6 -8 potatoes, washed
8 slices hickory smoked bacon
3 tablespoons olive oil
2 tablespoons cilantro, chopped
salt and pepper, to taste

Steps:

Clean each potato thoroughly. Wrap each potato with a strip of bacon. Wrap in foil.
Place foil-wrapped potatoes on the grill and cook until fork tender, 45 minutes to one hour. Move potatoes occasionally to cook evenly.
Remove from foil and quarter. Sprinkle potatoes with olive oil, and fresh chopped cilantro. Salt and pepper to taste.
