6 tablespoons unsweetened cocoa
6 tablespoons sugar
1/8 teaspoon salt
2 1/2 cups milk
2 1/2 cups light cream
1/2 teaspoon vanilla

Steps:

  • Mix cocoa, sugar, and salt. Add milk. Heat to dissolve.
  • Add light cream and vanilla. Heat to just under boiling.
  • Mix very well and pour into mug. Garnish with whipped cream, cocoa powder and fine orange zest, if desired.

1 pinch salt
2 1/2 cups milk
2 1/2 cups light cream
1/2 teaspoon vanilla (or more)
1 pinch cinnamon (optional)
whipped cream
orange zest

Steps:

  • In a medium sized pot- mix cocoa, salt, and sugar.
  • Add milk. Heat to dissolve.
  • Add light cream, cinnamon, vanilla. Heat to just under boiling.
  • Mix very well and pour into warm mug.
  • Top with whipped cream, cocoa powder, and fine orange zest.

  • Add sugar and cocoa, whisking until blended.
  • Remove from heat; whisk in vanilla and bourbon.
  • Pour into mugs; top with marshmallows, if desired.

7 teaspoons cornstarch (cornflour)
1/2 cup water
4 cups milk

Steps:

  • Mix cocoa and sugar together. In a medium-sized saucepan dissolve the cornstarch in water and combine with with the cocoa mixture. Stir until a smooth paste has formed. Heat this mixture, stirring, while gradually adding in the milk. Continue stirring and bring to a simmer. Simmer for 10 minutes while stirring often. Cocoa is ready when it's thick, glossy and smooth.
