SLOW COOKER PORK CHOPS WITH CARAMELIZED ONIONS AND PEAS



Slow Cooker Pork Chops with Caramelized Onions and Peas image

Tender pork chops cooked in the slow cooker with caramelized onions, peas, and cider. Serve on a bed of mashed potatoes.

2 tablespoons vegetable oil
2 pork chops
4 large onions, sliced
1 clove garlic, crushed
2 pinches white sugar
¾ cup hard apple cider
salt and freshly ground black pepper
4 tablespoons frozen baby peas, not thawed
1 tablespoon butter

Steps:

  • Heat oil in a skillet over medium-high heat and cook pork chops until browned on all sides, 7 to 10 minutes. Transfer to the slow cooker.
  • Cook onions in the same skillet over medium-low heat until soft and browned, 8 to 10 minutes. Add garlic and sugar; cook and stir for 2 to 3 minutes. Add cider and bring to a boil. Pour mixture over pork chops in the slow cooker.
  • Cook on Low until pork chops are tender, about 7 1/2 hours. Stir in peas; cook until tender, about 30 minutes more.
  • Transfer pork chops to a serving plate. Add butter to the sauce in the slow cooker; stir until melted. Pour sauce over pork chops.

These pork chops are juicy, tender, seasoned with savory herbs and a hint of spice. When topped with deliciously caramelized onions, a perfect marriage of flavors is created. This recipe is sure to satisfy a hearty appetite as well as a craving for something sweet & savory.

4 pork chops, bone-in
2 yellow onions, medium-sized, sliced
2 tablespoons olive oil
1/4 teaspoon sage, ground
1/4 teaspoon thyme, ground
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon cayenne pepper, ground
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 375°F.
  • Into a small bowl, thoroughly combine herbs and spices. Sprinkle both sides of pork chops. Set aside.
  • Drizzle 1 tbs. olive oil into the bottom of a large, non-stick oven-safe skillet over medium-high heat. Once oil is glistening hot, add sliced onions and cook for 8-10 minutes or until softened and lightly browned. Remove to a separate plate.
  • Return skillet to medium-high heat and drizzle into it the remaining olive oil, turning the pan to coat the bottom. Brown both sides of chops (approximately 2 minutes per side), but do not cook through. Once browned, remove from heat.
  • Top equally with onions and roast in the oven for 12-15 minutes or until cooked through.
  • Serve immediately and enjoy!

1 tablespoon vegetable oil
4 (4 ounce) pork loin chops, 1/2 inch thick
3 teaspoons seasoning salt
2 teaspoons ground black pepper
1 onion, cut into strips
1 cup water

Steps:

  • Rub chops with 2 teaspoons seasoning salt and 1 teaspoon pepper, or to taste.
  • In a skillet, heat oil over medium heat. Brown pork chops on each side. Add the onions and water to the pan. Cover, reduce heat, and simmer for 20 minutes.
  • Turn chops over, and add remaining salt and pepper. Cover, and cook until water evaporates and onions turn light to medium brown. Remove chops from pan, and serve with onions on top.
