4 medium baking potatoes
1 cup fat-free cottage cheese
1 can (5 ounces) albacore white tuna in water, drained and flaked
1 celery rib, chopped
1 medium onion, finely chopped
1/2 cup shredded cheddar cheese, divided
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 15-20 minutes or until tender, turning once., When cool enough to handle, cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells., In a small bowl, mash the pulp. Add the cottage cheese, tuna, celery, onion, 1/4 cup cheese, paprika, salt and pepper. Spoon into potato shells. Place on a baking sheet. Bake, uncovered, at 350° for 18-22 minutes or until heated through. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.,

I got the idea for this recipe from watching videos on youtube from a Scottish food vlogger. "What's For Tea" is the name of Cheryl's youtube account. This is my version of what she makes. 2 medium idaho potatoes, baked, air fried, instant pot or microwaved
5 oz chunk light tuna, in water (one small can), do not drain
2 Tbsp mayonaise, regular, light, or olive oil blend
2 Tbsp instant mashed potato flakes
1 pinch black pepper, ground, optional

Steps:

  • 1. Cut the cooked, hot potato part way thru from end to end.
  • 2. Hold the potato with a kitchen towel and gently squish it end to end to "open" the cut. Set aside.
  • 3. Open the can of Tuna and empty the contents into a bowl. A small bowl like a cereal bowl is fine. I prefer to keep the liquid because of reserving any nutrition that may have cooked out of the fish in the canning process.
  • 4. Add the Mayonnaise and stir. This will be very runny.
  • 5. Add the Potato Flakes and stir. This will thicken the mixture and not affect the taste of the end product. You can also use the powdered/shaker Parmesan cheese and/or Ranch dressing mix added to (or instead of) the Potato Flakes to add variety.
  • 6. Add the black pepper. Stir in. I use fresh cracked but you can use any kind, Red, white, powdered. You can also add Paprika (sweet or smoked). I love variety.
  • 7. Diced Pickle can also be added as well as cheeses, herbs or mustard and creamy salad dressings. It is so fun to play with the flavor of the tuna mayo.

I'm not a tuna salad lover so I wasn't sure about this recipe when I first ran across it but since there's no mayo, it's not anything like tuna salad -- at least not to me. Cooking and prep time does NOT include the time for baking the potatoes since the time varies greatly depending on whether you use the oven, microwave or crock pot for baking the potatoes initially.

4 medium baking potatoes, baked
1 (6 ounce) can tuna, drained
2 tablespoons onions, minced
1 cup cheddar cheese, shredded
2 tablespoons butter
1/4 teaspoon salt
1/4 cup milk

Steps:

  • Bake potatoes and then cut each in half lengthwise.
  • Scoop out the inside of the potatoes keeping the skins in tact.
  • In a separate bowl, mash the potato insides with milk and butter. Feel free to adjust the milk and butter to your liking.
  • Add tuna, salt, onions and cheese to the potato mixture and mix well.
  • Pile into the potato skins and add extra cheese on top if you'd like.
  • Bake in a 400 degree oven for about 15 minutes or until warmed through.

4 baking potatoes
1 cup mayonnaise
1 1/2 cups cheddar cheese, grated
1/4 cup green onion, chopped
1/4 cup green pepper, chopped
4 ounces tuna, drained

Steps:

  • Preheat oven to 375°F Wrap potatoes in foil and bake until fork tender, about an hour. Let cool.
  • Split potatoes in half and spoon out the filling into a medium sized bowl leaving enough in the shell so that the skin does not break when handling. Break up potatoes with fork.
  • To potatoes add mayo, 1 cup cheese, green onion, green pepper, and tuna.
  • Restuff potatoes with mixture to a slight mound. Sprinkle with remaining cheese.
  • Place in 13x9-inch baking dish and bake for 20 minutes.

750g frozen potato wedges
4 tbsp mayonnaise
1 shallot or half small onion, very finely chopped
100g grated cheddar or gruyère
2x cans of tuna steak , in spring water, drained
bunch parsley , chopped (if you have it)

Steps:

  • Heat oven to 220C/fan 200C/gas 6. Tip the potato wedges onto a large baking sheet, ensuring they sit in a single layer. Bake for 10 mins. Meanwhile, mix together the mayonnaise, shallot or onion, cheese, tuna and parsley.
  • Tip the potato wedges into four individual or one large heatproof serving dish and spoon over the tuna mixture. Pop back in the oven for a further 12 mins, until bubbling.

  • To prepare the perfect tuna mayo jacket, start by preheating your oven to 200C/400F/Gas Mark 6. (We know lots of people cook their spuds in the microwave in a lot less time, but the oven method will give you a better cooked, better tasting potato, trust us.)
