Baked Potato Toppers - Chipotle Cheese image

This adds a little kick to your baked potatoes. From the TOH. You can serve this on top of potatoes, or put it in a small bowl for guests to top themselves. Prep time is cooking time.

1/4 cup butter, cubed
2 tablespoons chopped chipotle chiles in adobo
1/4 cup all-purpose flour
1/8 teaspoon pepper
2 1/2 cups milk
1 1/2 cups shredded colby-monterey jack cheese

Steps:

  • In a small saucepan, melt butter over med. heat. Add chipolte peppers: cook and stir for 2 minutes.
  • Stir in flour and pepper until blended; gradually add milk.
  • Bring to a boil; cook and stir 1-2 minutes or until thickened.
  • Stir in cheese until melted. (Rachel Ray suggest an 8 pattern).

8 small baking potatoes (2 lb.)
1 cup sour cream
2 slices cooked OSCAR MAYER Bacon, crumbled
2 tsp. chopped canned chipotle peppers in adobo sauce

Steps:

  • Heat oven to 400ºF.
  • Prick potatoes in several places with fork or sharp knife.
  • Bake 1 hour or until tender. Meanwhile, mix remaining ingredients until blended. Refrigerate until ready to serve.
  • Split potatoes. Serve topped with sour cream mixture.

  • Stir in the flour, egg, cheddar cheese, 3/4 tsp. salt, 1/4 tsp. pepper, chipotle chilies, adobo sauce chili powder, paprika, cumin, oregano, crushed red pepper flakes and the baking powder.
  • In a medium skillet, heat 1/4 inch oil over medium-high heat until hot but not smoking. Working in 5 to 6 batches, drop 2-tbsp. scoops of batter into the pan about 2 inches apart. Using a spatula, flatten the batter into disks. Cook, turning once, until browned and crisp, about 5 minutes. (Lower the heat if the latkes darken too quickly.) Drain on paper towels.
