You won't believe that these crispy homemade potato chips were baked in the oven. They are healthy, delicious, and can be seasoned in so many ways.

2 medium potatoes (Yukon gold, Idaho, or sweet)
1.5 tbsp olive oil
Salt and pepper

Steps:

  • Preheat the oven to 425 degrees.
  • Slice the potatoes into thin rounds using a sharp knife or a mandolin. Aim to have them about 1/8 inch thick, although a little variation is fine as long as they aren't too thick.
  • Toss with the olive oil, salt, and pepper. You can also add other spices here as well.
  • Cover a baking sheet with parchment paper or a wire rack. Place the potatoes in a single layer. Bake for 15-20 minutes until crispy.

1/2 teaspoon salt
1/2 teaspoon garlic powder
1 lb baking potato, scrubbed

Steps:

  • Preheat oven to 350 degrees.
  • Spray a baking sheet with non-stick cooking spray.
  • In a small bowl; mix cheese, salt and garlic.
  • Slice potatoes thinly and place in a layer on the baking sheet.
  • Sprinkle both sides with the cheese mixture.
  • Bake 10 to 13 minutes.

Vegetable-oil cooking spray
2 pounds russet potatoes, cut into 1/4-inch-thick slices
3 tablespoons olive oil
Coarse salt
Pinch of cayenne pepper
Freshly ground pepper

Steps:

  • Preheat oven to 400 degrees. Lightly coat 2 rimmed baking sheets with cooking spray; set aside. Put potatoes, oil, 1 tablespoon salt, and the cayenne in a large bowl; season with pepper. Toss to combine.
  • Arrange potato slices on prepared baking sheets, spacing them 1/4 inch apart. Bake, rotating sheets halfway through, until potatoes are crisp and golden brown, about 30 minutes. Spread out potatoes on parchment paper; let dry 5 minutes. Sprinkle with salt, if desired.

Try these oven-roasted chips, far less fatty than their fried cousins

6 large floury potatoes, such as Maris Piper, King Edward, Desirée (about 1.6kg)
2 tbsp olive oil
1 tsp celery salt
sea salt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
  • Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
  • Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

There's no need to set up a deep fryer to make great potato chips - the oven is just fine. Part of the charm of homemade chips is that they're a little thicker and have more of a bite than chips from a bag. And best of all, you can serve them warm! Here's an opportunity for the yin-yang thing: warm potato chip with crème fraîche, a small slice of smoked salmon, smoked trout, or a bit of caviar, and a shot of very chilled vodka. Instant celebration.

  • Preheat the oven to 400°F. Slice the potatoes into a bowl and immediately toss them with the oil. Season lightly with salt and arrange them in a single layer on a baking sheet. Bake in the oven until golden brown - about 12-15 minutes. Season again lightly with salt and pepper when they come out of the oven. Transfer to a rack to cool for maximum crispness.
  • Weighing your options
  • If you want to be a little more daring, don't limit yourself to salt and pepper - you can season with ancho chile powder, ground cumin, minced herbs, toasted sesame seeds, ground nori (toasted black seaweed sheets used to roll sushi) - really anything you like. Just be sure to season immediately after the chips come out of the oven, while there is still some residual oil for the spices to adhere to.

5 large sweet potatoes, thinly sliced
cooking spray
3 teaspoons roasted garlic-pepper seasoning, divided

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Spread sweet potato slices evenly on 2 cookie sheets. Coat evenly with cooking spray; sprinkle 1/2 of the garlic-pepper seasoning on top.
  • Bake in the preheated oven for 15 minutes. Flip, spray on the second side, and sprinkle remaining seasoning on top. Continue baking until tender, about 15 minutes more.

1 teaspoon cooking spray
1 teaspoon pepper

Steps:

  • Peel Potatos.
  • Use a mandolin and slice potatoes and put them water bath.
  • Dry potato for a few minutes on towel.
  • Spray down large oven sheet and salt and pepper.
  • Spread potato all over sheet and mix with salt pepper.
  • Put in oven at 300 and check every 20-30 minutes.
  • Flip, pull apart potatoes, take out crispy chips and put on toweled bowl. This all takes time. The chips will be golden brown.
