Baked Honey Mustard Corned Beef image

Easy oven-baked corned beef recipe for St. Patrick's Day that's made with a delicious honey mustard glaze. It's far more flavorful than boiling!

2 pounds corned beef
1 tablespoon whole grain mustard
5 tablespoons dijon mustard
1 tablespoon honey
¼ cup dark brown sugar

Steps:

  • Set the oven rack to the center position. Preheat to 350°F (177ºC).
  • Remove the corned beef from the package, discarding the spice packet.
  • Dry the meat with paper towels, and then place fat-side up on a wire rack set on top of a roasting pan.
  • Add about 1-inch of water to the bottom of the pan, this will prevent the juices from burning while cooking.
  • Combine the whole grain mustard, Dijon mustard, and honey. Evenly spread 3 tablespoons (about half) of the mixture on top of the meat.
  • Sprinkle 2 tablespoons of the brown sugar over the top of the roast.
  • Loosely cover the meat and pan completely with foil.
  • Bake the corned beef until tender and the internal temperature reaches 160ºF (71ºC), about 75 minutes. Add more time as needed to fully cook.
  • Carefully remove the pan from the oven and transfer the corned beef to a baking sheet lined with foil.
  • Preheat oven to broil.
  • Top the corned beef with the remaining mustard mixture, then sprinkle with 2 tablespoons of brown sugar.
  • Cook until the top becomes golden brown, about 3 to 5 minutes.
  • Remove beef from the oven and allow to rest for 10 minutes on a cutting board. Slice against the grain and serve hot.

This baked corned beef is topped with mustard and brown sugar and braised in Guinness. Serve it with mashed potatoes and sautéed cabbage for a complete St. Patrick's Day meal.

1 4-pound corned beef brisket, with seasoning packet
1 cup Guinness or other stout
2 tablespoons dark brown sugar
2 tablespoon whole grain mustard

Steps:

  • Preheat oven to 325˚F.
  • Submerge corned beef in cold water for 15 minutes. Drain and pat dry.
  • Place corned beef in a baking dish and add Guinness to the pan.
  • In a small bowl, stir together the brown sugar, mustard and seasoning packet that came with the corned beef. Rub this onto the top of the corned beef.
  • Cover the pan and bake for 4 hours, removing the cover for the final 30 minutes of cooking.
  • Remove from oven and allow the corned beef to rest for about 10 minutes before slicing.

Steps:

  • Preheat oven to 270 degrees F (132 degrees C).
  • Rinse corned beef in running water to remove about 1/2 of the salt and trim away any fat. Place corned beef in a baking dish and spread a 1/4-inch layer brown sugar over beef. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until an internal temperature of 145 degrees F (65 degrees C) is reached, about 2 hours.

This is recipe comes from an 1942 copy of Good Housekeeping. My mom makes it every year for St. Patrick's Day and it is Divine.

3 1/2 lbs corned beef
2 bay leaves
6 peppercorns
whole cloves
2 tablespoons oil
1 tablespoon prepared mustard
1/3 cup brown sugar, firmly packed
5 tablespoons ketchup (it's spelled Catchup in the book!)
3 tablespoons vinegar

Steps:

  • Rinse Beef.
  • Cover with cold water.
  • Add bay leaves and peppercorns and bring to a boil.
  • Boil 5 minutes. Remove scum.
  • Cover kettle and reduce heat to low.
  • Simmer 2 - 2.5 hours or until tender.
  • Preheat oven to 350 degrees.
  • Remove to shallow baking pan.
  • Dot with whole cloves.
  • In small saucepan, combine remaining ingredients. Cook until blended.
  • Pour over meat.
  • Bake at 350 degrees for 30 minutes, basting occasionally.

My Mom's Baked Corned Beef image

This corned beef has a more Ham like flavor. I really love this cold . You can use any Ginger Ale but I like the Vernors best. My mom made this, and of course she never measured anything. So I do it the same way. This is very forgiving so feel free to adjust the measurements slightly.

1 large corned beef
3/4 to 1 c yellow mustard
1 1/2 c brown sugar
1 can(s) vernors ginger ale

Steps:

  • 1. Open and rinse the Corned Beef. Place it in a 9 x 13 inch baking dish. Sprinkle the seasonings that came inclosed in the pakg. if any. Optional. Now smear the mustard over the top of the beef, then the brown sugar. Add the Vernors. Cover tightly. Bake for about 3 hours untill tender.
  • 2. You can searve this with your favorite side hot Or wait until the next day and slice and eat.

  • Preheat oven to 350 degrees. Place a very large a very large sheet of aluminum foil over a baking pan. Place the corned beef into a pot of water and bring to a boil. Allow to boil for 1 minute and then remove to waiting paper towels. Pat dry and then place the corned beef, fat side up, on the waiting foil.
  • Stir together the honey and the mustard. Reserve 2-3 tablespoons in a separate dish and then pour the sauce over the top of the corned beef. Sprinkle the brown sugar evenly over the top. Wrap the beef with the foil, allowing space between the top and sides of the meat and the foil. Bake for 2 hours.
  • Remove from the oven, change temperature to broil. Open the foil and place back in the oven. Broil for 3-4 minutes, until the top is lightly browned and bubbling. Watch closely while broiling, it will burn very quickly once it has browned! Let the corned beef rest for at least 10 minutes before slicing across the grain of the meat. Serve with the reserved honey mustard sauce. Enjoy!
