The BEST Homemade Baked Mac and Cheese image

The BEST Homemade Mac and Cheese of your LIFE. Outrageously cheesy, ultra creamy, and topped with a crunchy Panko-Parmesan topping, this mac and cheese recipe is most definitely a keeper. I used three different cheese and a homemade cheese sauce to take this macaroni and cheese recipe over the top.

16 oz elbow macaroni, cooked ((or other tubular pasta))
1 tbsp extra virgin olive oil
6 tbsp unsalted butter
1/3 cup all purpose flour
3 cups whole milk
1 cup heavy whipping cream
4 cups sharp cheddar cheese (shredded)
2 cups Gruyere cheese (shredded)
salt and pepper to taste
1 1/2 cups panko crumbs
4 tbsp butter (melted)
1/2 cup Parmesan cheese (shredded)
1/4 tsp smoked paprika ((or regular paprika))

Steps:

  • Preheat oven to 350F. Lightly grease a large 3 qt or 4 qt baking dish and set aside.Combine shredded cheeses in a large bowl and set aside.
  • Cook the pasta one minute shy of al dente according to the package instructions. Remove from heat, drain, and place in a large bowl.
  • Drizzle pasta with olive oil and stir to coat pasta. Set aside to cool while preparing cheese sauce.
  • Melt butter in a deep saucepan, dutch oven, or stock pot.
  • Whisk in flour over medium heat and continue whisking for about 1 minute until bubbly and golden.
  • Gradually whisk in the milk and heavy cream until nice and smooth. Continue whisking until you see bubbles on the surface and then continue cooking and whisking for another 2 minutes. Whisk in salt and pepper.
  • Add two cups of shredded cheese and whisk until smooth. Add another two cups of shredded cheese and continue whisking until creamy and smooth. Sauce should be nice and thick.
  • Stir in the cooled pasta until combined and pasta is fully coated with the cheese sauce.
  • Pour half of the mac and cheese into the prepared baking dish. Top with remaining 2 cups of shredded cheese and then the remaining mac and cheese.
  • In a small bowl, combine panko crumbs, Parmesan cheese, melted butter and paprika. Sprinkle over the top and bake until bubbly and golden brown, about 30 minutes. Serve immediately.

1/4 pound(s) bacon, cooked crispy and chopped fine
1 large shallots minced

Steps:

  • Start by cooking the pasta el dente,don't overcook! Drain and set to the side. Next,in a large non-stick skillet or pot melt one stick of the butter,saute the shallots until lightly browned and stir in the flour. Add the canned soup and half of the cream,wait until later when it's all mixed together to see if you need to add more cream if it's too dry. Next,add the shredded cheese and the grated cheese,keep simmering until it's all melted and gooey,add the chopped bacon,cracked black pepper.
  • Fold in the par-cooked macaroni and mix well.Check too see if you need to add more cream at this point. Melt the other stick of butter and toss with the panko bread crumbs,sprinkle all over the top and bake for 35 minutes in a pre-heated 350 oven. Enjoy!! :)

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

For the Panko Topping:
3 tablespoons unsalted butter
3 cups panko
1/2 cup freshly grated Parmesan cheese
For the Pasta and Cheese Sauce:
4 tablespoons (1/2 stick) unsalted butter, plus more for greasing baking dish
4 tablespoons all-purpose flour
1/2 teaspoon red pepper flakes, optional
4 1/2 cups milk
1 cup heavy whipping cream
5 cups grated cheddar cheese (or Gruyère, or a mix )
1/2 cup freshly grated Parmesan cheese
4 teaspoons Dijon mustard
1 1/2 teaspoons kosher salt (or more to taste)
1/2 teaspoon freshly ground black pepper (or more to taste)
24 ounces dried cavatelli (or ziti, penne, or any short pasta, about 1 1/2 (16-ounce) packages)

Steps:

  • Gather the ingredients.
  • In a small saucepan over low heat, melt 3 tablespoons butter. Or place it in a medium-size microwave-safe dish and heat until melted, about 15 seconds.
  • Add panko and Parmesan to melted butter and stir until well combined. Set panko topping aside.
  • Gather the ingredients.
  • Bring a large pot of water to a boil and salt it generously.
  • Meanwhile, in a large heavy saucepan over medium heat, melt remaining 4 tablespoons butter. Whisk in flour and red pepper flakes, if using. Cook, stirring, until flour is blond in color, about 4 minutes.
  • Gradually whisk in milk. Increase heat to medium-high and let sauce come to a simmer, whisking frequently. Reduce heat to medium-low and let sauce simmer for about 5 minutes or until it starts to thicken.
  • Add cream, grated cheese, Parmesan, mustard, salt, and black pepper, stirring until everything is smooth. Taste for seasoning, adding more salt and/or black pepper as necessary.
  • Add pasta to boiling water and cook until barely al dente (follow package directions, but stop a minute or two before pasta is completely tender). Set aside 1 cup of pasta cooking water, then drain pasta.
  • Whisk reserved pasta cooking water into cheese sauce, combining it thoroughly.
  • Add pasta to cheese sauce and stir to combine.
  • Heat oven to 400 F. Butter a shallow 4-quart baking dish.
  • Spoon pasta mixture into prepared baking dish. There will appear to be a lot of sauce, but not to worry. Some of it will be absorbed into pasta as it cooks, and saucy is better than dry.
  • Place baking dish on a sheet pan to catch any drips and sprinkle panko topping evenly over pasta. Bake until golden and bubbling, 30 to 40 minutes.
  • Remove pasta from oven. Let sit for a few minutes. Serve hot.

1 jar Alfredo pasta sauce
2 cups shredded mild or extra sharp cheddar cheese
1/4 - 1/2 cup shredded parmesan cheese
2 Tbsp seasoned bread crumbs
1 Tbsp butter or margarine
Salt & pepper to taste
Pasta sauce

Steps:

  • Cook pasta and drain. In a large skillet, mix Alfredo sauce and cheddar cheese. Heat until melted. Add pasta and toss.
  • Transfer into baking dish and top with 1/4 - 1/2 cup parmesan cheese, bread crumbs and melted butter.
  • Broil for 5-8 minutes until topping browns. Season with salt and pepper and top with your favorite pasta sauce.

1 cup heavy cream
3/4 cup parmesan cheese
2 -3 pinches nutmeg
1/4 teaspoon garlic powder

1 (20 ounce) package cheese tortellini, prepared
1/2 cup fresh shredded parmesan cheese
1/3 cup Italian seasoned breadcrumbs

Steps:

  • Prepare tortellini or other favorite pasta slightly al dente in salted water. Drain.
  • Preheat oven to 400ºF.
  • Warm butter and cream in a sauce pan until butter is melted. Add parmesan cheese and spices.

1 lb elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard
1/4 teaspoon cayenne pepper
3 cups milk
1 large egg
2 1/2 cups sharp cheddar cheese, shredded
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
1 cup panko breadcrumbs
1/4 cup sharp cheddar cheese, shredded
1/4 cup parmesan cheese, shredded

Steps:

  • Preheat the oven to 350 degrees.
  • In a large pot of boiling, salted water cook the pasta for 6 minutes.
  • While the pasta is cooking, in a separate pot melt the butter. Whisk in the flour and dry mustard and keep stirring for about 5 minutes. Slowly add the milk and keep stirring. Simmer for about 10 minutes. Put about 3/4 cup of sauce in a bowl and temper in the egg when it has cooled slightly. Add this mixture back to the sauce along with 2 1/2 cups of shredded cheddar cheese. Season with salt and pepper. Fold the macaroni into the mixture and pour into a 2 quart buttered casserole dish.
  • Melt the remaining 2 tablespoons of butter in a small saucepan. Add the panko crumbs and remaining cheeses. Spread this mixture over the top of the macaroni and cheese.
  • Bake for 30 minutes. Remove from oven and rest for 5 minutes before serving.
