FISH IN PINE NUT SAUCE

- Preheat the oven to 350°F. Spread the pine nuts on a baking sheet and toast in the oven, stirring occasionally, until fragrant and golden, about 8 minutes. Pour onto a plate to cool. Transfer 1/4 cup of the toasted nuts to a nut grinder or small food processor and grind or pulse until finely ground.
- In a frying pan, heat 2 tablespoons of the oil over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, about 8 minutes. Add the paprika, garlic, ground pine nuts, bread crumbs, and saffron, if using, and cook, stirring often, for 3 minutes. Add the tomatoes and stock and cook, stirring occasionally, until thickened, 5 to 8 minutes. Season to taste with salt and pepper. Keep warm over low heat.
- In a large frying pan, heat the remaining 2 tablespoons oil over medium heat. Sprinkle the fish with salt and pepper, add to the pan, and cook, turning once, until browned on both sides, about 3 minutes on each side. Pour the sauce over the fish, add the peas, if using, and simmer until the fish is opaque throughout, about 5 minutes longer. Transfer to a serving dish or individual dishes, and garnish with the remaining pine nuts and the parsley. Serve at once.
- Variation
- You can skip the step of browning the fish, and instead poach it in the sauce. Or, you can combine the fish and the sauce in a baking dish, making sure the fish is fully covered by the sauce, and bake in a preheated in a 450°F oven until fish is tender, 10 to 12 minutes, depending on the thickness of the pieces. If baking, do not reduce the sauce too much, as some of the liquid will evaporate in the oven.
CRUNCHY CHEESY FISH AND SPINACH CASSEROLE
What a great way to combine all food groups into one casserole dish. So yummy, the kids won't even mind eating their veggies. Also a good meal idea for the working mom; it's simple to put together and cooks quickly in the oven. Substitute any mild white fish for the cod if desired.

- Preheat an oven to 450 degrees F (230 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Evenly spread spinach in the bottom of prepared casserole dish; sprinkle with garlic salt. Arrange fish atop spinach, keeping the pieces side by side and larger pieces toward the outside of dish. Top fish with lemon zest, lemon juice, dill, sea salt, and black pepper.
- Combine Cheddar cheese, Italian-seasoned bread crumbs, and panko bread crumbs in a bowl; spread evenly over fish. Cover dish with aluminum foil.
- Bake in the preheated for 12 to 15 minutes; uncover and cook until fish flakes easily with a fork and topping is lightly browned and crunchy, 5 to 8 more minutes.

HERB AND NUT CRUSTED BAKED FISH FILLETS
This is my favourite recipe for oven baked crusted fish fillets. I never really measured amounts, so the ratio herbs-parmesan-nuts as well as the total amount is an educated guess. I've so far used all kinds of nut mixes, you can even add in some ground sesame seeds. It's great with salad, but also with spinach, and I've also made it on the side of oven baked vegetables.

- Preheat oven to 220°C (425°F) and grease a baking dish which is large enough for the four fillets, then pour the lemon juice over the fillets and let them sit while preparing the crust
- In a bowl, combine chopped herbs, nuts, parmesan and olive oil, a dash of salt and pepper to taste. Mix well with a fork and add more oil if needed until you have kind of a paste.
- Pat the fillets dry, lightly salt them (skip that if you want less salt) and place them in the greased dish, they should not overlap each other!
- Distribute the paste over the fillets until they are completely covered
- Bake for about 10 minutes, the shortly remove to place some butter flakes on top of the crust. Put back into the oven and bake for additional 10-15 minutes
- Serve with a large bowl of salad and enjoy
AUNT CAROL'S SPINACH AND FISH BAKE
Simple, easy fish recipe. Any white fish will do! And even the kids will eat up the spinach! (My four year old loves this dish!) This recipe was passed on by my Aunt and was a little bit of this, a little bit of that - so tweak the ingredients to your liking!

- Preheat oven to 325 degrees F (165 degrees C).
- In a bowl, mix the spinach, 1/2 cup Cheddar cheese, about 5 tablespoons dry bread crumbs, and the egg. Spread the mixture into the bottom of a small baking dish. Arrange the cod fillets on top of the spinach mixture, and season with salt and pepper. Top with the remaining Cheddar cheese and bread crumbs.
- Cover, and bake 20 minutes in the preheated oven, or until fish flakes easily with a fork.
