BBQ CHICKEN MEATBALLS
BBQ Chicken Meatballs made with lean ground chicken, flavorful spices, coated in your favorite buffalo sauce. These meatballs are so easy to make and sure to be a hit for a quick dinner, easy snack, or fun appetizer.

- Add the ground chicken, apple cider vinegar, spices, almond flour, and barbecue sauce to a large mixing bowl. Use your hands to mix all of the ingredients together until well combined.
- Next, use a cookie scoop or tablespoon measuring spoon to scoop the ground chicken mixture. Then, use your hands to roll the mixture into meatballs. Place the meatballs on a sheet pan lined with parchment paper.
- Drizzle a tablespoon of avocado or olive oil over the meatballs. Bake the meatballs at 425 degrees for 15-20 minutes until fully cooked through.
- When the meatballs are fully cooked, transfer them to a large mixing bowl. Drizzle more barbecue sauce over the meatballs and then toss them until well coated in the sauce.
- Once the meatballs are sauced to your liking, transfer them a serving dish. Serve with extra barbecue sauce for dipping and enjoy!
BAKED SPICY CHICKEN MEATBALLS (WITH THAI SWEET CHILI PEANUT SAUCE!)
These Baked Spicy Chicken Meatballs are easy to make, healthy, and loaded with flavor! They're also extremely juicy, great for meal prep, and are a fantastic party appetizer when tossed in a sticky, sweet and spicy Thai Sweet Chili Peanut Sauce!

- Preheat oven to 200°C/400°F. Line a baking tray with aluminum foil or nonstick cooking paper and lightly brush with olive oil.
- Combine all the ingredients for the Baked Spicy Chicken Meatballs in a large mixing bowl. Mix and roll into 28-30 balls, lining them up on the foil in rows as you go. (Note: The mixture can get a little sticky to deal: rub your palms and fingers with a little olive oil before you start rolling into balls and during as needed.)
- Bake for 28-30 minutes.
- Enjoy in pastas, submarine sandwiches, or toss them in your favorite sauce and serve as an appetizer!
- You can make this sauce while the chicken meatballs are in the oven. Combine all the ingredients in a measuring cup or medium sized bowl. Mix until evenly combined.
- Once the chicken meatballs are baked, cool for 5-10 minutes. Then place a medium sized nonstick skillet over low heat. Add the meatballs to the skillet and spoon a few tablespoons of the sauce on them. Toss until fully coated with the sauce and then switch off the heat.
- Serve as an appetizer with extra sauce on the side for dipping if desired.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk together the barbecue sauce, soy sauce, red wine, maple syrup, chili powder, dry mustard powder, garlic powder, onion powder, and cumin in a bowl until thoroughly combined.
- Place the chicken breasts into a 9x13-inch baking dish, and pour the sauce over the chicken. Turn the chicken pieces over in the sauce to coat both sides.
- Bake in the preheated oven until the chicken is no longer pink and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the thickest part of a breast should read 160 degrees F (70 degrees C). Remove the chicken from the baking dish, and keep warm.
- Pour the remaining sauce into a saucepan, place over medium heat, and bring to a boil. Whisk the cornstarch and water together in a small bowl until smooth. BAKED CHICKEN WITH TANGY BARBECUE SAUCE

- Preheat oven to 325°F. Mix first 4 ingredients in large bowl. Season chicken with salt and pepper. Drop chicken 2 pieces at a time into flour mixture; toss to coat.
- Heat oil in heavy large Dutch oven over medium heat. Working in batches, add chicken to pot; fry until brown, about 5 minutes per side. Arrange chicken on baking sheet. Bake 20 minutes.
- Meanwhile, pour off all but 1 tablespoon oil from pot. Add onion and garlic; sauté over medium heat 5 minutes. Add ketchup. Fill ketchup bottle with water; pour water into pot. Mix in sugar, Worcestershire sauce and mustard. Boil sauce until slightly thickened, stirring occasionally, about 10 minutes.
- Remove chicken from oven. Spoon some sauce over chicken. Return chicken to oven. Bake until chicken is cooked through and glazed, about 20 minutes. Serve chicken with remaining sauce.
