BROCCOLI WITH BLUE CHEESE SAUCE

- Melt 3 tablespoons butter in a medium saucepan over medium heat and add the flour. Cook, whisking constantly, until the butter begins to toast the flour, about 3 minutes. Add the rosemary and nutmeg and whisk for 15 seconds to toast. Add the milk. Bring the sauce to a simmer and cook for 5 minutes over low heat, stirring occasionally. Add the blue cheese and whisk until melted. Set aside over low heat to keep warm.
- Bring a pot of salted water to a boil. Set up a bowl of ice water and set aside. Line a tray with paper towels.
- Trim the broccoli stems and break the heads into equal-size florets. Add the broccoli to the boiling water and let cook until bright green and tender but still with a slight resistance when pierced with a knife, 3 to 5 minutes. Transfer the broccoli to the ice bath for about 10 seconds just to shock and stop the cooking. Using a spider or a slotted spoon, transfer the broccoli from the ice bath to the paper towel-lined tray. Give the tray a good shake to get any excess water off the broccoli. Set aside.
- Heat the remaining 2 tablespoons butter together with the olive oil in a large cast-iron pan over medium heat. Add the shallots and garlic and cook until softened, 3 to 4 minutes. Season with salt and pepper. Add the broccoli and toss gently with a wooden spoon or tongs to coat. Cook until heated through, 2 to 3 minutes.
- Remove the broccoli from the heat and ladle the warmed blue cheese sauce over the top. Garnish with the minced Fresno and freshly ground black pepper.
BAKED BROCCOLI WITH BLUE CHEESE SAUCE
I love blue cheese and this is a great recipe from Maytag Dairy Farm. Use Maytag Blue cheese if possible but any high quality blue will do.

- Heat oven to 350°.
- Cover broccoli with lightly salted water in a medium saucepan. Heat to a boil over high heat; cook 2 minutes. Drain and transfer to a shallow, buttered casserole dish.
- Melt the butter in a medium saucepan over medium heat; stir in the flour and garlic. Cook, stirring, until bubbly, about 1 minute.
- Stir in the milk, blue cheese and cream cheese. Cook, stirring, until sauce thickens, about 4 minutes. Pour over broccoli; sprinkle with bread crumbs.
- Bake until heated through and lightly browned, about 25 minutes.

BROCCOLI CHEESE BAKE
This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

- Preheat oven to 325 degrees F (165 degrees C).
- Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
- Bake in preheated oven for 30 minutes.

BROCCOLI BAKED IN CHEESE SAUCE

- Mix cornstarch, curry powder and salt in a 2 1/2-quart souffle dish. Pour in a little of the milk and stir until cornstarch is completely dissolved. Stir in remaining milk. Cover tightly with lid or microwave plastic wrap. Cook at 100 percent power in a 650- to 700-watt oven for 4 minutes. Prick plastic to release steam.
- Remove from oven and uncover. Scrape corners and bottom of dish with a wooden spoon. Whisk well to dissolve any lumps. Cover, return to oven and cook for 3 minutes. Prick plastic to release steam.
- Remove from oven and uncover. Whisk in red pepper sauce and 1 cup of the cheese.
- Scrape sauce into a large bowl. Stir in broccoli. Put mixture in an oval dish, 13 by 9 by 2 inches. Cook, covered with plastic, for 5 minutes. Prick plastic to release steam. Uncover and stir. Re-cover and cook for 7 minutes. Prick plastic. While broccoli is cooking, preheat broiler.
- Remove dish from oven and uncover. Sprinkle with remaining cheese. Run a small knife around the inside edge of the dish to prevent sticking. Put dish under broiler until cheese browns, about 6 minutes. Remove from oven and serve warm.
