BAKED BLACK BEANS

This recipe is adapted from one published online by the New York Times. Instead of using dried navy beans, which need to soak and then cook for several hours, I used canned black beans which shorten the cooking time considerably. The beans cook in a sweet and smoky sauce made with a generous amount of bacon, chili powder, apple cider vinegar, and brown sugar. Serve these beans with all of your favorite BBQ dishes.

6 slices thick cut bacon, cut into bite-sized pieces
1 bell pepper, diced
1 small yellow onion, diced
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon ground mustard
1 teaspoon kosher salt
2 tablespoons brown sugar
1/2 teaspoon black pepper
1/4 cup apple cider vinegar
1/2 cup molasses
2 (15-oz) cans black beans, drained and rinsed

Steps:

  • Preheat oven to 350°F degrees.
  • In a dutch oven or large oven-safe pot, cook the bacon over medium heat until it starts to brown. Add the bell pepper, onion, and garlic. Cook the vegetables until they soften for about five or so minutes.
  • Add the chili powder, dried oregano, ground mustard, salt, pepper, and brown sugar. Stir it all together and cook another two minutes.
  • Add the apple cider vinegar, molasses, and black beans. Stir everything to combine and then add water until it just covers the beans (about a 1/2 cup depending on the size of your pot).
  • Transfer the pot, uncovered, to the preheated oven. bake the beans for approximately one hour, or until the sauce has thickened.

1 tablespoon olive oil
1 onion, chopped
2 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and minced
10 fresh mushrooms, quartered
6 roma (plum) tomatoes, diced
1 cup fresh corn kernels
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 tablespoon chili powder
2 (15 ounce) cans black beans, drained and rinsed
1 ½ cups chicken broth or vegetable broth
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil.
  • Reduce heat to medium low. Remove 1 1/2 cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

4 poblano peppers (halved and seeds/membranes removed)
1 pound lean ground beef (OR chorizo, see note 2)
1 teaspoon each ground cumin, chili powder, garlic powder
1 cup cooked long grain white rice (see note 1)
½ cup canned black beans (drained)
½ cup frozen or canned corn (drained)
1 15-ounce can fire rosted diced tomatoes (drained)
1 4-ounce can diced green chiles
½-1 cup grated mozzarella OR Mexican-blend cheese

Steps:

  • Preheat oven to 350 degrees and lightly grease a large baking sheet. Arrange halved poblano peppers in a single layer on the baking sheet so that they aren't overlapping. Bake for 10-15 minutes while you move on to the next step.
  • Add ground beef (or preferred meat choice, see Note 2) and rice to a large skillet, and season with the cumin, chili powder, and garlic powder. Saute over medium heat for 5-8 minutes until meat is browned and cooked through.
  • Stir in the black beans, corn, diced tomatoes, and green chiles. Cook another 1-2 minutes. Spoon mixture into the peppers, sprinkle with cheese, and return to oven for another 10 minutes or so until peppers are tender and cheese is melted. Allow to cool slightly before serving.

1 1/2 cups dried black beans
1 bay leaf
1 teaspoon salt
3 tablespoons olive oil
1 large red onion, thinly sliced
1 large poblano chile, seeded and sliced into slivers
3 large garlic cloves, minced to a paste
2 cups fresh corn kernels
1/2 cup fresh cilantro, chopped
salt & fresh ground pepper
1 cup sharp cheddar cheese, grated
1/2 cup sour cream

Steps:

  • wash and pick over the beans. soak beans overnight in plenty of water, or, for quick soaking, bring them to a boil with water to cover in large ot, remove from heat, and let stand, covered, for 1 hour.
  • drain beans. put them back into the pot, cover with plenty of water, and add the bay leaf and salt. bring to boil, then reduce the heat and simmer, uncovered, until the beans are tender but still hold their shape, approximately 45 minutes. drain the beans.
  • meanwhile, preheat the oven to 375 degrees. heat the oil in a large skillet. saute the onion slices over medium heat for about 10 minutes. add the green chili and garlic and saute another 2 minutes.
  • add the onion/pepper mixture to the beans along with the corn kernels and 1/4 cup of the chopped cilantro. season to taste with salt and pepper. put the beans in a casserole and sprinkle with the grated cheese. heat for 20 minutes, or until cheese is melted and bubbly on top. serve with dollops of sour cream and sprinkle with remaining chopped cilantro.

8 ounces monterey jack cheese, shredded

Steps:

  • Saute onion and green chilies in the melted that has been melted in a saucepan just until the onion is tender.
  • Add frozen corn and cook until heated through.
  • Stir in shredded cheese and salt and pepper to taste and stir until the cheese is melted.
  • Stir in sour cream to mix well and heat the sour cream up.
  • Enjoy.

8 ounces whole onion or 7 ounces chopped, ready-cut onion (1 2/3 cups)
2 teaspoons olive oil
1 large clove garlic
1/2 to 1 whole jalapeno
1 teaspoon ground cumin
1/4 to 1/2 teaspoon hot chili powder
15-ounce can black beans, no salt added
Enough fresh oregano to yield 1 tablespoon chopped or 1 teaspoon dried oregano
1 16-ounce can pureed tomatoes, no salt added
1 1/2 cups beer
1 teaspoon white vinegar
4 whole wheat tortillas, preferably no fat added
2 scallions
2 cups frozen corn kernels
1/8 teaspoon salt
Freshly ground black pepper to taste
4 tablespoons low-fat sour cream

Steps:

  • Chop whole onion.
  • Heat nonstick pan large enough to hold all filling ingredients until it is very hot. Reduce heat to medium-high, and add oil. Saute the onions until they begin to soften and brown.
  • Meanwhile, mince the garlic and add. Wash, trim, seed and mince the jalapeno, and add. Stir in the cumin and chili powder.
  • Drain and rinse the beans. When onions have softened, add the beans, oregano, tomatoes, beer and vinegar, and continue to cook at a simmer while preparing the rest of the meal.
  • Wrap the tortillas in aluminum foil, and heat in a toaster oven about 5 minutes, until heated through.
  • Wash, trim and slice scallions.
  • Two minutes before it is time to serve the chili, add the corn and stir well to heat through. Season with salt and pepper. Serve the chili, topped with scallions and sour cream, with warm tortillas.

  • Place the onion, green peppers, and carrots into the saucepan, and cook and stir for about 10 minutes, until the onion is translucent and the vegetables are tender. Stir in the chili powder, cumin, and black pepper, and pour in the diced tomatoes, frozen corn, black beans, garbanzo beans, and chicken broth. Bring the mixture to a boil.
  • Place about 1 1/2 cups of the chili mixture into a food processor, and puree for about 1 minute until smooth. Pour the puree back into the rest of the chili to thicken. Add the cooked turkey meat, and bring the chili back to a simmer over medium-low heat.
