1 large sweet onion, sliced into 1/2-inch rounds
1 cup nonfat buttermilk
1/4 cup cornstarch
1/3 cup all purpose flour
3/4 cup yellow cornmeal
1/4 finely grated Parmesan cheese
1 Tablespoon Miss Brown's House Seasoning (recipe follows)
Olive oil cooking spray
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  • Stir together the buttermilk and cornstarch in a shallow bowl.
  • Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  • Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

3 cups panko bread crumbs
2 large sweet onions, (sliced into 1/2-inch rings)

Steps:

  • Preheat oven to 450 degrees. Place two baking sheets in the oven and let those preheat too.
  • In a medium bowl, whisk together barbecue sauce, eggs and flour. Place bread crumbs in a separate bowl.
  • Using tongs (or your fingers) dip onion slice in the barbecue sauce mixture, shake the excess off and then dunk on all sides into the bread crumbs. Lay on a cool baking sheet. Repeat until all onion slices have been dunked.
  • Remove hot baking sheets from the oven and spray lightly with cooking spray. Move coated onions to hot baking sheets. Spray the coated onions lightly with cooking spray.
  • Bake for about 6 minutes, or until golden, then use tongs to turn each onion ring over. Spray the other side of the onions with cooking spray and bake for an additional 5 to 7 minutes. Watch closely to make sure they crumbs are not browning too quickly or burning.
  • Remove from oven and serve immediately.

1 pound sweet onions
3 egg whites
1 cup dry bread crumbs
2 teaspoons dried thyme
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • Cut onions into 1/2-in. slices; separate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain., In a small bowl, beat egg whites until foamy. In another bowl, combine the bread crumbs, thyme, salt, paprika and pepper. Divide the crumb mixture among three large resealable plastic bags. Dip a third of the onions in the egg whites; add a few rings at a time to crumb mixture and shake to coat. 1 yellow onion - ends trimmed off, peeled, and cut crosswise into 1/2-inch slices
2 egg whites
2 tablespoons milk
1 pinch cayenne pepper, or to taste
3 cups panko bread crumbs, or more if needed
½ cup all-purpose flour
salt and ground black pepper to taste
cooking spray

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Separate onion slices into individual rings.
  • Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
  • Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.

oil, for frying

Steps:

  • In a bowl, combine the cream cheese, buffalo sauce, chicken, cheddar, and ranch. Mix with a fork until smooth and evenly mixed.
  • Cut each end of the onion, peel of the papery onion skin, and cut the onion on its side into large rings.
  • Separate the large slices into its separate layers.
  • Put the rings on a parchment paper-lined sheet tray. Take the chicken mixture and press a small amount against the inside of the onion creating a ring shape of the mixture with a hole in the middle.
