BAKED BRIE WITH CARAMELIZED ONIONS
This baked brie is topped with balsamic caramelized onions and wrapped in puff pastry, making for an elegant yet warm and cozy appetizer!

- Place a large skillet over medium-high heat, and drizzle in about 2-3 tablespoons of oil; once hot, add in the sliced onions along with a pinch of salt and pepper, and cook the onions, stirring occasionally, until they become deeply golden-brown and caramelized, about 20 minutes.
- Once golden, stir in the teaspoon of sugar, followed by the balsamic vinegar, and allow the mixture to bubble up and reduce, stirring to incorporate; allow the onions to cook for another 3-5 minutes, stirring frequently now, until jam-like and deeply browned; then, add the 1 teaspoon of thyme leaves, stir to combine, and remove from pan and allow to cool (you should have roughly 1/2 cup).
- To prepare the baked brie, lightly flour your work surface, and roll out the thawed puff pastry sheet to about 1/8" thickness, a bit larger than the wheel of brie (trim the puff pastry a little bit if it's considerably too large for your brie); place the brie in the center of it, spoon over top of it the cooled, balsamic caramelized onions, then fold the puff pastry sheet over top to cover everything, creating a little "package" with pleats.
- Place the wrapped brie "package" onto a small baking sheet lined with parchment paper, and very gently brush some egg wash over the puff pastry (avoid allowing it to pool underneath), and place into the fridge to chill for 30 minutes (or even overnight), covering lightly with plastic wrap.
- Preheat the oven to 400°.
- Once ready to bake, place the brie into the oven and bake for roughly 35-40 minutes, or until deeply golden and puffed; allow the baked brie to stand for 10 minutes before serving, to avoid it oozing out too much.
- To serve, add a couple of decorative sprigs of thyme, and surround the brie with crackers, sliced baguette, or even fruit such as apples or pears.

BAKED BRIE IN PUFF PASTRY

- Remove pastry from freezer to begin thawing (it should take around 40 minutes - check package for thawing instructions).
- Freeze brie for 20 minutes to make slicing easier. After brie has been in the freezer 20 minutes, remove and slice equally through the equator.
- Add all of the Pepper Jelly Cranberry Sauce Ingredients to a medium saucepan and bring to a boil. Reduce heat to medium-low, and simmer, stirring often, until thickened (you want it quite thick). Remove from heat and allow to cool to room temperature (you can refrigerate to speed up the process).
- Meanwhile, melt butter with brown sugar in a skillet over medium heat. Add pecans and cook, stirring often until golden, about 2-3 minutes. Transfer to parchment paper until cool enough to chop.
- Lay the two brie halves next to each other, cut side up. Spoon a generous amount of Cranberry Sauce over the left piece of brie (approximately 1/4-/1/3 cup) and spread into an even layer (you might not use all of the sauce). Evenly top with chopped craisins followed by chopped pecans. Top the loaded brie with the right piece, cut side down so the rind is on the outside. Set aside.
- Lay thawed puff pastry sheet on a lightly floured surface and lightly dust with flour. Roll into a square approximately 11x11 inches. Place stuffed brie in the center of the puff pastry. Brush egg wash on puff pastry all around brie.
- Fold one edge of the dough over the brie and brush the top with egg wash. Fold up the opposite side then brush top dough with egg wash. Repeat with remaining edges until the brie is completely encased, trimming off excess dough edges if necessary. You can use excess dough to make decorations to place on top of brie if desired. Press the dough together to make sure it is snug and sealed all around. Brush the top and sides of the wrapped brie with egg wash.
- Place the brie in the freezer for one hour - DON'T SKIP this step! After 45 minutes, preheat oven to 425 degrees F. Line a rimmed baking sheet with parchment paper. Place the brie on the prepared baking sheet and bake for 20-25 minutes OR until it is golden and you can see it leaking a little cheese. Let cool 10 minutes before servings with crackers, fruit, etc.

This is a classic dish for any type of gathering, and one we always put out. Imagine a croissant filled with melted Brie cheese and sweet fruit and jam. That's what this dish is. - Preheat the oven to 400°F (200°C).
- Using a large chef's knife, cut the white rind off the top of the wheel of Brie and discard. Put the disk into the freezer and at the same time pull out the sheet of puff pastry. Allow the puff pastry to thaw until it is pliable but still cold, about 30 minutes.
- Roll the puff pastry to a 14-by-14-inch (35.5-by-35.5-cm) square. Using a pizza cutter or knife, cut a 1/2-inch (1.3-cm) wide strip from one edge of the pastry. Transfer the dough to a parchment-lined baking sheet. Place 1 tablespoon (20 g) of the preserves at the center of the pastry and then the frozen Brie wheel. Top with the apple and cinnamon, then dollop the remaining 2 tablespoons (40 g) of preserves on top. Gather the four corners of the dough, one at a time, across the Brie to enclose it completely. Tie a simple knot with the strip of dough to make a purse.
- Brush the entire top and sides of the purse with the egg wash. Sprinkle with salt and pepper. If at any point the pastry seems like it's melting or too soft, put it in the freezer for 5 to 10 minutes before continuing. Make sure the pastry is well chilled before baking.
- Bake on the middle rack of the oven for 30 to 40 minutes, turning the baking sheet halfway through, until the pastry is golden brown and cooked through. Transfer to a wire rack and let cool for 8 to 10 minutes before serving warm.

SPINACH ARTICHOKE BAKED BRIE

- Put the spinach in a clean kitchen towel over a bowl or the sink and twist to squeeze out all the moisture. Coarsely chop.
- Put the cream cheese, mayonnaise, sour cream and garlic in a large bowl; mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and Parmesan, mixing to combine. Season with salt and pepper, then refrigerate until ready to use.
- Line a baking sheet with parchment paper. Whisk the egg with a splash of water in a small bowl. Roll out the puff pastry to a 13-by-12-inch wide rectangle. Cut a 1-inch wide strip of dough off the shorter end to create a 12-by-12-inch square, reserving the strip for decorating. Transfer the square to the prepared baking sheet. Place the wheel of brie in the center of the dough. Top with the chilled spinach-artichoke mixture. Fold the puff pastry up and over the brie, brushing the edges with a little egg wash and pinching to seal. Form the reserved strip of dough into a bow. Brush a little egg wash on the center of the pastry and gently press the bow on top to secure. Brush the bow and the entire exterior of the pastry with the egg wash, then return it to the refrigerator to chill, about 30 minutes.
- Preheat the oven to 375 degrees F.
- Bake until the pastry is golden brown and cooked through, about 40 minutes. Let sit for 15 minutes, then serve warm with crackers and/or crostini.
