CREAMY BAKED ACORN SQUASH



Creamy Baked Acorn Squash image

This elegant side dish needs almost no prep. Just pop the squash in the oven, then make the rest of the meal.

2 acorn squash (1 pound each), halved lengthwise, seeded, and bottoms trimmed to lie flat if necessary
Salt and pepper
1/4 cup heavy cream
8 sprigs thyme
1/2 cup grated Parmesan (2 ounces)

Steps:

  • Preheat oven to 375 degrees. Place squash halves cut side up on a rimmed baking sheet and season with salt and pepper. Divide cream and thyme among halves.
  • Bake until squash is tender when pierced with the tip of a sharp knife, 35 to 40 minutes. Sprinkle with Parmesan and bake until cheese is melted and golden, 10 to 15 minutes more.

2 acorn squash, halved and seeded
salt and pepper to taste
¼ cup butter, diced
6 tablespoons firmly packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place squash in a shallow baking pan, cut side down.
  • Bake in preheated oven for 30 minutes, or until tender.
  • Turn cut side up; season with salt and pepper, dot with butter and sprinkle with brown sugar and cinnamon.
  • Bake for 20 minutes more.

1 acorn squash
1 medium onion
1 tablespoon butter
1/2 cup sour cream
salt & pepper

Steps:

  • Halve squash and scoop out seeds and pith.
  • Place squash cut side down on greased jelly roll pan. Pierce squash with fork several times.
  • Bake at 350˚ for 1 hour. Done when fork easily pierces.
  • Remove squash from oven and allow to cool down.
  • Remove squash from shell into bowl.
  • Saute onion in butter.
  • Combine squash, onion, and sour cream until uniform.
  • May be stored in refrigerator and warmed in 250 oven before serving.

2 medium acorn squash (baked at 350 degrees for 45 minutes)
1 lb sausage (make it spicy or sweet)
1 1/2 tablespoons butter
1/2 cup sour cream
2 cups mushrooms, sliced
2/3 cup chopped onion

Steps:

  • Cook sausage, onion and mushrooms in butter in skillet.
  • When squash is done baking and cooled slightly, cut in half and scoop out seeds.
  • Add sour cream to sausage mixture.
  • Stuff squash with sausage mixture.
  • Place in baking dish. Return to oven and bake for 20 minutes at 350 degrees.

3/4 cup maple syrup
2 tablespoons butter, melted

  • Cut squash in half lengthwise; remove and discard seeds and membrane. Cut each half widthwise into 1/2-in. slices; discard ends. , Place slices in a greased 13x9-in. baking dish. Sprinkle with salt. Combine syrup and butter; pour over squash. Sprinkle with pecans if desired. , Cover and bake at 350° until tender, for 40-45 minutes.

2 tablespoons butter
1/2 teaspoon cinnamon
1/4 teaspoon allspice
2 pinches nutmeg
1 1/2 teaspoons brown sugar
2 teaspoons brandy

  • Preheat oven to 350 degrees F.
  • Line baking sheet with aluminum foil.
  • Halve squash and remove seeds and pulp; rinse.

Start enjoying those wonderful fall desserts before Thanksgiving with this ice cream made from a surprisingly sweet squash variety: acorn squash. The flavor combination of brown sugar and just a little butter makes it hard to forget this unique treat is in the freezer. The subdued amounts of spice complement the delicate flavor of acorn squash. I modified this recipe from an existing pumpkin ice cream recipe in one of my cookbooks.

1 acorn squash
2 tablespoons butter
1 tablespoon water, or as needed
4 egg yolks
½ cup light brown sugar
2 cups heavy whipping cream
2 cups milk
1 teaspoon vanilla extract
½ teaspoon ground ginger
½ teaspoon kosher salt
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place squash, pointed-side up, on a baking sheet.
  • Bake in the preheated oven until squash is tender, about 1 hour. Cool squash until easily handled. Cut squash in half, remove seeds and stringy parts of meat, and peel skin from the squash and discard.
  • Mash the squash meat in a bowl and measure 1 cup meat.
  • Combine 1 cup squash meat and butter in a saucepan; add enough water to make squash stir-able. Cook squash mixture over low heat until squash softens, adding more water if needed to thin the squash, about 15 minutes. Remove saucepan from heat and cool squash mixture.
  • Beat egg yolks and brown sugar together in a bowl using a whisk until thickened.
  • Heat cream and milk together in a saucepan over low heat until mixture begins to simmer. Gradually pour cream mixture into the egg yolk mixture and beat until smooth to temper the eggs. Pour the cream-egg mixture into the saucepan; simmer over low heat until mixture is thickened and easily coats the back of a spoon, about 20 minutes. Strain cream mixture through a fine-mesh strainer into a large bowl and cool to room temperature.
  • Beat squash mixture into cream mixture until smooth; stir in vanilla extract, ginger, salt, and allspice. Cover bowl with plastic wrap and refrigerate until completely chilled, at least 4 hours.
  • Stir cream mixture and transfer to an ice cream maker and follow manufacturer's instructions for making ice cream.

1 squash (I used green acorn)
4 tablespoons butter
nutmeg
4 tablespoons honey
1/4 cup water

Steps:

  • Preheat over to 375
  • Cut squash in half and scoop out seeds.
  • Fill each half with 2 Tablespoons butter, 2 Tablespoons honey and sprinkle with nutmeg.
  • Put 1/4 cup water in shallow baking dish. (I use a 9x9 pyrex).
  • Put the squash in the dish CUT SIDE DOWN. Yes, some of the filling will slide into the water, but that's okay.
  • Bake for 40-45 minutes.
  • As an alternative, you can microwave the squash loosely covered for 12-15 minutes until tender.

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a baking sheet and a baking dish.
  • Halve the squash lengthwise and clean.
  • Transfer the squash, cut side down, to the baking sheet, and bake the squash until it is tender, about 45 minutes.
  • Don't turn off the oven.
  • While the squash cooks, melt the butter, and stir in the remaining ingredients.
  • Keep the mixture warm until it is needed.
  • Arrange the squash, cut sides up, in the baking dish.
  • Spoon the butter and seasonings equally over the sections.
  • Bake the squash another 15 minutes, until it is very soft.
  • Serve the squash hot.
