Steps:
- Allow the tuna steak to come to room temperature by letting it stand for at least 20 minutes. (Use this time to prep the ingredients for the sauce!)
- Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides to get a nice even coating.
- Heat the oil in a medium skillet over medium high heat. Add the tuna steaks and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare the inside. The tuna will continue cooking while sitting. For a medium-rare tuna steak, the internal temperature should be 130 degrees Fahrenheit when measured with a food thermometer at the thickest point.
- Allow the tuna to cool for 3 minutes while you make the sauce.
- Melt the butter in a small saucepan or skillet over low heat. Once melted, add the capers (whole or chopped for a smoother sauce), finely minced parsley, the smashed garlic clove, Dijon mustard, and salt and cook until fragrant, about 3 minutes. Remove from heat and remove garlic clove.
- Slice the tuna against the grain into ½-inch slices and serve immediately with a few drizzles of the sauce.
SAVORY PAN-SEARED TUNA STEAKS
These marinated tuna steaks, served rare, taste 'fancy' but are very easy to cook. Even my husband, who doesn't like most cooked fish, enjoys these steaks. A sprinkling of cracked black pepper is a good finisher for this dish.

- Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
- Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
- Heat a non-stick pan over medium heat. Remove steaks from marinade and arrange in the hot pan; gently shake pan to avoid sticking. Cook approximately 1 1/2 minutes and flip. Cook other side until tuna is desired doneness, 1 to 2 more minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

- Season the tuna steaks with salt and cayenne pepper.

BAJA TUNA STEAKS
Spicy Baja Tuna steaks topped with your favorite guacamole. The recipe #400754 has chili's that are quite spicy and the guacamole is a perfect accomodante. My chili powder is very hot and fresh. If need be do double yours accordingly.

Steps:
- Mix all marinade ingredients together.
- Coat the steaks with marinade and cover. Let marinade 1 hour.
- remove the tuna scraping the marinade off. Reserve marinade.
- In a very hot lightly oiled pan sear the tuna steaks 3 minutes each side for a rare center. Do cook longer a well done center.
- Remove, cover set aside.
- Meanwhile in same pan lower heat and stir fry the marinade ingredients for 2 minute, add rum and brown sugar and then simmer for 5 minutes or till completely reduced.
- Slice and serve topped with simmered marinade and guacamole.

- Sprinkle the seasoning all over the roast. Place a heavy skillet on the stove top and swirl a good amount of olive oil in pan. Turn heat to medium and let the oil heat until shimmering. Add the beef roast to the pan and sear 3-4 minutes each side or until a golden brown crust appears. Place the seared roast into the crock pot. Add the onion and garlic to the pan and saute to soften. Add a fat dash of water, or oops, tequila, into the searing pan to deglaze any stuck bits. Add the chopped roasted poblanos and stir, add the sauted veggies to crock on top of meat. Sprinkle the cumin, coriander, oregano, red chili, salt and sugar on top of the meat. Pour the tomatoes and tequila over the meat and spices. MARINATED TUNA STEAK

- In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
