Number Of Ingredients 9

1-1/2 cups half-and-half cream
3 large egg yolks
3 tablespoons brown sugar
2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
8 slices day-old brioche bread (1 inch thick)
Optional toppings: Butter, maple syrup, fresh berries, whipped cream and confectioners' sugar

Steps:

  • In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat., Dip bread in egg mixture, letting it soak 5 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired.

You can use white sandwich bread, but French toast also works well with other loaves, including brioche, challah, cinnamon-raisin, whole-wheat, French, even sourdough.

Number Of Ingredients 9

2 large eggs
⅔ cup whole milk (or high-fat milk alternative)
1 teaspoon sugar
Dash of salt
½ teaspoon vanilla extract (optional)
Dash of cinnamon (optional)
6 slices white bread (or bread of choice)
2 tablespoons unsalted butter, divided
Toppings, such as fruit, syrup, butter, or powdered sugar (optional)

Steps:

  • Whisk together eggs, milk, sugar, and salt (as well as the optional vanilla extract and cinnamon, if using) in a medium shallow bowl until the mixture is fluffy and light in color.
  • Melt 1 tablespoon butter in a large skillet over medium-high heat. Working with one bread slice at a time, soak the bread in the egg mixture for 3 to 4 seconds per side. Don't let the slices sit too long; they will turn soggy and fall apart.
  • Once butter is melted and bubbling, add 3 soaked bread slices to hot pan and cook until golden brown, or about 1 1/2 to 2 minutes. (There may be some spots that do not brown; that's normal.)
  • Flip each slice, and cook until gold brown, or about 1 1/2 to 2 minutes. Repeat with remaining butter and egg-soaked bread. Serve hot with toppings of choice.

4 eggs
1/4 cup coconut rum
1/4 milk
3 T. oil
1 loaf day old Bimini bread, 1/2"-1" thick slices
honey
coconut

Steps:

  • Combine eggs, rum and milk. Heat 1 T. oil in a skillet. Dip bread slices into egg mixture and cook until golden. Do not crowd bread slices in pan. Flip and cook other side of french toast until golden. Remove from pan and serve or keep warm. Add more oil to pan as necessary and repeat dipping and cooking until all bread is used. Serve topped with honey and coconut.

Eggy bread, pain perdu or French toast - this classic breakfast dish has plenty of names and just as many options for toppings. We like it with fresh berries

2 large eggs
80ml whole milk
40ml double cream
1 tsp vanilla extract
½ tsp cinnamon
4 thick slices brioche
2 tbsp vegetable oil
2 tbsp butter
icing sugar and fresh berries, to serve (optional)

Steps:

  • Whisk together the eggs, milk, cream, vanilla and cinnamon. Lay the brioche slices in a single layer in a shallow dish and pour the egg mixture over them. Allow to soak for 2-3 mins, then carefully turn over and soak for 2 mins more.
  • Heat 1 tbsp of the vegetable oil and butter in a non-stick frying pan over a medium heat until foaming. Carefully lift 2 slices of the soaked brioche out of the dish and add to the frying pan. Fry for 3 mins on each side, until golden and crisp, then place on a wire rack over a baking tray in a warm oven while you repeat with the remaining slices.
  • Serve dusted in icing sugar and scattered with fresh berries, if you like.

This Brazilian breakfast treat is usually served around Christmastime. Being soaked overnight, it makes for a festive holiday brunch item. Cooking the toast long enough for the outside to get crispy still leaves it with a custard-like interior that melts in the mouth. This recipe comes from Chow, by Aïda Mollenkamp. I haven't tried this recipe yet, but I may try it with less oil on a griddle, and although a topping is not mentioned in the recipe, I might use chocolate syrup and whipped cream. Pretty rich, but it is holiday fare after all. nt (not tried)

1 medium sweet baguette or 1 medium sourdough baguette
3 large eggs
3/4 cup sweetened condensed milk
6 tablespoons whole milk
1/2 teaspoon vanilla extract
1/2 teaspoon kosher salt
1/2 cup granulated sugar
1 tablespoon unsweetened cocoa powder
1/4 teaspoon ground cinnamon
3 -4 cups vegetable oil (for frying, estimated)

Steps:

  • Cut bread into 1-inch thick slices on the bias. You should get about 16 pieces. If you have more, adjust other ingredients to compensate.
  • Whisk together the eggs, condensed milk, whole milk, vanilla extract, and salt until well mixed.
  • Coat bread slices on both sides in the egg mixture, and place coated bread in a shallow pan or pie plate, add any remaining egg mixture to it. Cover with press and seal wrap or foil and place in the refrigerator to soften overnight.
  • Mix together sugar, cocoa and cinnamon in a small shallow bowl big enough to hold one slice bread.
  • Heat oil in a deep skillet to about 2-inches until it reaches 330F (use a candy thermometer to check).
  • Lift the bread from the egg mixture until it stops dripping, and pan fry the pieces in the skillet on both sides until golden and crispy. Keep the oil hot while frying (check temp), raising the heat if needed.
  • As the pieces are removed from the skillet, drain on paper towels then dredge in the spicy sugar mixture.
