Bring a little "oh la la" to lunch with these easy, essential recipes for classic French sandwiches on a baguette.

1 fresh, crusty baguette
3 tablespoons best-quality softened butter (salted cultured butter or grass fed would be good options)
1/2 pound French-style ham, sliced
1/2 pound Emmental or Gruyère cheese, sliced by hand into thin triangles
1 fresh, crusty baguette
1 or 2 ripe tomatoes, sliced
1/3 pound bloomy rind goat cheese, such as Bucheron
1/3 pound French-style ham, optional
1/2 teaspoon herbes de Provence
1 small handful of fresh arugula, optional
2 tablespoons extra-virgin olive oil, optional
1 tablespoons minced parsley
1 1/2 tablespoons red wine vinegar (just eyeball it)
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
12 turns fresh black pepper
2 anchovies
2 tablespoons minced shallot (about 1/2 of one shallot clove)
4 tablespoons olive oil, divided
1 fresh, crusty baguette
1 6.7 ounce jar of Italian oil-packed tuna, drained
1/2 bell pepper, red or green, sliced very thin
1 small handful raw haricots verts or green beans, cut into 1-inch pieces.
1 large handful arugula (about 1 ounce)
2 hard-boiled eggs, peeled and sliced
10 to 12 pitted black olives, preferably Niçoise, chopped
1 tomato, sliced

Steps:

  • Slice the baguette in half lengthwise, almost all the way through, and open.
  • Slather both sides with the butter. Layer with the ham and cheese. Close, press, and divide into two or three sandwiches.
  • Slice the baguette in half lengthwise, almost all the way through, and open. Drizzle the top and bottom baguette halves with olive oil.
  • Slice the tomato slices in half, so they are in half moons. Slice the goat cheese into thin rounds, then slice them in half into half moons.
  • If using, layer arugula, then ham onto the bottom of the sandwich. Then add alternating slices of tomato and goat cheese along the length of the sandwich.
  • Sprinkle with herbes de Provence. Close the baguette, press, and divide into halves or thirds.
  • Make the Vinaigrette: In a medium-sized mixing bowl, combine the parsley, vinegar, Dijon, salt, pepper, anchovies, shallot, and 2 tablespoons of olive oil. Whisk until emulsified.
  • Slice the baguette in half lengthwise, almost all the way through, and open. Drizzle the top and bottom baguette halves with the remaining 2 tablespoons of olive oil.
  • To the vinaigrette, add the tuna, bell pepper, haricots verts, and arugula. Stir to mix well. The tuna will break apart somewhat.
  • Spread the tuna mixture along the bottom half of the baguette. Layer the sliced hard-boiled egg and olives atop the tuna mixture.
  • Sprinkle with herbes de Provence. Close the baguette, press hard, and let rest for 2 to 24 hours, preferably weighted down. Tip: Suggestions for weighing down the pan bagnat: the bottom of a cast-iron skillet, or sheet pan with heavy cookbooks on it. Slice into halves or thirds, and serve. Note: If the sandwich will rest for more than two hours, wrap it in plastic wrap and refrigerate. Before serving, allow to return to near room temperature.

There is one sandwich in the Vietnamese repertoire and it is a tour de force. Garlicky meats, marinated daikon and carrot, chiles, cucumber, and cilantro tucked into a baguette moistened with mayonnaise and Maggi Seasoning sauce, bánh mì merges European and Asian food traditions. Each mouthful reflects how Vietnamese cooks co-opted French ideas to create new foods. All bánh mì use the same basic framework of ingredients, though a minority of makers use margarine or butter instead of mayonnaise. At Vietnamese delis, you make the call on the main protein element. The dac biet (special) is basically "the works," a smear of liver pâté and slices of various cold cuts that show off the art of Vietnamese charcuterie (pages 156 to 171). Follow the custom of Viet deli owners and use your imagination to fill the sandwich. Just make sure it is boldly flavored. Pieces of grilled lemongrass beef (page 28), oven-roasted chicken (page 80), five-spice pork steaks (page 143), or char siu pork (page 142; pictured here) are excellent. Seared or grilled firm tofu or left over roasted lamb or beef will work, too. The bread doesn't have to be one of the airy Vietnamese baguettes made with wheat and rice flours. (In the past, the best baguettes in Vietnam were made from wheat flour only and displayed an amazing crumb and crust.) You can use a regular baguette (though neither sourdough nor too crusty) or a Mexican bolillo (torpedo-shaped roll).

1 petite baguette roll or 7-inch section from a regular baguette
Mayonnaise, preferably homemade
Maggi Seasoning sauce or light (regular) soy sauce
Liver pâté, boldly flavored cooked meat, and/or tofu, sliced and at room temperature
3 or 4 thin, seeded cucumber strips, preferably pickling (Kirby) or English
2 or 3 sprigs cilantro, coarsely chopped
3 or 4 thin slices jalapeño chile
1/4 cup Everyday Daikon and Carrot Pickle (page 192)

Steps:

  • Slit the bread lengthwise, leaving it attached on the back side. Using your fingers or a bread knife, hollow out the insides, making a trough in each half. Discard the insides or save for another use, such as bread crumbs. If the bread is soft , crisp it briefly in a toaster oven preheated to 325°F, and then let it cool for a minute before proceeding.
  • Generously spread the cut sides of the bread with mayonnaise and then drizzle with Maggi Seasoning sauce. Layer the meat, cucumber, cilantro, chile, and pickle on the bottom half. Close the sandwich, cut in half crosswise for easy eating, and enjoy.

1 cup water
2 ½ cups bread flour
1 tablespoon white sugar
1 teaspoon salt
1 ½ teaspoons bread machine yeast
1 egg yolk
1 tablespoon water

Steps:

  • Place 1 cup water, bread flour, sugar, salt and yeast into bread machine pan in the order recommended by manufacturer. Select Dough cycle, and press Start.
  • When the cycle has completed, place dough in a greased bowl, turning to coat all sides. Cover, and let rise in a warm place for about 30 minutes, or until doubled in bulk. Dough is ready if indentation remains when touched.
  • Punch down dough. On a lightly floured surface, roll into a 16x12 inch rectangle. Cut dough in half, creating two 8x12 inch rectangles. Roll up each half of dough tightly, beginning at 12 inch side, pounding out any air bubbles as you go. Roll gently back and forth to taper end. Place 3 inches apart on a greased cookie sheet. Make deep diagonal slashes across loaves every 2 inches, or make one lengthwise slash on each loaf. Cover, and let rise in a warm place for 30 to 40 minutes, or until doubled in bulk.
  • Preheat oven to 375 degrees F (190 degrees C). Mix egg yolk with 1 tablespoon water; brush over tops of loaves.
  • Bake for 20 to 25 minutes in the preheated oven, or until golden brown.

1 pound ground beef
¾ cup bread crumbs
2 teaspoons dried Italian seasoning
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese
1 egg, beaten
1 French baguette
1 tablespoon extra-virgin olive oil
½ teaspoon garlic powder
1 pinch salt, or to taste
1 (14 ounce) jar spaghetti sauce
4 slices provolone cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
  • Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
  • While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!
