BACON WRAPPED PINEAPPLE
This pineapple appetizer can be served hot or cold and is made with just four ingredients!

Steps:
- Preheat oven to 400F
- Wrap each chunk pineapple in 1/2 slice bacon and secure with a toothpick. Place on a bakings sheet fitted with a baking rack.
- In a small bowl, stir together the brown sugar and soy sauce.
- Brush each bacon wrapped pineapple in the brown sugar mixture.
- Bake for 25 minutes or until the bacon is crispy.
- Serve hot or cold.
- Enjoy

BACON WRAPPED PINEAPPLE

Steps:
- Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
- Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
- Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
- Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
- Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

- Preheat oven to 400˚F.
- Place an oven-safe rack inside a foil lined rimmed baking sheet (for easy cleanup - see recipe note #2); brush rack with oil or spray with cooking spray to prevent sticking.
- Whisk maple syrup and cayenne pepper together in a small bowl.
- Spread brown sugar on a small plate
- Cut bacon slices in half crosswise.
- Use a fork or small tongs to dip one pineapple chunk in maple syrup mixture, coating all sides; allow any excess to drip off and place in brown sugar. Turn to coat lightly on all sides. Wrap coated pineapple chunk in a half slice of bacon (starting at one end of of the bacon slice and rolling it up); place on rack in baking sheet. Repeat with remaining pineapple. Bake 30 to 35 minutes, or until bacon is crispy and pineapple is hot. Serve with toothpicks if desired.

- Cut each slice of bacon in half widthwise. Wrap a strip around each chestnut or pineapple chunk; secure with toothpicks. Place in an ungreased 15x10x1-in. baking pan. - Preheat the oven to 350 degrees F (175 degrees C).
- Wrap each chunk of pineapple with a piece of bacon and secure with toothpicks. Place in a shallow baking dish. In a small bowl, stir together the brown sugar, mayonnaise and chili sauce; pour over the bacon wrapped pineapple.
- Bake uncovered for 25 minutes in the preheated oven, until bacon is crispy on the edges and the sauce is bubbly. Serve warm.

BACON-WRAPPED PINEAPPLE APPETIZERS (MICROWAVE)
This is a different, outstanding appetizer. They always disappear fast when served. Original recipe is from the Sharp Carousel Recipe Book which came with my first microwave. I've made them in other carousel microwaves also. The time to cook is actually 5 - 9 minutes depending on your microwave's power. Just watch them cook the first time for the light browning and you'll do fine. Prep/Cook time does not include marinating time. Hope you enjoy!

- Combine the 3 tablespoons juice, soy sauce, ginger and garlic powder in small bowl.
- Marinade the pineapple chunks in this for 1- 2 hours.
- Drain.
- Wrap a piece of bacon around each chunk.
- Secure with a toothpick.
- Line microwave carousel with several layers of paper towel.
- Arrange around the outer edge of carousel with space between each one.
- Microwave at 100% power until bacon is lightly browned (5 to 9 minutes).
- Serve.

- Cut the length of the bacon in half. Open and drain the pineapple. Wrap each chunk of pineapple with a piece of bacon and use a toothpick to keep it wrapped.
- Place the wrap on a metal baking tray with the pineapple facing up. Sprinkle brown sugar over the top.
- Bake until bacon is cooked. Remove from pan and place on a warm plate or serving tray.
