Bacon Wrapped Dark Chocolate + Goat Cheese Stuffed Dates image

Sweet and savory bacon wrapped dark chocolate & goat cheese stuffed dates make a fun, delicious appetizer to serve a crowd. These easy bacon wrapped dates have hints of dark chocolate, creamy goat cheese, and crispy bacon. They're guaranteed to impress guests!

1-2 ounces goat cheese
1-2 squares 72% dark chocolate, chopped into pieces (this is optional)
1 (12 ounce) package bacon
20-24 pitted dates
For the glaze:
1-2 tablespoons maple syrup
Cayenne pepper

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. You'll want to make sure your baking sheet has some edges, as the bacon does produce lots of grease when cooked.
  • Split each date in half without breaking them fully apart. Make sure the pit is fully removed and discarded from the date if it already isn't.
  • Add a small piece of dark chocolate to your opened date. Spread a small amount of goat cheese mixture inside, and press together to close your date. Repeat with all of your dates.
  • Next, cut your strips of bacon in half. Take one date and wrap ½ piece of bacon around it. Repeat this step until each date is wrapped in ½ slice of bacon.
  • Place all bacon-wrapped dates on large baking sheet with the bacon seam side down.
  • Brush each bacon wrapped date with a little maple syrup. Sprinkle cayenne pepper on each date (use more if you like spicy flavors, and omit or only use a small pinch if you do not like spicy flavors). Stick a toothpick into each date.
  • Bake in the oven for 10 minutes, then turn date on its side so that the toothpick is parallel to the baking sheet. Bake for 10 more minutes. Then flip dates to other side and bake again for 10 minutes or until bacon is slightly golden brown. Transfer to a plate to cool. Serve immediately. Serves 10, 2 bacon-wrapped dates each.

Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

10 ounces goat cheese, at room temperature
4 ounces cream cheese, at room temperature
2 tablespoons freshly squeezed lemon juice
Salt and pepper
5 ounces thick-cut bacon, cut in 1/2-inch thick
10 Medjool dates, pitted and cut into quarters lengthwise, or roughly chopped
Honey, red-pepper flakes, black pepper, flaky salt, toasted sliced almonds or chopped pistachios, for garnish (optional)
Crusty bread, grainy crackers, endive or fennel, for serving

Steps:

  • Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
  • Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
  • Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

12 slices bacon, cut in half crosswise (24 pieces)
4 ounces goat cheese
24 unsalted almonds, toasted

Steps:

  • Move oven rack to upper third of oven and preheat to 500°F.
  • Stuff each date with an almond, then fill the remaining space with softened goat cheese using a pastry bag.
  • Wrap a piece of bacon around each date and secure with a pick.
  • Place dates on baking sheet lined with parchment paper and bake until bacon is golden and crispy, 6-8 minutes.
  • Set aside to cool briefly before serving.
  • For presentation, insert picks into half a pineapple sliced lengthwise.

These went over well at my B-day even among those that claimed to dislike goat cheese.(suggestions were made about subbing cream cheese,but I didn't hear any complaints;)The goat cheese really isn't overpowering;it's tangy creaminess is what harmonizes the sweet and savory flavors.I just wish I could eat these more often !

When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

1 1/2 lbs smoked bacon, thin sliced

Steps:

  • Stuff each date with one almond.
  • Cut bacon into half or thirds.
  • Wrap bacon around date and secure with a round toothpick.
