1 Tbsp butter
4 Eggs
1/4 Cup of Shredded Cheese (we use raw cheddar)
2 Strips COOKED Bacon (cut into small pieces)
2 Large handfuls of Spinach

Steps:

  • Add butter to skillet and place over medium heat.
  • Crack eggs into a large mixing bowl. Whisk briefly.
  • Add bacon and cheese, and salt and pepper. Whisk again.
  • Add spinach and toss until spinach is well coated.
  • Add mixture to skillet.
  • Let cook for 2-3 minutes, then stir and break it up with a spoon or spatula.
  • Continue cooking until eggs are at desired consistency.
  • Serve immediately.

3 can(s) spinach, drained
3 eggs
5 slice bacon
bacon drippings
salt
pepper

Steps:

  • 1. Fry bacon until crispy and set aside.
  • 2. Pour spinach into large skillet with bacon drippings. If on a diet, drain the bacon drippings out first. Stir occasionally and let the spinach cook until hot.
  • 3. Crack eggs on top of hot spinach and season them with salt and pepper. Scramble the eggs into the spinach until the eggs are well mixed and done.
  • 4. Sprinkle with crumbled bacon.

1 teaspoon garlic salt
¼ teaspoon ground black pepper
½ pound bacon
1 red bell pepper, chopped
¼ cup minced onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup shredded Monterey Jack cheese
¼ cup finely shredded Asiago cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat eggs in a bowl using a fork. Add milk, garlic salt, and black pepper to eggs and beat until fully integrated.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate and drain grease from skillet. Chop bacon.
  • Saute red bell pepper and onion in the same skillet over medium-high heat until tender, 5 to 10 minutes.
  • Spread spinach into the bottom of the prepared baking pan; top with bacon and red bell pepper mixture. Pour egg mixture over bacon mixture and sprinkle Monterey Jack cheese and Asiago cheese over egg mixture.
  • Bake in the preheated oven until a knife inserted in the center comes out clean, 35 to 45 minutes.

1/2 cup whole milk
1/2 pound fresh spinach (rinsed, dried, and torn into roughly 1-inch pieces)
8 slices bacon
1/2 large onion (peeled and diced)
1 cup cheddar cheese (grated)
Kosher salt (to taste)

Steps:

  • Gather the ingredients. Preheat the oven to 450 F.
  • Cook the bacon in a cast-iron skillet over medium-low heat until crispy.
  • Remove from the pan, drain on paper towels, and set aside. Reserve about 2 tablespoons of bacon fat.
  • When the bacon is cool, crumble it or roughly chop into 1/4-inch pieces.
  • Heat the reserved bacon fat, add the diced onion, and sauté for 2 to 3 minutes or until it's slightly translucent.

1 5-ounce bag baby spinach
2 whole wheat or sourdough English muffins, split horizontally, well toasted
4 large eggs
4 tablespoons heavy whipping cream

4 1-cup ramekins

Steps:

  • Preheat oven to 400°F. Cook bacon in large skillet over medium heat until crisp; transfer to paper towels. Pour off drippings from skillet; reserve drippings. Add spinach to pan, sprinkle with pepper, and toss over medium heat, 1 minute. Transfer to strainer set over bowl to drain. Brush four 1-cup ramekins with drippings. Crumble bacon.
  • Place 1 toasted English muffin half, split side up, in each ramekin. Divide spinach among ramekins, then sprinkle bacon over, dividing equally. With back of spoon, shape well in center of each ramekin. Gently crack 1 egg into well in each ramekin, keeping yolk intact. Drizzle 1 tablespoon cream over each egg. Sprinkle with salt and pepper.
  • Bake eggs until whites are just set but yolks are still runny, 14 to 16 minutes.

Steps:

  • In 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, turning occasionally, until crisp and brown. Remove from skillet; drain on paper towels. Crumble bacon.
  • Meanwhile, in 2-quart saucepan, heat 1 inch water to boiling. Add potatoes. Cover; heat to boiling. Reduce heat to medium-low. Cook covered 6 to 8 minutes or until potatoes are tender; drain. In medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed; set aside.
  • In 10-inch skillet, melt butter over medium-high heat. Cook potatoes in butter 3 to 5 minutes, turning potatoes occasionally, until light brown. Stir in onions. Cook 1 minute, stirring constantly.
  • Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with metal spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist. Sprinkle with crumbled bacon.
