1 1/2 lb extra-lean (at least 90%) ground beef
1/2 cup Progresso™ plain bread crumbs
1/4 cup finely chopped onion
1/4 cup ketchup
2 teaspoons yellow mustard
1/2 teaspoon salt
1 1/4 cups water
3 tablespoons butter or margarine
1/4 teaspoon garlic salt
3/4 cup milk
2 cups mashed potato flakes
1 cup shredded Cheddar cheese (4 oz)
1 medium tomato, chopped
3 slices precooked bacon, crumbled
2 green onions, sliced, if desired

Steps:

  • Heat oven to 375°F. In medium bowl, mix ground beef, bread crumbs, onion, ketchup, mustard and salt. Press mixture in bottom and up sides of ungreased 9-inch pie plate. Bake 15 minutes.
  • In medium saucepan, place water, butter and garlic salt. Heat to boiling. Remove from heat. Add milk. With fork, stir in potato flakes. Stir in 1/2 cup of the cheese.
  • Remove partially baked beef crust from oven; pour off any drippings. Spoon potato mixture evenly into crust. Return to oven; bake 10 to 15 minutes longer or until beef is thoroughly cooked and thermometer placed in center of crust reads 160°F, and potatoes are hot.
  • Remove pie from oven. Top with tomato, remaining 1/2 cup cheese and crumbled bacon; bake 5 minutes longer or until cheese is melted. Remove from oven; top with green onions. Let stand 10 minutes before serving.

Return to oven and bake 15 min. Remove from oven and drain drippings again. Bake another 15 min. Remove from oven and top with tomato,remaining 1/2 c cheese and crumbled bacon. 4 Idaho® Russet Potatoes
½ cup melted butter
1 cup sour cream
1 ⅓ cups shredded Colby-Jack Cheese, divided
½ teaspoon granulated garlic
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pound Beef, ground, regular, cooked, baked, well done
½ cup barbecue sauce
6 slices bacon, cooked and crumbled
2 medium green onions, sliced

Steps:

  • Preheat oven to 400 degrees F.
  • Scrub Idaho® Russet Potatoes until clean and dry them. Place on a baking sheet and bake for 1 hour, or until potatoes are cooked through. Remove from oven and place on a wire rack to cool slightly. Lower oven temperature to 375 degrees F.
  • Cut potatoes lengthwise about 3/4 of the way through, leaving them attached on the bottom. Scrape the insides of potatoes with a spoon into a large mixing bowl. Add butter, sour cream, 1 cup of cheese, garlic, salt and pepper. Mash together or whip with an electric mixer, depending on your desired texture.
  • Spoon filling into potato shells and place on a baking sheet. Toss cooked ground beef with barbecue sauce and spoon equally over potatoes. Sprinkle each potato with remaining cheese, bacon, and green onions.
  • Bake for 20 to 25 minutes, or until potatoes are heated through and cheese is melted. Serve immediately.

1 lb lean (at least 80%) ground beef
1/4 teaspoon pepper
1 large onion, chopped (1 cup)
1/4 cup ketchup
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook bacon over medium-high heat 5 to 7 minutes, turning once, until crisp; drain on paper towels. Crumble bacon; set aside.
  • In same skillet, cook beef, pepper and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in ketchup. Spread in pie plate; sprinkle with cheese and bacon.
  • In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
  • Bake 20 to 25 minutes or until knife inserted in center comes out clean. Serve with additional ketchup if desired.

My husband and father-in-law love this! It's a bit time-consuming, but worth the spectacular results. Truly a handsome dish! From one of those Pillsbury mini-magazine things you buy at the supermarket. Please note that you can use leftover mashed potatoes as well, or make homemade if you really hate instant!

1 1/2 lbs lean ground beef
1/2 cup plain breadcrumbs
1/4-1/2 cup finely chopped onion
1/4 cup ketchup
2 teaspoons prepared mustard
1/2 teaspoon salt
3 slices bacon
1 1/4 cups water
3 tablespoons margarine or 3 tablespoons butter
1/4 teaspoon garlic salt (I use garlic powder though, and extra of it)
3/4 cup milk (skim is fine)
2 cups instant mashed potatoes
1 cup shredded cheddar cheese, divided in half
1 medium tomatoes, chopped
2 green onions, sliced (or you can use white onion)

Steps:

  • Heat oven to 375 degrees F.
  • Combine ground beef, breadcrumbs, onion, ketchup, mustard and salt and mix well.
  • Press hamburger mixture in bottom and up sides of an ungreased 9 inch pie pan to cover completely.
  • Bake in preheated oven for 15 minutes.
  • While meat mixture is baking, cook bacon until crisp.
  • Drain on paper towel, cool, and crumble.
  • Discard bacon drippings or save for another recipe.
  • In a medium sauce pan, combine water, margarine and garlic salt.
  • Bring to a boil.
  • Remove from heat and add milk.
  • With a fork, stir in potato flakes.
  • Then stir in 1/2 cup of cheddar cheese.
  • Remove partially baked"crust" from oven, pour off any fat.
  • Spoon potato mixture into crust evenly.
  • Return to oven for another 10-15 minutes or until meat is thoroughly cooked, and potatoes are heated through.
  • Remove pie from oven.
  • Top with tomato, remaining cheese and crumbled bacon.
  • Return to oven, and bake for 5 minutes longer, until cheese is melted.
  • Remove from oven, top with green onions.
  • Let stand 10 minutes before serving.

  • Preheat oven to 400 degrees. Brown ground beef, onion and bacon until no pink remains. Drain well. Remove from heat and stir in bread crumbs, mustard, barbecue sauce, ketchup, Worcestershire and pepper. Place mixture in prepared pie crust. In a small bowl, combine cheese, milk and egg. This particular soup is a cheeseburger variation on a more traditional potato soup base, and the addition of the ground beef alongside all that cheese and the potatoes makes for a rich, creamy, and hearty soup. The thick cut bacon adds a nice savory flavor and good texture. I love all the vegetables mixed throughout as well. It's just a great combination of flavors, textures, and ingredients. The cheese really thickens up the broth and it's a "stick to your ribs" kind of meal! Serve this with some crusty bread for sopping up all that goodness.

1 pound ground beef
4 thick bacon slices bacon
2 medium carrots, peeled and diced
2 medium celery, diced
1 small onion, diced
4 cups chicken broth
2 large russet potatoes, peeled and diced
3 tablespoons butter
¼ cup all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese, plus more for garnish
1 teaspoon dried basil
1 teaspoon dried parsley
salt and freshly ground black pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain, discard grease, and set aside.
  • Meanwhile, place bacon in a 3-quart saucepan, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove crisped bacon with a slotted spoon and set on paper towels to drain. Leave bacon grease in the saucepan.
  • Sauté carrots, celery, and onion in the bacon grease until vegetables are tender, about 10 minutes. Add broth, potatoes, and browned ground beef; bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, 10 to 12 minutes.
  • Meanwhile, wipe out the skillet you previously cooked the beef in. Melt butter in the skillet and whisk in flour; cook, stirring frequently, until bubbly, 3 to 5 minutes. Carefully whisk milk into flour-butter mixture until well combined and very smooth.
  • Pour milk mixture into the soup, whisking to combine; bring to a boil and simmer for about 2 minutes. Add Cheddar cheese and stir until melted. Season with basil, parsley, salt, and pepper.
  • Remove from heat. Ladle soup into bowls and sprinkle with bacon and additional shredded Cheddar cheese.

4 russet potatoes, baked
4 slices bacon
1/2 lb lean ground beef
1 onion, chopped
2 tablespoons sugar
1 tablespoon all-purpose flour
1/2 teaspoon salt
1 teaspoon dried dill
1/4 teaspoon dried thyme
1/2 teaspoon dried parsley
1 garlic clove, minced
1/2 teaspoon onion powder
1/2 teaspoon fresh ground black pepper
1/2 cup water
1/4 cup cider vinegar
1/2 cup shredded cheddar cheese

Steps:

  • Peel the potatoes and cut into 1/2-inch dice.
  • Fry the bacon in a skillet over medium heat until crisp. Transfer to paper towels to drain. Drain the fat from the skillet.
  • Cook the beef in the skillet over medium heat, breaking it up into small pieces. When it is no longer pink, use a slotted spoon to transfer it to a plate.
  • Add the onion to the pan and cook for 5 minutes, or until soft.
  • Stir in the sugar, flour, salt, dill, thyme, parsley, garlic, onion powder, and pepper. Cook, stirring, for about 2 minutes, or until the flour starts to brown. Add the water and vinegar and simmer for 2 to 3 minutes, stirring to make a smooth sauce. Crumble the bacon into the sauce and add the cooked beef. Add the potatoes and stir gently to coat with sauce.
  • Pour into a serving dish and sprinkle with cheese.
  • Serve hot.
  • VARIATION: To reduce the fat in this dish, use turkey bacon. Add 2 teaspoons olive oil to the pan before cooking the onion. Use grated Parmesan cheese instead of Cheddar, or omit the cheese altogether.
