Cheddar cheese and bacon add hearty breakfast flavor to these tasty muffins from Suzanne McKinley of Lyons, Georgia. Calling for just six ingredients, they're quick to stir up and handy to eat on the run.

Yield about 1 dozen.

Number Of Ingredients 6

2 cups biscuit/baking mix
2/3 cup 2% milk
1/4 cup canola oil
1 large egg
1 cup (4 ounces) finely shredded sharp cheddar cheese
8 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the biscuit mix, milk, oil and egg just until moistened. Fold in cheese and bacon. Fill greased muffin cups three-fourths full. , Bake at 375° for 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack. Serve warm. Refrigerate leftovers.

A drizzle extra-virgin olive oil
6 slices bacon, chopped
1 box corn muffin mix plus ingredients according to package directions to make 1 batch muffins
1 rounded teaspoon smoked sweet paprika
3 to 4 tablespoons finely chopped chives
1/3 pound brick sharp yellow Cheddar, chopped into 1/4-inch dice

Steps:

  • Preheat oven to muffin mix package directions.
  • Drizzle a little extra-virgin olive oil into a small skillet and place over medium-high heat. Add bacon to hot pan and crisp, 5 to 6 minutes. Remove from pan and drain on a paper towel. Set aside.
  • Prepare the muffin mix and muffin tin to package directions. Stir in paprika, chives, chopped cheese and crisp bacon bits. Fill muffin tins and bake until golden brown.

10 scallions, sliced thin
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups all-purpose flour
1 cup yellow cornmeal
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sour cream
1/2 cup whole milk
1/2 cup sugar
8 tablespoons . unsalted butter, melted and cooled
2 large eggs
8 ounces sharp cheddar cheese, shredded (2 cups)

Steps:

  • Adjust oven rack to the middle position and preheat oven to 400°.
  • Grease a 12-cup muffin tin.
  • Fry the bacon in a small skillet over med-high heat until crisp, about 5 minutes.
  • Stir in the scallions, salt, and pepper; cook until the scallions are heated through, about 1 minute.
  • Transfer the mixture to a paper-towel lined plate; let cool.
  • In a bowl, whisk the flour, cornmeal, baking powder, baking soda, and salt together.
  • In another bowl, whisk the sour cream, milk, sugar, melted butter, and eggs together until combined.
  • Gently fold the sour cream mixture into the flour mixture with a rubber spatula until just combined (do not overmix).
  • Gently fold in the bacon mixture and 1 1/2 cups of cheddar cheese.
  • Using a greased 1/3 cup measure, portion the batter into each muffin cup.
  • Sprinkle the remaining 1/2 cup cheddar over the tops of the muffins.
  • Bake until golden brown and a pick comes out with just a few crumbs attached, 15-20 minutes, rotating the pan halfway through the baking.
  • Let the muffins cool in the pan for 5 minutes, the turn out onto a wire rack and let cool for 10 minutes before serving.

3/4 cup cornmeal
6 tbsp unsalted butter, cubed, at room temperature
2 tbsp sugar
1 1/2 tsp kosher salt
3 eggs
3/4 cup all-purpose flour
6 tbsp rye flour
1 1/2 tbsp baking powder
1/2 cup plus 1 tbsp canola oil
3 tbsp plus 2 tsp maple syrup
1 cup plus 2 tbsp buttermilk
1/2 cup diced cheddar (1" cubes) plus 1/4 cup grated
6 tbsp grated Parmesan, divided
11 slices cooked bacon, coarsely chopped
1 1/2 tbsp bacon fat, cooled
1/4 cup fresh chives and/or parsley, finely chopped
chopped rosemary, for garnish

Steps:

  • Preheat oven to 400° with rack near top. Line two 12-cup muffin pans with 15 liners, spacing them evenly between the 2 pans.
  • In the bowl of a stand mixer fitted with paddle attachment, cream butter, sugar, and salt for 1-2 minutes, until fluffy. Incorporate eggs slowly, 1 at a time, beating well after each addition. Add all-purpose flour, cornmeal, rye flour, and baking powder and mix until incorporated. Add canola oil, maple syrup, and buttermilk. Scrape mixer bowl well, making sure everything is incorporated. Add diced cheddar, 4 tbsp Parmesan, bacon, and chives. Mix just until dispersed, folding by hand to be sure.
  • Fill muffin cups to the very top.
  • Toss grated cheddar with remaining 2 tbsp Parmesan in a small bowl; sprinkle evenly over muffins. Bake for about 15 minutes, until nicely browned. Garnish with chopped rosemary.

150g (¾ cup) fresh corn kernels or thawed frozen corn kernels
3 slices thick-cut bacon, cut into ¼-inch pieces
150g (1 cup plus 3 Tbsp) all-purpose flour
115g (½ cup plus 1 Tbsp) granulated sugar
75g (½ cup) cornmeal
95g (¾ cup plus 2½ Tbsp) dried milk powder
12g (1 Tbsp) baking powder
5g (1 tsp) fine sea salt
2 eggs, whisked
90ml (¼ cup plus 2 Tbsp) canola oil
150ml (½ cup plus 2 Tbsp) water
60g (¾ cup) grated cheddar cheese, plus more for topping
1 jalapeño, seeded and diced (40g / ¼ cup)
5g (¼ bunch) chives, chopped

Steps:

  • Preheat the oven to 350°F.
  • Place the corn on a baking sheet and roast in the oven for 15 minutes, until the kernels have toasty brown spots. Set aside to cool.
  • Line a plate with paper towels.
  • Cook the bacon in a frying pan over medium heat, stirring occasionally, until the fat has been rendered and the edges are golden brown, 6 to 8 minutes. Using a slotted spoon, transfer the bacon to the paper towels to drain. Set aside.
  • Coat a muffin pan with cooking spray and set aside.
  • Put the flour, granulated sugar, cornmeal, milk powder, baking powder, and salt in a large bowl and mix to combine. Make a well in the center and add the eggs, oil, and water; mix until well incorporated.
  • Add the corn, cheese, jalapeño, and chives; mix gently just until incorporated.
  • Spoon a scant 75g (⅓ cup) of batter into each muffin cup. Sprinkle the tops with additional cheese and the bacon.
  • Bake the muffins until golden brown around the edges and a cake tester or toothpick inserted in the center comes out clean, about 20 minutes, rotating the pan after 10 minutes to ensure even baking. Remove the muffins from the pan and cool completely on a cooling rack. Serve immediately or store in an airtight container at room temperature for 1 day (or in the refrigerator for up to 3 days).

Steps:

  • Heat oven to 425 degrees.
  • Grease 12 muffin cups.
  • Blend flour, cornmeal, baking powder, salt, and cayenne.
  • Beat egg with milk and butter.
  • Add to dry ingredients.
  • Stir until thoroughly moistened.
  • Stir in 1 cup of the cheese and spoon into muffin cups.
  • Sprinkle 1 tsp of cheese over each muffin.
  • Bake 15 to 20 minutes.
  • Serve hot with butter or freeze and reheat right before serving.
