These are yummy. If you can manage to get them to cook just the right way, they aren't crunchy, but soft and the tiniest bit chewy, and melt in your mouth!

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups rolled oats
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.

These cookies are reminiscent of a white chunk macadamia nut cookie but better. Using slivered almonds instead of macadamia nuts is a more economical alternative. Follow baking directions. The cookies can be a little tricky to get right on the first pan. Unless the oven is preheated, they might not turn out. Note that these cookies don't bake well on airbake pans.

1 ½ cups margarine, softened
¾ cup white sugar
2 ¼ cups packed brown sugar
3 eggs
1 teaspoon vanilla extract
2 teaspoons almond extract
3 cups all-purpose flour
1 ½ teaspoons baking soda
¾ teaspoon salt
3 cups regular rolled oats
1 ½ cups sweetened flaked coconut
4 (1 ounce) squares white chocolate, chopped
1 (3.5 ounce) jar coarsely chopped macadamia nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two cookie sheets.
  • Cream the margarine together with the white sugar and brown sugar in a mixing bowl until light and fluffy. Beat in the eggs, one at a time until thoroughly blended. Mix in the vanilla and almond extracts.
  • Stir the flour, baking soda, salt, and rolled oats together in a mixing bowl until well blended. Stir the flour mixture into the sugar mixture. Mix in the coconut, white chocolate, and macadamia nuts until evenly blended. Drop by tablespoonfuls 1 inch apart on prepared cookie sheets.
  • Bake in preheated oven until centers are set and edges are golden brown, about 15 minutes. Cool 3 minutes on baking sheets before removing to cool on a rack.

1 1/3 cup all purpose flour, spooned into measuring cup and leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup M&Ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 to 1/2 cup pecans, chopped

Steps:

  • Start with a 1 quart smooth Ball jar. I found these at Hobby Lobby craft store. Layer the ingredients in this order: Flour, baking powder, baking soda and salt Oats M&Ms Chocolate chips Brown sugar White sugar Chopped pecans Pack each level down really tightly. I mean it. Pack it in, or else it won't all fit. Also, I added the chopped pecans last, because if the ingredients were too much or not enough, then I could add more or less pecans to adjust. I'd rather sacrifice nuts than chocolate, you know. The ingredients should be flush to the top of the lid when you seal it up. DIRECTIONS ON TAG: Stir all the dry ingredients in a large mixing bowl. Add 1 slightly beaten egg, 1/2 cup butter melted slightly in the microwave, and 1 teaspoon vanilla. Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated. Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350°F oven. I got about 26 to 28 cookies out of these.

3/4 cup pecans (3 ounces)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups old-fashioned oats (not instant or quick-cooking)
6 ounces semisweet chocolate, cut into 1/4-inch chunks
1/2 cup shredded unsweetened coconut
Vegetable-oil cooking spray

Steps:

  • Preheat oven to 350 degrees. Spread pecans in a single layer on a rimmed baking sheet. Toast in oven, tossing occasionally, until darkened and fragrant, 10 to 13 minutes. Let cool, then coarsely chop. Into a bowl, sift together flour, baking soda, salt, and baking powder.
  • With an electric mixer on medium-high speed, cream butter and both sugars until pale and fluffy. Reduce speed to medium. Addeggs, one at a time, beating well after each addition. Beat in vanilla.
  • With mixer on low speed, gradually add flour mixture, beating until just incorporated. Beat in oats, chocolate, pecans, and coconut until just combined. (Dough can be covered with plastic and refrigerated up to 3 days.)
  • Coat baking sheets with cooking spray; line with parchment, and spray parchment. Using a 1 1/2-inch ice-cream scoop or a tablespoon, drop dough onto prepared sheets, about 3 inches apart.
  • Bake, rotating sheets halfway through, until edges of cookies begin to brown, 16 to 18 minutes. Transfer sheets to wire racks to cool 5 minutes. Transfer cookies to racks to cool completely. Cookies can be stored up to 3 days at room temperature in airtight containers

Cowgirl Cookies
2 XL Eggs (@ room temperature)
1C granulated sugar
1C dark brown sugar
2 sticks Butter
Blend together with a strong mixer
Add:
1T Vanilla (I like the Mexican vanilla and I have experimented with various fruit flavors and liquers)
In another large bowl mix:
2C+ Bread flour
2C Regular (not the quick) oatmeal
1t salt
1/2 t baking powder
1 t baking soda
Add:
6 oz. semi-sweet choclate chips. (when I want to make a real effort I buy bulk dark chocolate and chop it up)
6 oz. walnuts
6oz. Shredded coconut
Add the dry mixture to the liquid above and mix together. When I make this without a mixer, I've broken most of my spoons. Make sure your mixer doesn't overheat.
Scoop out with a tablespoon and form into balls the size of a large plum. I usually get 9 to 12 cookies to a regular cookie sheet. Bake at 375 for 12 - 15 minutes. I use an insulated shiny cookie sheet and still have to watch for burning.
It is better to make two batches than to double this one.

Oh, what a great after school treat! One will fill you up... but you'll probably want to snag another for good measure.

Number Of Ingredients 20

BLEND (IN A LARGE BOWL)
2 c oleo, softened
2 c brown sugar, firmly packed
2 c sugar
4 eggs
2 tsp mexican vanilla
SIFT TOGETHER AND THEN ADD TO SUGAR MIXTURE.
4 c unbleached white flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
STIR (OR KNEAD IN IF THE DOUGH BECOME TOO STIFF)
2 c quick oats
1 c semi-sweet chocolate chips
1 c butterscotch chips
1 c coconut, flaked
1 c walnuts, english
1 c cornflakes, crushed

Steps:

  • 1. Form the dough into balls a little larger than a golf ball. Place balls on an ungreased cooking stone. Place two chocolate chips for eyes and a butterscotch chip for a nose.
  • 2. Press down lightly with heel of the palm to flatten slightly. Bake at 350 degrees for 15 minutes.
  • 3. Remove cookies from the stone to a cooling rake. Allow to cool for a few mintues so they hold together better before serving immediately or allow to cool thoroughly and package 2 cookies wrapped back to back for travel.
  • 4. The dough can be stored in the refrigerator for up to 3 days and baked as need. Allow the dough to warm up for 30 minutes before attempting to form balls.
  • 5. Optional: Coconut can be ommitted and dried fruit can be used such as raisin or chopped prunes. DO NOT use dried cranberries because it interferes with the butterscotch, cinnamon and nutmeg combo that gives this cookie its distinct flavor.
