DILL PICKLE BACON GRILLED CHEESE
Pickles, bacon, Cheddar and Mozzarella cheeses, what is not to love? This recipe comes from a good friend of mine, and these are delicious!

Steps:
- 1. Everything prepped, I cannot get large sandwich slices of Cheddar or Mozzarella, so I slice from blocks, very easy but 1 sandwich slice is 3 thin slices from a block for me. I have pickle spears, homemade, so just sliced a couple of those to make slices to cover a sandwich.
- 2. Place a slice of bread on the counter, add a slice of Cheddar, then a layer of pickle slices, then the Mozzarella, then a layer of bacon, another slice of Cheddar, butter the other slice of bread and place that on top, butter side up. I assemble this before going into the pan as I want the heat to go through and melt the cheese from the start.
- 3. Heat a non stick pan with about a tablespoon of butter, when melted and hot, pick the sandwich up and place in the pan.
- 4. Cook until the bottom is golden brown, then carefully flip the sandwich over and cook the other side until golden brown.
- 5. Remove to a plate, slice in half, enjoy.

Steps:
- In a large bowl, mix together cream cheese, cheddar, mozzarella, pickles, dill, pickle juice, garlic powder and paprika until combined, then season with salt and pepper. Form mixture into one large ball.
- Make coating: In a shallow bowl or plate, mix together bacon, cheddar and dill.
- Roll cheeseball in the mixture until fully coated and serve.
BACON AND DILL PICKLE CHEESE BALL
Set this cheese ball out at a party and it will disappear like magic before your eyes. I like to serve it with plain potato chips or real dill pickle-flavored potato chips instead of the artificially flavored ones. Crackers and raw veggies work too.

- Combine cream cheese, sour cream, diced dill pickles, Cheddar cheese, Monterey Jack cheese, dill pickle juice, green onions, paprika, and dried dill in a large bowl. Stir until evenly combined. Form mixture into a ball. Cover and refrigerate for a minimum of 1 hour.
- Just before serving, place pretzels in a food processor and pulse until bread crumb consistency. Combine pretzel crumbs and bacon on a flat plate.
- Roll the cheese ball in the pretzel mixture until all sides are coated.

- With hand mixer, combine the cream cheese, sour cream, garlic powder, lemon juice, salt and pepper. Mix 1-2 minutes or until smooth and fluffy. Mix in shredded cheddar, pickles and fresh dill.
- Lay two long strips of plastic wrap in an ‘X’ shape on a flat surface. Spoon cream cheese mixture into the center. Bring up edges of plastic wrap, close at the top tightening to create the cream cheese ball shape. Transfer to refrigerator and chill at least 2 hours or until firm.
- Spread shredded/chopped cheddar, fresh dill and lemon zest in an even layer on a flat surface. Unwrap chilled cheese ball and roll onto toppings to coat. Gently press toppings into any non covered spots.
