GREEN BEAN AND KALE CAESAR SALAD



Green Bean and Kale Caesar Salad image

4 ounces crusty white bread, cut into 1/2-inch cubes (about 2 cups)
1/4 cup plus 1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper
2 pounds green beans, trimmed
4 anchovy fillets (packed in oil)
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 clove garlic, roughly chopped
2 tablespoons grated parmesan cheese, plus more for topping
1 1/2 teaspoons dijon mustard
4 cups baby kale
2 tablespoons salted roasted pepitas

Steps:

  • Preheat the oven to 400˚. Toss the bread pieces on a baking sheet with 1 tablespoon olive oil, a pinch of salt and a few grinds of pepper. Roast, tossing halfway through, until browned and crisp, 15 to 20 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Fill a large bowl with ice water. Add the green beans to the boiling water and cook until bright green and just tender, 4 to 6 minutes. Drain and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
  • Make the dressing: Puree the anchovies, vinegar, lemon juice, garlic, parmesan and mustard in a blender, scraping down the sides with a rubber spatula, until smooth. With the machine running, slowly drizzle in the remaining ¼ cup olive oil and blend until combined. Season with salt and pepper.
  • Combine the green beans, kale and half each of the croutons and pepitas in a large bowl. Add the dressing and toss to coat; season with salt and pepper. Transfer to a serving dish and top with the remaining croutons and pepitas; sprinkle with more parmesan.

1 (14 ounce) package mixed green and yellow beans (baby green & yellow beans from freezer section)
1/4 cup caesar salad dressing
1/2 cup shredded parmesan cheese
1 cup seasoned croutons

Steps:

  • Preheat oven to 350 degrees.
  • Place frozen beans in a saucepan and cover with water.
  • Place on stove top and bring to a boil. Boil for 3 minutes. Drain.
  • In a large bowl, combine cooked beans, salad dressing, and cheese.
  • Place mixture into a greased casserole.
  • Bake at 350 degrees for 15 minutes.
  • Top with croutons and serve.

1/2 lb fresh green beans (or frozen)
2 tablespoons salad oil
1 tablespoon vinegar
1 tablespoon instant minced onion
1/4 teaspoon salt
1 clove garlic, crushed
1/8 teaspoon pepper
2 tablespoons dry breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon melted butter

Steps:

  • Prepare and cook green beans until tender (10-15 mins) If using frozen, follow cooking directions.
  • Toss green beans with all ingredients except bread crumbs, cheese and butter.
  • Put in 1 1/2 qt ungreased casserole dish.
  • Mix bread crumbs, butter and cheese.
  • Sprinkle over green bean mixture.
  • Sprinkle with paprika.
  • Bake uncovered at 350 degrees for 15-20 minutes or until heated through.

1 1/2 lbs fresh green beans or 2 (16 ounce) cans French style green beans, drained
2 tablespoons salad oil
1/2 tablespoon white vinegar
1 tablespoon instant minced onion
1/4 teaspoon salt
1 clove garlic, minced
1/8 teaspoon pepper
2 tablespoons dry breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • If using fresh beans, prepare and cook beans, cut into 1 inch pieces, until crisp tender.
  • Plunge quickly into icewater to stop cooking.
  • Drain.
  • Heat oven to 350 F.
  • Toss beans with salad oil, vinegar, onion, salt, garlic and pepper.
  • Pour into ungreased 1 qt casserole.
  • Stir together the bread crumbs, cheese and butter; sprinkle over the beans.
  • Bake uncovered about 30 minutes, or until heated through.

1 (10.75 ounce) can condensed cream of celery soup
½ cup sour cream
¾ cup shredded Cheddar cheese
½ cup chopped onion
1 pinch salt
1 (14.5 ounce) can French cut green beans, drained
1 (15.25 ounce) can whole kernel corn, drained
2 sleeves buttery round crackers, crushed
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • In a bowl, stir together the cream of celery soup, sour cream, Cheddar cheese, onion, and salt until well combined. Mix the green beans and corn together in the prepared dish, and spread the soup mixture over the vegetables. Place the crushed crackers in a bowl and stir in the butter. Spread the crumbs over the casserole.
  • Bake in the preheated oven until the casserole is bubbling and the crumb topping is golden brown, about 45 minutes.

Steps:

  • Heat water to boiling in 2-quart saucepan. Add beans. Heat to boiling. Boil uncovered 5 minutes. Cover and boil 2 to 5 minutes longer or until crisp-tender; drain. Toss with dressing.
  • Place beans in serving bowl. Sprinkle with cranberries.
