This slow cooker beef ragu has a delicious sauce that has chunky vegetables such as carrots and celery. As with any ragu, it goes perfect with a serving of pappardelle pasta.

1 kg (2.2 lb) chuck beef or similar
1 onion, diced
2 tsp garlic, crushed
2 carrots, diced
2 celery stalks, diced
1 tsp sugar
1 tsp fennel seeds
2 tsp thyme, dried
2 bay leaves
½ cup red wine
3 Tbsp tomato paste
800 g (1.8 lb) crushed tomatoes
½ cup beef stock
500 g (1.1 lb) pappardelle pasta, cooked (To serve with)

Steps:

  • Season the beef with salt and pepper.
  • In a frying pan over high heat, brown the beef on all sides. Once browned, put to the side.
  • Deglaze the pan with the red wine, then transfer to a slow cooker.
  • Next, in the slow cooker, add the beef, onion, garlic, carrots, celery, sugar, fennel seeds, thyme, bay leaves, tomato paste, crushed tomatoes, and the beef stock.
  • Cook on low for 10 hours.
  • Remove the beef from the slow cooker and shred using two forks. Return the beef to the slow cooker once it has been shredded.
  • Turn the slow cooker to high and cook for 15 minutes.
  • Season with salt & pepper.
  • Serve & Enjoy.

1 medium yellow onion, diced small
3 garlic cloves, minced
6 tablespoons tomato paste
3 tablespoons chopped fresh oregano leaves (or 3 teaspoons dried)
1 beef chuck roast (4 pounds), halved
Coarse salt and ground pepper
1 to 2 tablespoons red-wine vinegar

Steps:

  • In a 5-to-6-quart slow cooker, combine onion, garlic, tomato paste, and oregano. Season roast with salt and pepper and place on top of onion mixture.
  • Add 2 cups water, cover, and cook on high until meat is tender and can easily be pulled apart with a fork, 4 1/2 hours (or 9 hours on low). Let cool 10 minutes, then shred meat in slow cooker with 2 forks and stir in vinegar to taste.

2 lbs lean ground beef
2 tablespoons olive oil, divided
1 large white onion, finely chopped
7 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons paprika
1 teaspoon salt
1 teaspoon cayenne
1 teaspoon oregano (dry)
3 garlic cloves, minced
2 beef bouillon cubes
2 cups water
4 cups v 8 vegetable juice
2 (15 ounce) cans chili beans, undrained

Steps:

  • Brown ground meat in 1 Tbsp of the olive oil over medium to high heat. Drain.
  • Add 1 Tbsp of the olive oil to the bottom of the crock pot set on high heat.
  • Add chopped onions and minced garlic to oil in crockpot.
  • Add browned, drained ground meat.
  • Add all of the rest of the ingredients, EXCEPT beans.
  • Cook on low for 4-6 hours; then stir in chili beans.
  • Cook for another hour on low.
  • Serve w/corn chips, sour cream, chopped onion, shredded colby cheese, and sliced jalapenos if desired.
  • Pass the Tabasco if some like it hotter.
  • Enjoy!

Baking a chocolate babka is no casual undertaking. The Eastern European yeast-risen coffee cake has 14 steps and takes all day to make. But the results are worth every sugarcoated second - with a moist, deeply flavored brioche-like cake wrapped around a dark fudge filling, then topped with cocoa streusel crumbs. If you want to save yourself a little work and love Nutella, you can substitute 1 1/2 cup (420 grams) of it for the homemade fudge filling. Also note that you can make this over a few days instead of all at once. Babka freezes well for up to 3 months, so if you need only one loaf now, freeze the other for later.

1 teaspoon vanilla extract
1 teaspoon grated lemon zest (optional)

4 large eggs, at room temperature, lightly beaten
10 tablespoons/140 grams unsalted butter, at room temperature, plus more for greasing bowls and pans
1/2 cup/100 grams granulated sugar
3/4 cup/177 milliliters heavy cream or half-and-half

Steps:

  • Prepare the dough: In a small saucepan or a bowl in the microwave, warm the milk until it's lukewarm but not hot (about 110 degrees). Add yeast and a pinch of sugar and let sit for 5 to 10 minutes, until slightly foamy.
  • In an electric mixer fitted with the dough hook, or in a food processor, mix together flour, 1/3 cup sugar, the salt, the vanilla, the lemon zest (if using) and the nutmeg. (If you don't have a mixer or processor, use a large bowl and a wooden spoon.) Beat or process in the yeast mixture and eggs until the dough comes together in a soft mass, about 2 minutes. If the dough sticks to the side of the bowl and doesn't come together, add a tablespoon more flour at a time until it does, beating very well in between additions.
  • Add half the butter and beat or pulse until the dough is smooth and elastic, 3 to 5 minutes, scraping down the sides of the bowl with a spatula as needed. Beat in the rest of the butter and continue to beat or pulse until the dough is smooth and stretchy, another 5 to 7 minutes. Again, if the dough sticks to the sides of the bowl, add additional flour, 1 tablespoon at a time.
  • Butter a clean bowl, form the dough into a ball and roll it around in the bowl so all sides are buttered. Cover the bowl with a clean towel and let it rise in a warm, draft-free place (inside of a turned-off oven with the oven light on is good) until it puffs and rises, about 1 to 2 hours. It may not double in bulk but it should rise.
  • Press the dough down with your hands, re-cover the bowl and refrigerate overnight (or, in a pinch, for at least 4 hours, but the flavor won't be as developed).
  • Prepare the filling: In a medium saucepan over medium heat, combine sugar, cream and salt. Simmer, stirring occasionally, until sugar completely dissolves, about 5 minutes. Scrape mixture into a bowl. Stir in chocolate, butter and vanilla until smooth. Let cool to room temperature. Filling can be made up to a week ahead and stored, covered, in the fridge. Let come to room temperature before using.
  • Prepare the streusel: In a bowl, stir together flour, sugar, cocoa powder and salt. Stir in melted butter until it is evenly distributed and forms large, moist crumbs. Stir in the chocolate chips. Streusel can be prepared up to 3 days ahead and stored, covered, in the fridge.
  • Prepare the syrup: In a small saucepan, combine sugar and 2/3 cup/158 milliliters water. Bring to a simmer over medium heat, then simmer for 2 minutes, stirring occasionally until the sugar dissolves.
  • Butter two 9-inch loaf pans, then line with parchment paper, leaving 2 inches of paper hanging over on the sides to use as handles later.
  • Remove dough from refrigerator and divide in half. On a floured surface, roll one piece into a 9-by-17-inch rectangle. Spread with half the filling (there's no need to leave a border). Starting with a long side, roll into a tight coil. Transfer the coil onto a dish towel or piece of plastic wrap and stick it in the freezer for 10 minutes. Repeat with the other piece of dough.
  • Slice one of the dough coils in half lengthwise to expose the filling. Twist the halves together as if you were braiding them, then fold the braid in half so it's about 9 inches long. Place into a prepared pan, letting it curl around itself if it's a little too long for the pan. Cover loosely with a clean kitchen towel and let rise in a warm place for 1 to 1 1/2 hours, until puffy (it won't quite double). Alternatively, you can cover the pans with plastic wrap and let them rise in the refrigerator overnight; bring them back to room temperature for an hour before baking.
  • When you're ready to bake, heat the oven to 350 degrees. Use your fingers to clump streusel together and scatter all over the tops of the cakes. Transfer to oven and bake until a tester goes into the cakes without any rubbery resistance and comes out clean, 40 to 50 minutes. The cakes will also sound hollow if you unmold them and tap on the bottom. An instant-read thermometer will read between 185 and 210 degrees.
  • As soon as the cakes come out of the oven, use a skewer or paring knife to pierce them all over going all the way to the bottom of the cakes, and then pour the syrup on top of the cakes, making sure to use half the syrup for each cake.
  • Transfer to a wire rack to cool completely before serving.

1 large onion, chopped
2 garlic cloves, finely chopped
2 (15 ounce) cans red kidney beans, drained and rinsed
1 (26 ounce) jar pasta sauce
2 tablespoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
grated cheddar cheese (to garnish)

Steps:

  • Brown meat, onion, and garlic in a large skillet.
  • Stir in remaining ingredients. Simmer uncovered for 20 minutes, stirring occasionally.
  • If desired, sprinkle with grated cheese before serving.

1 pound frozen puff pastry, defrosted 20 minutes at room temperature
4 quails, boned
1 1/2 teaspoons salt
Freshly ground white pepper to taste
12 ounces foie gras, of which is cut across in 8 slices, the rest cut into 2/3- inch cubes
1 1-ounce black truffle, sliced as thinly as possible, at least 12 slices
1 tablespoon unsalted butter
1 cup white wine
1/2 cup chicken stock
1/2 cup demi-glace (see note)
16 black figs, quartered

Steps:

  • Preheat the oven to 400 degrees. Cut 4 5-inch rounds from the pastry. Make a 3-inch circle in the center of each round, being careful not to cut to the bottom of the dough. Bake on a parchment-lined baking sheet for 22 minutes, or until puffed and golden. Carefully lift out the 3-inch round from the center to create a nest with a top. Set aside to cool.
  • Raise the oven to 450 degrees. Season the inside of the quails with 1/2 teaspoon of salt and a few grinds of pepper. Lay 1 slice of foie gras in each quail cavity followed by 3 truffle slices and top with the remaining foie gras. Truss the quails. Season the outsides with 1/2 teaspoon of salt and a few grinds of pepper. Melt the butter in an ovenproof skillet over high heat. Sear the quails, 20 to 30 seconds per side. Place the pan in the oven and roast for 10 minutes. Turn the quails and roast for 5 minutes more. Remove and keep warm in a covered dish.
  • Place the skillet over high heat on top of the stove. Pour in the wine and bring to a boil, scraping up any browned bits on the bottom of the pan with a wooden spoon. Simmer for 1 minute. Pour in the stock and demi-glace and simmer for 3 minutes. Stir in the figs and simmer for 1 minute. Stir in the 1/4- inch cubes of foie gras and simmer, stirring, for 1 to 2 minutes, until the sauce is reduced to 2/3 cup. Season with 1/4 teaspoon of salt and pepper to taste.
  • To serve, put each quail in a pastry nest. Drizzle with sauce, top with the pastry round and surround with the figs.

1/2 cup sugar
2-1/2 teaspoons quick-rise yeast
3/4 teaspoon salt
2/3 cup butter

3 large eggs plus 1 large egg yolk, room temperature, beaten
2 tablespoons grated orange zest
FILLING:
1/2 cup butter, cubed
5 ounces dark chocolate chips
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, mix 2 cups flour, sugar, yeast and salt. Cut in butter until crumbly. In a small saucepan, heat water to 120°-130°; stir into dry ingredients.
