- Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
- Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.
AWESOME PIZZA DOUGH
This is a very easy pizza dough. I found if you pre-heat your oven to 200 degrees, than turn off the oven when you put the dough in to rise. This will help the dough rise much faster than setting on top of your oven.

- 1. Put yeast, sugar and warm water in mixer with dough hook. Let stand for about 5 minutes until foamy. Once foaming, add olive oil and salt. Than add the flour, one cup at a time until dough starts to pull away from dough hook. Once completely mixed, turn out onto floured surface and knead for a few minutes.
- 2. Oil a heat proof bowl and place dough in the bowl, cover with a towel. Let rise until doubled, about an hour. To make the dough rise faster, put in a pre heated oven at 200 degrees. Turn oven off before you put the dough in.
- 3. Punch down dough and let rise again. About a half hour. Roll out and enjoy.

HONEY PIZZA DOUGH (AWESOME)
This is Wolfgang Puck's recipe, and we love it. If you don't have honey, just use sugar. We've found that this makes some of the best dough we've ever had.

- In a small bowl, dissolve the yeast and honey in 1/4-cup warm water (100-110 degrees).
- In a mixer fitted with a dough hook, combine the flour and the salt. (can do by hand with spoon if you don't have a mixer).
- Add the oil, the yeast mixture, and the remaining 3/4 C water, mix on low speed until dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes.
- If the dough is still sticky, then simply add a bit more flour until it pulls cleanly away from the hook.
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes.
- The dough should be smooth and firm. Place in lightly oiled bowl an cover with plastic wrap.
- Let sit for about 30-45 minutes. (When ready, the dough will stretch as it is lightly pulled).
- Take dough out of bowl and divide into either 2 or 4 balls, depending on whether you want 2 large pizzas or 4 small.
- Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times.
- Cover the dough with a damp towel (I just use plastic wrap, loosely fitted) and let rest 15 to 20 minutes.
- At this point, the balls can be used or wrapped in plastic and refrigerated for up to 2 days.
- To make pizzas, I stretch out onto greased pizza pan, top with sauce and toppings, and bake at 450 degrees for 12-16 minutes, until done. (smaller pizzas will take less time, so keep watching it)
- I usually slide the pizza off the pan for the remaining 2 minutes to crisp it up a bit.
AWESOME PIZZA CRUST
I have modified this recipe over the years and it turns out pretty awesome. My kids (who don't eat anything) love it. I sometimes add 2 tbsp. ground flax seed and that makes it even better. You can also use this recipe to make breadsticks.

- Mix yeast, warm water, honey and sugar in small bowl and set aside.
- Mix both flours, salt and spices (use a few shakes of whatever spices you like).
- Add olive oil to dry ingredients and then add the rest of the wet ingredients and mix together. Knead for several minutes until you have a ball.
- Spread a thin layer of honey over the dough and place in a bowl to rise.
- Let rise for about an hour (or less if you like, but I like it better when it has longer to rise).
- Roll out dough on floured surface and place on two greased pizza pans.
- Let rise again (about half hour, or until it's at your desired puffiness).

- Mix the flour salt and yeast together in a mixing bowl. Use a mixer or metal spoon and stir in the olive oil and water until the flour is all absorbed about 5 to 7 minutes. if you are having a sticking issue dip the spoon or your hand in cold water.
- Dust the counter top with flour and transfer the dough over to it. Nead it into a ball and then seperate into six pieces or less dipending on the size of the pizza you want. Take tupaware containers and spray with oil. Add dough to the containers and put in fridge to rise overnight.In the fridge it will keep for 3 days or you can freeze up to 3 months (make sure you cover in oil before freezing).
- On the day you plan to make the pizza remove the dough from the fridge 2 hours before cooking preheat oven to the highest temp it will go usually about 550F or higher.Toss or role the dough to your desired thickness I prefer thin and place on pan dusted with cornmeal. Add toppings ( remember less is more with a good pizza about 3 to 4 toppings plus cheese and sauce) and bake for 5-8 minutes. If top is done before bottom move pizza to a lower shelf and finish.
- Let the pizza rest a few minutes before cutting to let the cheese set alittle and enjoy!

PIZZA DOUGH
I searched, tweaked and perfected this awesome pizza crust. I really only use 4/5 of this recipe and use the other 1/5 for a small one. When freezing extra dough, I make 6 batches. My Bosch can mix 3 at a time - so, I just triple the recipe 2 times. I split all the dough into 5ths (which makes enough dough for 1 1/2 pizza's) and shape into balls. Wrap balls in plastic wrap and freeze. To thaw, place in fridge overnight. Let rise in large bowl (covered with a towel) on counter for about 2 hours then continue with step 3. Split dough into thirds. One third is for the half sized pizza and the other two thirds if for the regular sized pizza. WWPP - 3

- In a large mixing bowl (I use my Bosch), dissolve the yeast and brown sugar in the water, and let sit for 10 minutes. Add the salt and oil to the yeast solution, mix. Sift in most the flour - mixing while adding.
- When dough is well mixed, I turn up the speed and slowly add the last bit of flour (dough only slightly sticks when touched). Cover mixing bowl and let rise until double (usually about an hour).
- Mix one last time, remove from bowl and form into a ball. Allow the dough to relax for a minute before rolling out. Once on pan, lightly brush the middle (where ever the sauce will touch) with olive oil if using a tomato based pizza sauce.
- Allow dough to rise to desired thickness. Add sauce, a little bit of cheese, toppings and then a bit of cheese on top.
- Preheat oven to 425 degrees F (220 degrees C). Bake pizza until the cheese and crust are golden brown, about 16 to 18 minutes.
