POTATO BACON CASSEROLE
I came up with this recipe when unexpected company arrived and I didn't have enough lettuce and tomatoes on hand to make a traditional salad. Everyone enjoyed it so much that it became a regular at our table.

Steps:
- In a greased 8-in. square baking dish, layer half of the potatoes, onion, bacon and cheese. Repeat layers., In a small bowl, whisk the egg, milk and seasoned salt; pour over potato mixture. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until a knife inserted in the center comes out clean.

Steps:
- Place the diced potato into a small pot. Pour in enough cold water to cover potatoes. Cover with lid and bring to boil. Reduce to simmer for 5 minutes or until they barely are fork-tender. Drain and set aside. Wipeout pot with a paper towel and set aside.
- While potatoes simmer, render out bacon slices and brown. Remove to a paper towel and pour off excess grease. Saute onions in 1 tablespoon butter in the same pan until tender, 5-7 minutes. Remove from heat.
- Place small pot you cooked potatoes in over medium heat. Melt in 2 tablespoons butter. Sprinkle in flour and whisk to create a paste. Cook 1 minute. Whisk in milk. Increase heat to medium-high and continue whisking until sauce thickens. Reduce heat and stir in cream, cream cheese, salt, pepper, nutmeg, and 1/2 cup grated cheese. Stir until cheeses melt and sauce is smooth.
- Pour cooked potatoes, bacon, onions and sauce into a large bowl. Stir to coat. Pour entire contents of bowl into greased baking dish. Top with remaining 1/2 cup of cheese. Bake at 375 degrees for 20-30 minutes covered with foil. Place under broiler to brown the top if desired. Serve hot.

- Cut bacon into 1-inch slices and cook bacon. Drain bacon grease
- Preheat oven to 350
- In a large mixing bowl, combine potatoes, bacon, condensed cream of chicken soup, cheddar, sour cream, garlic powder and onion powder. Mix well.
- Pour into a 9x13 rectangular casserole dish. Drizzle melted butter onto dish
- Bake in oven for 1 hour
- Remove and cool for 15 minutes. Garnish with fresh parsley (optional).
- Serve and enjoy!

- Preheat oven or turbo broiler to 350-375 degrees F.
- Butter the bottom and sides of a glass or foil-baking dish.
- Line the bottom with potato slices.
- Season with salt and black pepper.
- Spread bacon slices and onion rings on top of potato layer.
- Dot area with Clara Olé Onion and Garlic Sauce then sprinkle grated cheese.
- Repeat the layers until the pan is full.
- Pour the heavy cream over the last layer then top with breadcrumbs.
- Cover with foil and bake for 1 - 1-½ hours, removing the cover at the last 15 minutes of baking to brown top.
- Serve as a siding to chicken, pork, beef or fish.

- Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
- Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups cheddar; cook and stir 1 min. or until melted. Stir in mustard.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch casserole dish.
- Poke a few holes into each potato using a toothpick.
- Bake potatoes in the preheated oven until fully cooked, about 1 hour. Cool for about 15 minutes.
- Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.

- Cook noodles according to package directions; drain. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 2 tablespoons drippings. , In the drippings, saute the green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the noodles. Add half of the bacon., Transfer to a greased 2-qt. baking dish. Top with cheese and remaining bacon.
