1 (3 lb) chicken, cut in pieces
1/4 cup oil
1/4 cup butter
1 cup flour
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder

Steps:

  • Wash chicken and soak in salt water for about 20 minutes.
  • I use a large bowl and 1 teaspoon of salt.
  • Preheat oven to 425°.
  • Place oil and butter in a shallow baking pan and set in the oven to heat and melt.
  • Combine the flour and seasonings and dredge the chicken in the flour mixture.
  • Remove hot pan from the oven and arrange the chicken in the pan skin side down,but do not crowd.
  • Place in the oven and bake for 30 minutes, turn chicken so that the skin side is up and continue baking for 20 to 30 minutes more, until nicely browned and juices run clear.
  • Remove onto a platter and let cool at least 10 minutes.

My grandmother sent me this community book from Thunderbay, it's pretty old, the dishes are amazing and very easy to fix. This was one of my grandmothers favourite dishes. I remember having this when we were little kids visiting her.

4 lbs chicken pieces or 4 lbs chicken breasts
6 cups dry bread cubes (diced bread)
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/4 teaspoons sage
2 tablespoons oil, vegetable
4 tablespoons onions, chopped
1/2 cup margarine, melted
1 (10 ounce) can cream of chicken soup
2 tablespoons flour
1 1/4 cups water, cold

Steps:

  • Add salt, pepper, sage and 1/2 cup of flour together.
  • Dip chicken in seasoned flour.
  • Brown all over in hot oil.
  • Dressing- Combine bread cubes, onion and melted margarine with 1/2 of the soup to bind.
  • In a roasting pan place the bread dressing on bottom of pan.
  • Add the chicken to the top of the dressing.
  • Mix 2 tbsp of flour to 1/2 can of chicken soup and add 1 1/2 cups of water (*you want 2 cups of liquid for gravy).
  • Pour over top of chicken and dressing.
  • Cover tightly and bake at 350 degrees for 1 hour.
  • Serve with mashed potatoes, carrotes, yellow beans and peas.

8 ounces taco sauce
1 egg
2 garlic cloves, minced
2 cups crushed corn flakes
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon oregano
1 dash ground cloves
crushed red pepper flakes (optional)
2 1/2 lbs chicken pieces (breasts, thigh, leg)
6 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • In a shallow dish, whisk together taco sauce, egg and garlic.
  • In a plastic or paper bag, combine cornflakes, chili powder, cumin, oregano, ground cloves and crushed red pepper if using.
  • Dip chicken pieces in sauce; toss in cornflakes mixture; place on a greased shallow baking pan.
  • Drizzle with butter; bake 45 minutes or until golden and tender, and juices run clear.

1 tablespoon minced fresh parsley
1 teaspoon garlic salt
1 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon ground cumin
1/4 teaspoon rubbed sage
2 large eggs
1 broiler/fryer chicken (3 to 4 pounds), cut up

Steps:

  • Preheat oven to 400°. Place a rack in a 15x10x1-in. baking pan; coat the rack with cooking spray., In a shallow bowl, mix the first seven ingredients. In a separate shallow bowl, whisk eggs. Dip chicken in eggs, then in cracker mixture, patting to help coating adhere. Place on prepared rack., Bake 20 minutes.
