Awesome Avocado and Mushroom Melt image

Fresh tomato, avocado, mushrooms and sprouts on grilled wheat bread topped with melted mozzarella! Deeelish! I had this at a local restaurant, it seemed so simple so I decided to try it at home. I make it at least once a week now it is my favorite, I'm not even a vegetarian. Do not saute' the mushrooms they are meant to eat fresh. It's AWSOME!

Number Of Ingredients 10

2 slices whole wheat bread
1 -2 slice mozzarella cheese
3 -5 button mushrooms, sliced
1/2 medium tomatoes, sliced
1/2 avocado, ripe and sliced
alfalfa sprout
mayonnaise
mustard
salt and pepper
butter or margarine

Steps:

  • Heat a large frying pan on medium.
  • Butter one side of each slice of bread, place buttered sides down in pan.
  • Add 1-2 slices of cheese to one slice of bread and top with mushrooms.
  • Cook until cheese is melted and bread is golden brown.
  • Take off heat add sliced avocado, sprouts and tomatoes.
  • Salt & pepper tomatoes.
  • Spread a little mayo and mustard on inside of other piece of bread and place on top of tomatoes.
  • Cut in half and ENJOY!

1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
3 tablespoons vegetable oil
1 tablespoon finely chopped shallots
1/4 pound fresh mushrooms, thinly sliced
2 firm, medium-size ripe avocados
2 tablespoons finely chopped parsley
Salt and freshly ground pepper to taste

Steps:

  • Combine mustard, vinegar, oil, shallots and salt and pepper, and blend thoroughly with a wire whisk in a salad bowl. Add the mushrooms and blend.
  • Peel the avocados, and cut them in halves. Remove and discard the pits. Cut avocados into 1-inch cubes.
  • Add the avocados and parsley to the salad bowl. Toss gently and blend.

2 small firm, ripe avocados
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoon red-wine vinegar
2 tablespoons Dijon mustard
1 tablespoon finely chopped garlic
2 tablespoons finely chopped parsley
1/3 pound mushrooms, thinly sliced
Salt and freshly ground pepper to taste

Steps:

  • Peel the avocados, and cut them in half. Remove and discard the pit. Cut the avocados into 1 1/2-inch lengths.
  • Thoroughly blend the oil, lemon juice, vinegar, mustard, garlic and parsley with a wire whisk in a salad bowl. Add the mushrooms, avocado and salt and pepper to taste. Toss well and serve.

  • Heat a 12-inch skillet over medium high heat with 1 tablespoon olive oil. Once the oil is shimmering, add the shallots and cook for 3-4 minutes until softened and beginning to brown.
  • Add the minced garlic and diced jalapeño pepper and cook for 1-2 minutes until the garlic is golden.
  • Pour in the remaining tablespoon of olive oil and then add the mushrooms and thyme sprigs. Allow the mushrooms to cook undisturbed for 3-4 minutes, then toss and cook for 2-3 minutes. Once you notice the mushrooms have begun to brown, season them generously with salt and pepper and continue cooking until they are completely browned.
  • Reduce the heat to low and pour in the coconut milk and stir to evenly combine. Remove the skillet from the heat and stir in the red wine vinegar. Taste the mushrooms for seasonings and adjust accordingly.
