2 ½ cups tomato-vegetable juice cocktail (such as V8®)
2 ½ cups vegetable broth
3 large tomatoes, diced
3 large avocados - peeled, pitted, and cut into bite-sized pieces
1 cup diced cucumber
1 (8 ounce) can chopped tomatoes with juice
½ cup chopped green bell pepper
½ cup chopped red bell pepper
¼ cup extra-virgin olive oil
3 green onions, thinly sliced
1 lemon, juiced, or more to taste
2 tablespoons minced fresh cilantro
2 tablespoons white wine vinegar
1 dash hot pepper sauce (such as Tabasco®), or to taste
salt and ground black pepper to taste

Steps:

  • Mix tomato-vegetable juice, vegetable broth, tomatoes, avocados, cucumber, canned tomatoes with juice, green bell pepper, red bell pepper, olive oil, green onions, lemon juice, cilantro, vinegar, hot pepper sauce, salt, and black pepper together in a large bowl. Cover and chill for at least 3 hours before serving to allow flavors to blend.

1 cup water
1 medium avocado, flesh of, reserving 1 tbls. for garnish
2 cups chopped cucumbers
1 1/2 cups chopped tomatoes
1/2-1 serrano chili, with seeds, sliced (optional)
1 large garlic clove, minced
1 sprig mint leaf
2 lemons, juice of or 2 limes, juice of
1/2 teaspoon salt
1 teaspoon maple syrup (can use dates or honey to sweeten)
2 small mint leaves
paprika (optional)

Steps:

  • Combine all of the ingredients in a blender in the order listed.
  • Start blender on low speed for a few seconds, then switch to high; blend until creamy and smooth, about 1 1/2 minutes.
  • Pour into 2 soup bowls.
  • Dice reserved avocado and gently drop them into the center of the bowl.
  • Add a mint leaf and sprinkle diced avocado with paprika if desired.
  • Enjoy!

5 pounds medium tomatoes, shallow X cut in skin on side opposite stem
3 cups low-salt chicken broth
3/4 cup finely chopped red onion
2/3 cup fresh lime juice
6 garlic cloves, finely chopped
2 tablespoons chopped fresh Italian parsley
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh cilantro
2 medium Haas avocados (about 1 pound), peeled, seeded, diced
2 serrano chiles, stemmed, seeded, deveined, minced
2 tablespoons (about) cold water
4 tablespoons extra-virgin olive oil

Steps:

  • Bring large saucepan of water to boil. Drop in 3 tomatoes; cook 30 seconds. Using slotted spoon, transfer tomatoes to plate. Repeat. When cool, peel tomatoes starting at X. Cut tomatoes in half horizontally; squeeze out seeds and juice. Place tomatoes in processor. Using on/off turns, chop to coarse puree. Transfer puree to strainer; let drain 30 minutes, stirring often.
  • Combine tomato puree, chicken broth, onion, 1/3 cup lime juice, garlic, parsley, chives, and cilantro in large bowl. Season gazpacho with salt and pepper. Chill 2 hours or up to 1 day.
  • Blend avocados, chiles, 2 tablespoons water, and 1/3 cup lime juice in processor until smooth. Season with salt; add more water to thin if desired.
  • Ladle gazpacho into bowls. Top with avocado puree, then drizzle of oil.

3 ripe avocados, pitted
3/4 cup sugar
1 cup sour cream
1/2 cup heavy cream
1 tablespoon lime juice
1 pinch salt

Steps:

  • Remove pit from avocados. Score avocado and put flesh in blender. Add all ingredients and blend until smooth. Place mixture in ice cream machine and mix until ice cream consistancy (about 15 minutes). Remove and enjoy!
  • Note: For soft ice cream enjoy right away. For a firmer texture place in freezer for a few hours.

1 large ripe avocado, about 6 or 7 ounces
1 1/2 pounds ripe tomatoes, cored and peeled
2 to 4 garlic cloves, to taste
2 heaped tablespoons coarsely chopped red or white onion, soaked for five minutes in cold water, drained and rinsed
2 tablespoons extra virgin olive oil
1 to 2 tablespoons sherry vinegar or wine vinegar (to taste)
1/2 to 1 teaspoon sweet paprika (to taste)
1/2 to 1 cup ice water, depending on how thick you want your soup to be
Salt
freshly ground pepper
1/2 cup finely chopped cucumber (more to taste)
1/2 cup finely chopped tomato (more to taste)
1/4 cup chopped fresh basil or parsley, or fresh basil or parsley leaves
1/2 cup finely chopped green pepper
1/2 cup small croutons
1 hard-boiled egg, finely chopped

Steps:

  • Combine the avocado, tomatoes, garlic, onion, olive oil, vinegar, paprika and salt in a blender, and blend until smooth. Taste and adjust seasonings. Pour into a bowl or pitcher, thin out as desired with ice water, cover and chill for several hours.
  • Meanwhile, prepare the garnishes, if using. Place them in small bowls on a platter. Serve it in bowls, and pass the tray of garnishes.

2 ripe soft avocados (about 1/2 lb. each)
1/2 cup sour cream
3 tablespoons lime juice
2/3 cup sugar
1/2 teaspoon salt
1 fresh jalapeno pepper, seeded, veined, and roughly chopped (optional)
1 cup light cream
3 cups tomato juice
2 tablespoons red wine vinegar
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon chili sauce
1 cup vegetable broth
1 cup minced celery
2 tablespoons minced onions
1 teaspoon minced garlic
1 small cucumber, peeled, seeded, and finely chopped
1 small green bell pepper, seeded and finely chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • To make the ice cream: peel and pit the avocados; roughly chop them and place in a food processor along with the sour cream, lime juice, sugar, salt, and jalapeno.
  • Process until smooth; transfer mixture to a medium mixing bowl; stir in the cream.
  • Cover and refrigerate until well chilled.
  • Stir the chilled mixture; then freeze in an ice cream maker by following the manufacturer's directions.
  • When finished, transfer the soft ice cream to a freezer-safe container; freeze several hours or until firm.
  • To make the Gazpacho: Combine all the Gazpacho ingredients in a bowl; stir to mix well.
  • Cover and refrigerate at least 6 hours (soup can be made up to 3 days in advance).
  • To serve: place 1 scoop of ice cream in a chilled bowl of gazpacho.
