AUSTRIAN APPLE TWISTS

This recipe has been one of my favorites for years. I like to make these sweet treats for special occasions because everyone enjoys them. -Kathy Bless, Fayetteville, Pennsylvania

Yield 64 twists.

Number Of Ingredients 14

1 package (1/4 ounce) active dry yeast
3 cups all-purpose flour
1 cup butter, softened
3 large egg yolks, beaten
1 cup sour cream
1/2 cup sugar
1/2 cup finely chopped pecans
3/4 teaspoon ground cinnamon
1 medium tart apple, peeled and finely chopped
ICING:
1 cup confectioners' sugar
4 teaspoons whole milk
1/4 teaspoon vanilla extract
Finely chopped pecans

Steps:

  • In a large bowl, combine the yeast and flour; add butter and mix well. Add egg yolks and sour cream; mix well. Shape into four balls. Place in separate resealable plastic bags or wrap in plastic; refrigerate overnight. , Combine sugar, pecans and cinnamon; set aside. On a floured surface, roll each ball of dough into a 9-in. circle. Sprinkle with sugar mixture and apple. Cut each circle into 16 wedges; roll up from wide edge and pinch to seal. Place with point side down on greased baking sheets. , Bake at 350° for 16-20 minutes or until lightly browned. Immediately remove to wire racks to cool. For icing, combine sugar, milk and vanilla until smooth; drizzle over the twists. Sprinkle with pecans.

Soft and tender Apple Muffins covered in cinnamon sugar.

Number Of Ingredients 12

350 grams (2 and 1/2 cups) plain flour or all purpose flour
3 level teaspoons baking powder
200 grams (1 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
2 small red apples (approximately 2 cups), roughly chopped
120 ml (1/2 cup) vegetable oil
1 teaspoon vanilla extract
2 large eggs
240 ml (1 cup) buttermilk*
1 tablespoon butter, melted
1 teaspoon cinnamon
1 and 1/2 tablespoons caster sugar or granulated sugar

Steps:

  • Preheat the oven to 200 C (390 F) standard / 180 C (350 F) fan-forced. Grease a 12-hole muffin pan well with butter or olive oil spray or line with cupcake liners.
  • In a large mixing bowl, add flour, baking powder, sugar and cinnamon and whisk briefly. Add chopped apples. Stir just to cover the apple pieces in the flour mixture.
  • To a small bowl, add oil, vanilla and eggs whisk briefly just to break up the egg yolks. Make a well in the middle of your dry ingredients, add the wet ingredients, along with the buttermilk.
  • Very gently fold until the mixture is just combined - be careful not to over mix or your muffins will be tough.
  • Spoon out the mixture into your prepared tin. Depending on how much apple you added, you might be able to squeeze 14 muffins out of this batch.
  • Bake for 5 minutes before turning down the heat to 180 C (350 F) standard / 160 C (320 F) fan-forced and bake for a further 13-15 minutes or golden brown on top and a skewer inserted into the middle comes out clean.
  • While the muffins are still warm, brush the tops with melted butter. In a small bowl, mix together the sugar and cinnamon, then generously sprinkle over each muffin.

1-3/4 cups packed brown sugar
2 eggs
1-1/3 cups buttermilk
2-2/3 cups all-purpose flour

1 teaspoon baking soda
1/8 teaspoon salt
2 cups chopped peeled apples
1 medium apple, peeled and cut into 24 slices
TOPPING:
1/3 cup all-purpose flour
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in the buttermilk. Combine the flour, cinnamon, baking soda and salt; add to butter mixture just until moistened. Fold in chopped apples. , Fill paper-lined muffin cups three-fourths full. Place sliced apples over batter. For topping, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over tops., Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

¼ cup white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
  • Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.

1/2 teaspoon vanilla
1 cup oil or 1/2 cup oil and 1/2 cup applesauce
2 cups flour
1 teaspoon cinnamon (I like more)
1/4 nutmeg
1 teaspoon baking soda
4 -6 apples, peeled and diced
1/2 cup walnuts

Steps:

  • Preheat to 350 degrees.
  • Beat eggs 1 minute. Add sugar, vanilla and oil. Sit together the rest of the dry ingredients then gently stir in the rest of the dry ingredients. Don't over mix. Fold in apples and nuts and put in "lined" muffin tin.
  • Bake 30 to 35 minutes, check for doneness at 25.

This recipe will work with cup measures regardless of which country you are in, with the exception of Japan - please use weights provided.

2 level cups apple pieces (peeled) (, 0.7 cm / 1/3" cubes (2 large apples, I use red))
1 tbsp melted butter (, for muffin tim (or use paper liners))
115g / 0.5 cup unsalted butter (, melted (1 stick))
1 cup (200g) brown sugar (, packed)
2/3 cup (165 ml) milk ((low fat, full fat, non dairy also fine))
1 large egg ((approx 60g / 2 oz))
1 tsp white vinegar ((or any other clear vinegar))
2 cups (300g) wholemeal flour ((wholewheat flour)(white also ok, Note 1))
1 tsp baking soda (bi carb) ((NOT baking powder))
1 tsp cinnamon powder
Pinch salt
2 tbsp raw sugar ((demerara sugar - large granules))

Steps:

  • Preheat oven to 200C/390F.
  • Brush a 12 hole, standard muffin tin with melted butter, or line with paper cases. (Note 3)
  • Place butter and brown sugar in a bowl, whisk to combine.
  • Add milk, then egg and vinegar. Whisk to combine.
  • Scatter flour across batter surface, followed by baking soda, cinnamon and salt. Whisk 10 times until the flour is incorporated - some lumps is fine.
  • Stir through apple -minimum stirs just to disperse.
  • Scoop batter into muffin tin - I use an ice cream scoop - filling it all the way to the top. If using a scooper, leave it the slight ball shape (see video) - don't smooth the top. You should get 12 (see Note 3).
  • Sprinkle with sugar (if using - makes surface slightly crispy), place muffins in the oven.
  • Immediately turn down to 180C/350F.
  • Bake for 20 minutes (standard) or 18 minutes (fan / convection) , or until a skewer comes out clean.
  • Rest in the muffin tin for 5 minutes then transfer to a rack to cool.
  • Once fully cooled, store in an airtight container - it will stay moist for up to 5 days. These also freeze very well.
