Decadent thick and delicious hot fudge sauce. Simple to make and so much better than store-bought!

1 cup butter
⅓ cup unsweetened cocoa powder
3 cups white sugar
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract

Steps:

  • Combine butter, cocoa, sugar and evaporated milk in a saucepan over medium heat. Bring to a boil and boil for 7 minutes. Remove from heat; stir in vanilla. Carefully pour hot mixture into a blender and blend for 2 to 4 minutes. Serve immediately. Store in refrigerator.

1sm can(s) green chiles, diced
4-5 large tomatoes, chopped
1 small green pepper, chopped
2 jalapeno peppers, sliced and chopped
1 medium purple onion, chopped
3 Tbsp olive oil
3 Tbsp lime juice
1 1/2 Tbsp vinegar
1 Tbsp minced garlic
1/2 c cilantro, chopped
4oz can(s) chopped black olives (optional)
salt and pepper, to taste
tabasco, to taste

Steps:

  • 1. Mix all ingredients together and chill for several hours. Serve with chips!

AUNT SUE'S TACO SALAD

My Aunt Sue (also a Michigander) used to make this at her cabin by the lake for summertime parties. A bit of an indulgence for me, but oh so delicious!

1 head lettuce, cut up
0.5 (1 1/4 ounce) package taco seasoning
2 tomatoes, chopped
1 (8 ounce) package fat-free cheddar cheese, shredded
1 lb ground turkey
1 onion, chopped
1 (18 ounce) bottle fat-free thousand island salad dressing (or Catalina, if you prefer)
1 (15 ounce) can kidney beans, drained (can be omitted)
4 cups nacho cheese flavor Doritos, broken up

Steps:

  • Brown turkey and onions, drain and rinse. Return to pan and stir in taco seasonings. Refrigerate.
  • Mix together remaining ingredients, add meat mix.
  • Add Doritos and dressing when ready to serve (otherwise it will get soggy).

AUNT CONNIE'S GARDEN FRESH SALSA (FOR CANNING)

If you are looking for a restaurant style salsa for canning give this one a try. You can always start with a half batch to test it out. I use my food processor to chop everything up pretty fine (except the tomatoes)

Number Of Ingredients 11

4 quarts of peeled and drained tomatoes (I don't drain them because we like our salsa runny)
3 -4 cups chopped green bell peppers
3 -4 cups chopped yellow and red bell peppers
4 jalapenos, seeded and chopped (we don't seed ours or take the membranes out because that is where the kick is)
3 cups chopped white onions
4 garlic cloves, minced
2 (12 ounce) cans tomato paste
2 cups of store bought lemon juice (it must be store bought)
1 tablespoon canning salt or 1 tablespoon sea salt
1 tablespoon sugar
1 teaspoon black pepper

Steps:

  • Put all ingredients in a very large pot and simmer for 30 minutes. Meanwhile wash jars, lids and rings. Get your hot water bath pot going. Put the jars in the the hot water pot for 10 minutes prior to the salsa being done. In a small pan put the lids in water and warm them, but do not boil them. Take the jars out of the hot water and place the jars on the counter, fill with hot salsa, wipe rims, put lids on, rings on (just finger tip tight) and then hot water bath the jars for 20 minutes. Take out and set on towel and leave undisturbed for 24 hours. After 24 hours check that all the jars sealed. Take off rings wipe down jars and then put rings back on and store in a cool dry place until ready to enjoy. Should yield approx 10-15 pint jars. You should have a little left and you can put that in a bowl and eat it right away or just put it in the fridge and eat it in the next few days. If a jar does not seal just put it in the fridge and eat that one first.
  • Happy Salsa making!
  • Note: To peel the tomatoes drop them whole in boiling water let sit for 1 minute, transfer to bowl of ice water, core and peel. Also, if you don't like the consistency after you've cooked all ingredients for 30 minutes you can continue to cook and it will get thicker. Use your jalapenos to adjust the heat we added 6 this last batch we made and it was nice and hot.

1 can no-bean chili (or bean if you like)
10 ounces shredded cheese (any kind)

Steps:

  • Grease a 9" square pan.
  • With your hands, spread softened cream cheese in pan.
  • Spread chili on top with hands or spoon.
  • Sprinkle cheese on top.
  • Bake at 350 for 25 minutes or until hot.
  • Can do in microwave in glass square pan.
  • Cook on high for about 7 minutes.

5 roma tomatoes
1 small onion
2 garlic cloves
1/4 cup cilantro
3 -6 serrano peppers
8 ounces tomato sauce
1/2 tablespoon fajita seasoning mix (Fiesta Brand is best)

Steps:

  • Cut the tops off of the Roma tomatoes, blend in food processor until they are like a chunky soup.
  • add chopped onion, garlic cloves and handful of chopped cilantro.
  • cut tops off of Serano peppers and add to food processor.
  • mix all together.
  • add 8 oz can of tomato sauce.
  • season generously with fajita seasoning.
  • salt and pepper to taste.

This is my aunt-in-law's recipe. It was my first attempt at salsa. I have made 4 batches to date. Each one hotter than the last. Have even sold a jar to my boss.

10 cups vegetables (I used carrots, celery, zucchini, corn)
3 cups onions
3 green peppers
10 jalapenos
2 habaneros
5 tablespoons pickling salt
2 teaspoons dry mustard
1 teaspoon turmeric
1 1/2 cups brown sugar
2 cups vinegar
1 tablespoon flour
3 garlic cloves (or more if you like)
5 cups chopped tomatoes
2 (5 1/2 ounce) cans tomato paste

Steps:

  • Chop vegetables to desired size, some like chunky salsa. Sprinkle with pickling salt and let sit covered over night. In morning drain off liquid, press to remove excess. Do not add tomatoes yet.
  • In separate bowl: Mix spices, garlic and tomato paste together.
  • Add sauce and tomatoes to vegetables and stir well. Cook in roaster for 1 hour at 350°. Stirring occasionally.
  • Pour in sterilized jars and process in canner. Makes about 7 pints.
  • I have added more tomatoes without a problem. Less or more peppers too. Chop veggies depending on size you want. Peeling zucchini is better as skin tends to be tough.
