PRALENE YAMS

Steps:
- In large mixing bowl mash potatoes until smooth
- Add orange juice, salt, pepper, ginger, 1/2 butter, 1/3 cup brown sugarand egg yolks
- Blend till light and fluffy
- Grease a 9x13 pan (can use glass or tin)
- Pour in mixture until smooth on top
- Topping for yams: mix the remaing brown sugar, 1 stick butter, pecans and cinnamon spread evenly over yams
- Bake at 350 degrees for 45-50 minutes
- Let stand for 10 minutes before serving
ORANGE PRALINE YAMS (TNT)
I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

- 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Thanks to the Shefters, my family, friends and classes have been loving it ever since. The yams are fluffy and creamy, and the praline topping is sweet, nutty, crunchy, and beautifully glazed. If you want more of this delectable casserole, double the recipe but make it in two separate casseroles so that the proportions of the filling to the topping remains correct. AUNT PHYLLIS' CLAM CASSEROLE

Steps:
- Saute first 4 ingredients in a large skillet, simmering for a few minutes.
- Combine and add the next 7 ingredients and then add the stuffing slowly until you have an oatmeal consistency.
- Place in a casserole dish and sprinkle with Parmesan cheese.
- Bake at 325 degrees F. for 20-30 minutes.
SOUTHERN YAMS WITH ORANGES
This is one of my favorite ways to make yams. prep time includes the baking of the potatoes and the time to cool them.

Steps:
- Preheat oven to 375°F.
- Peel and slice the cooked potatoes very thin and place one layer in butter baking dish. top with a layer of orange slices, dot with butter, and sprinkle with sugar. Continue layering until you have 3 layers, ending with potatoes, butter, and then sugar.
- Mix the orange juice and lemon juice together; pour over and bake 1-1/2 hours.

PRALINE YAMS
I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

- Heat oven to 350 degrees.
- Place drained yams in an ungreased 1/2 quart casserole or baking dish.
- In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
- Bake at 350 for 35 to 40 minutes or until bubbly.
PRALINE YAMS
I cut this recipe out of the Denver Rocky Mountain News Food Section 30-some years ago. I've made it every Thanksgiving and Christmas since. It's quick and simple to prepare (right on the stove), and a nice addition to a big dinner.

Steps:
- Heat yams, in their liquid, till hot.
- Keep hot on low heat while you mix up Praline sauce.
- Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
- Stir over medium heat till mixture comes to a gentle boil.
- Keep hot on low burner while you drain liquid off yams.
- Place yams in serving bowl.
- Pour hot Praline sauce over yams.
- Serve and enjoy!

- Place in ungreased 2 quart casserole dish.
- Mix togehter brown sugar, flour, and butter. Sprinkle on top of yams.
- Top with marshmellows.
- Bake at 350 for 35-40 minutes.
