AUNT CORA'S NUT BREAD
Cora was my Mother's aunt, and my Grandmother baked it for us. Supposedly Aunt Cora came up with this to deal with rationing and shortages and it was so good, they kept making it. Happily, this is one of the few of that generation's recipes that was written down. It's wonderful sliced very thin and spread with sweet butter or cream cheese. Cooking time includes 20 minutes for the dough to sit, one hour baking and ten minutes cooling.

Steps:
- Cream together the egg and sugar.
- Sift together the flour, salt and baking powder, and add alternately to the egg/butter mixture with the milk.
- The batter will be very stiff.
- Lastly, mix in the nuts and raisins.
- Preheat oven to 375°F.
- Place batter in two buttered loaf pans.
- Give pans a good thump to make sure batter has settled.
- Let stand twenty minutes before putting in the oven.
- Bake for about one hour, or until tester comes out clean and top is lightly browned.
- Cool on rack.
- Note: I generally use walnuts, but pecans would work also. My grandmother chopped her walnuts in a little metal hand - cranked chopper that fed the nuts into a glass jar. The nuts were relatively finely chopped, but still a textural presence in the bread.

SLOVAK NUT BREAD
At my home church in Massillon, Ohio, the women of the church raise money for the church by selling this bread. I do not know if this is the recipe they use, but it is close.

Steps:
- Mix flour, salt, and soda.
- Add egg yolks and sour cream to the flour mixture.
- Cut the dough like pie dough.
- Form the dough into four balls and refrigerate them over night.
- The next day, roll the dough with a rolling pin.
- Mix the nut filling ingredients.
- Spread, thinly on the dough.
- Roll the dough like a jelly roll.
- Brush the dough with an egg white bath.
- Place the dough on an ungreased cookie sheet.
- Bake at 350 deg. for 25 minutes.

- Cream margarine, gradually adding the sugar; mix well.
- Beat in eggs one at a time.
- Mix flour, cinnamon, baking soda, baking powder, and salt together. Add to the creamed mixture alternately with the sour cream.
- Stir in the nuts.
- Bake in a greased loaf pan at 350 for 55-60 minutes.
- Turn out onto a wire rack to cool.

Steps:
- Dissolve yeast in warm water in a bowl according to package instructions. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- While yeast softens, combine sugar, 1/2 cup plus 1 1/2 tablespoons shortening, butter, egg yolks, egg, vanilla-butternut flavoring, nutmeg, and salt in a mixing bowl. Beat using an electric mixer until creamy and thoroughly combined.
- Combine flour, milk, and yeast mixture in a separate bowl; mix into egg mixture until well combined and a dough forms. Set aside to rise in a warm area until doubled in size, about 1 hour.
- Knead risen dough down gently; cut into 4 equal pieces. Set the pieces aside and let rise for an additional 20 minutes.
- While rolls rise, beat egg whites using an electric mixer in a mixing bowl until stiff. Add pecans, sugar, honey, and vanilla extract; beat to combine.
- Roll out each piece of dough using a lightly floured rolling pin on a lightly floured work surface, to approximately 13x18-inch rectangles, 1/4-inch thick.
- Spread pecan mixture approximately 1/4-inch thick onto the dough. Roll up dough, beginning from the side. Place rolls 2 1/2-inches apart on a rimmed baking sheet.
- Bake in the preheated oven until golden, about 45 minutes.

HUNGARIAN NUT ROLLS
It isn't officially the holidays until I've made this treasured nut roll recipe from my husband's grandmother. The apple-walnut filling is moist, subtly sweet and flavorful. -Donna Bardocz, Howell, Michigan

- In a large bowl, dissolve yeast in warm milk. Add the sugar, salt, butter, sour cream, eggs and 3 cups flour. Beat on medium speed for until smooth, 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a large saucepan, combine the sugar, butter, egg and cinnamon. Cook and stir over medium heat until mixture is thick enough to coat the back of a spoon. Remove from the heat; gently stir in walnuts and apple. Cool completely., Punch dough down. Turn onto a lightly floured surface; divide into 4 portions. Roll each into a 12x10-in. rectangle. Spread filling to within 1/2 in. of edges. KALACS (HUNGARIAN CINNAMON SWIRL BREAD)
My husband's aunt passed along this super-easy recipe for this Hungarian sweet bread, and I made a couple of revisions to my family's taste. Cinnamon, poppy seed, or walnuts are a traditional filling. Her recipe is for cinnamon, but one of my favorite ways is to break from tradition and use a cocoa/sugar/butter/vanilla mixture. It's delicious, especially when the leftovers are toasted and buttered!

- Place flour, white sugar, salt, and yeast into the bowl of a stand mixer. In a bowl, whisk together egg, melted butter, warm milk, and vanilla extract; pour into the flour mixture. Using dough hook attachment, mix on low until the flour is moistened and a dough forms, then increase speed to medium, and continue kneading until smooth and elastic, 4 to 5 minutes.
- Place dough into a greased bowl, cover, and allow to rise in a warm place until doubled in bulk, about 1 1/2 hours.
- Punch down dough, turn out onto a floured work surface, and divide into 2 equal pieces. Roll each piece into a 1/3 inch thick rectangle. Brush each square with melted butter. Mix together cinnamon and brown sugar in a small bowl, then sprinkle evenly over the two rectangles.
- Roll each firmly into a log, pinch the ends closed, and tuck them underneath. Place each into a greased, glass loaf pan. Cover, and allow to rise in a warm place until doubled in bulk, about 45 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Brush the tops of the loaves with melted butter, then bake in preheated oven until loaves are golden brown, and sound hollow when tapped, about 30 minutes.

AUNT MARIE'S SLOVAK CINNAMON NUT BREAD

- Sweet Dough preparation: Combine warm milk, sugar, salt, softened butter, and beaten eggs. Dissolve yeast in warm water and add to other ingredients. Add half of flour, mix well until smooth. Add flour to handle easily. Knead dough on lightly floured board. Put dough in greased bowl, cover and place in warm, draft free place until doubled in size. Punch down and let double again. Divide dough in three parts. Roll each part until very thin in rectangular shape. Spread filling, roll and twist in circular shape like a snail or cinnamon roll. Place in greased 8" or 9" cake pans. Cover, put in warm place and let rise. Bake at 350 degrees for 30 - 45 minutes. Makes three loaves. Filling preparation: In heavy pan, over medium heat, combine sugar, milk and margarine and heat. Add nuts, then beaten eggs and mix well. Boil one minutes stirring constantly. Remove from heat, add pinch of salt, cocoa and cinnamon and mix well. Let cool till just warm enough to spread.
