AMISH CHICKEN CORN SOUP

- Place first 8 ingredients in a Dutch oven; bring slowly to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and vegetables are tender, about 30 minutes. , Stir in noodles, corn and butter. Cook, uncovered, until noodles are tender, about 10 minutes, stirring occasionally.

CREAMY CHICKEN AND CORN CHOWDER
This chowder will quickly become a go-to recipe! It's loaded with chicken, veggies and rich creamy broth. Delicious comfort food!

- In a large pot, melt butter over medium heat. Add red bell pepper, onions, jalapenos and saute until tender, about 3 minutes. Add garlic and cook 30 seconds longer. Stir in flour, and cook 2 minutes stirring constantly. While stirring, slowly add in chicken broth and whisk until well blended.
- Add potatoes, bay leaves and season with salt and pepper to taste. Bring mixture to a boil stirring frequently, then reduce heat to medium-low and cook, uncovered, 10 minutes or just until potatoes are tender, stirring occasionally.
- Add in cooked chicken, corn and half and half and simmer, uncovered 10 - 15 minutes longer, stirring occasionally. Serve warm topped bacon, green onions, and optional jalapeno peppers.

CHICKEN CORN SOUP I
A real Pennsylvania Dutch favorite! I have made this several times over the years.

Steps:
- In a large stock pot cover chicken and onion with water. Cook slowly until tender, approximately 1 hour. Remove chicken, let cool and remove meat from bones. Cut meat into 1 inch pieces, discard skin and bones.
- Cut corn from cobs if using fresh corn.
- Add corn, cut up chicken, celery to stock pot and season with salt and pepper. Simmer soup for 10 minutes.
- In a separate bowl make rivels by mixing together flour, salt, egg, and enough milk to form small crumbs.
- Drop rivels into soup and add hard boiled eggs. Simmer for 15 minutes and serve hot.

LANCASTER CHICKEN CORN SOUP
Steps:
- Gather the ingredients.
- Place chicken in a soup pot with enough water to cover.
- Bring to a boil , reduce heat, and skim foam as it rises to the surface.
- When the foam has subsided, add the onion, peppercorns , salt, and saffron.
- Simmer gently but steadily, partly covered, for about 1 1/2 hours, or until tender.
- Remove the chicken and trim and discard bones, skin, and onion.
- Let the soup cool, then skim the fat from the surface.
- Tear the meat into spoonable pieces and return them to the soup.
- Cut kernels from 4 ears of corn, then grate kernels from the remaining 6 ears, catching all milk and pulp on foil or waxed paper. If you're using frozen kernels, puree half in a food processor or blender, adding a little soup if the liquid is needed.
- Add whole kernels and grated or pureed corn to the soup, along with celery and noodles, egg barley , or rivels.
- Simmer gently until corn and noodles or rivels are cooked. Add salt and white pepper to taste.
- Stir in parsley and serve, garnishing each portion with chopped hard-cooked eggs.
- Stir salt and pepper into the beaten egg , add 2/3 cup flour and beat.
- Keep adding and beating in flour until the mixture is crumbly but a bit sticky.
- Rub the mixture between your hands or pinch off pea-sized pieces and drop them into simmering soup.
- Cover loosely and let cook for about 15 minutes, or until rivels solidify.
- To make the rivels ahead of time, cook them in lightly salted boiling water or some extra soup stock and then drain and reserve them; reheat in the soup just before it is served.

CREAMY CHICKEN & SWEETCORN SOUP

- For the base, melt the butter in a saucepan, stir in the flour and cook for a few mins, stirring all the time. Now, using a whisk or spatula, carefully stir in the milk, a little at a time, making sure the sauce stays smooth. Bring the mixture to a simmer and cook for a couple of mins until it thickens - it will be very thick. Turn the heat right down and keep cooking for 5 mins, stirring often.
- Meanwhile, heat the oil in a non-stick frying pan and fry all of the chicken in batches until it starts to colour lightly at the edges. Scoop out each batch of chicken and put it on a plate. Add the onion to the pan if you are using it, and cook over a low heat until soft. Add the chicken and any juices and the onion to the white sauce, fold it in and cook the mixture for a further 15 mins or until the chicken is cooked through. If you're making the base ahead of time, you can leave it to cool at this stage then freeze in an airtight container for up to a month. (Defrost fully before using in the next step.)
- Heat oil in a pan, add the celery and leek, then fry them gently until completely soft. Stir in the chicken base and stock and bring the mixture to a simmer.
- Add the sweetcorn and cook for 5 mins, then stir in the greens and cook for 1 min. Sprinkle over the chives and serve.

AUNT KATHY'S TORTILLA SOUP
This is now a favorite in my husband's family in Canada after my aunt sent it with me when I moved up from California. We make this with whatever broth is abundant. Garnish with Mexican cheese blend, sour cream, salsa, and sliced avocado. This soup is an especially tasty way to use up the turkey after holidays! It freezes well, too!
