Mojitos are a bartender's nightmare (oh, the muddling). But these frozen versions achieve the sweet mint flavor of the rum cocktail without the elbow grease, thanks to a whirl in the blender.

1/2 tablespoon finely grated lime zest, plus 1 1/2 cups fresh lime juice (from 9 limes)
1 1/2 cups water
1 1/2 cups sugar
1 cup chopped fresh mint
1/4 cup light rum
Mint sprigs, for garnish

Steps:

  • Puree lime zest and juice, water, sugar, and mint in a blender. Strain mixture through a fine sieve into a bowl; discard solids. Stir in rum. Divide among twelve 3-ounce paper cups. Freeze on a rimmed baking sheet for at least 5 hours. Garnish with mint sprigs.

1 1/4 cups sugar
1 small bunch mint, plus 10 leaves
1 cup fresh lime juice (from 7 to 8 limes), plus 10 very thin half-moon slices (from 1 lime)

Steps:

  • In a small saucepan, bring sugar and 2 cups water to a boil over high. Reduce heat and simmer, stirring occasionally, until sugar dissolves. Remove from heat, stir in mint, and let syrup cool, 30 minutes.
  • Pour syrup through a fine-mesh sieve into a medium bowl, pressing on solids (you should have about 3 1/4 cups syrup); discard solids. Stir lime juice into syrup. Fill ten 3-ounce ice-pop molds three-quarters full with syrup. Freeze until slushy, 45 minutes. With an ice-pop stick, submerge 1 lime slice and 1 mint leaf in each pop. Insert ice-pop sticks and freeze until solid, 6 hours (or up to 2 weeks).

1 ounce tuaca liqueur
8 mint leaves
1 ounce fresh lime juice
1 ounce simple syrup
2 ounces light rum
2 ounces asti spumante sparkling wine

Steps:

  • Juice one lime, reserving juice. Dice the lime shell.
  • Place Tuaca in bottom of shaker with mint leaves. Muddle leaves along with lime shell until the fresh mint flavor is released. Add simple syrup and rum along with cracked ice. Shake to break up the mint leaves.
  • Pour into tall mojito glass over more cracked ice. Top with Asti Spumante or your favorite sweet champagne. Stir and serve.

1 1/2 cups sugar
1 cup water
1 1/2 cups fresh lime juice (from 14 limes)
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
1/4 cup tequila
1/4 cup Cointreau or other orange-flavored liqueur
Garnish: lime wedges

Steps:

  • Heat sugar, water, and juices in a small saucepan over medium heat until sugar dissolves, about 4 minutes. Let cool.
  • Stir together citrus syrup, tequila, and Cointreau in a pitcher. Divide among twelve 3-ounce paper cups. Freeze on a rimmed baking sheet for at least 5 hours. Garnish with lime wedges.

THE REAL MOJITO

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
