PINEAPPLE COOKIES
These pineapple cookies with icing have a wonderful tropical flavor.

Steps:
- Preheat oven to 325 degrees.
- Drain pineapple reserving 3 tablespoons of juice for the frosting.
- In a mixing bowl, cream together butter and brown sugar until light and fluffy.
- Beat in egg, pineapple, and vanilla.
- In another bowl combine flour, baking powder, baking soda, and salt and stir or whisk until thoroughly mixed.
- Gradually add dry ingredients to the creamed butter and sugar.
- Grease a cookie sheet with non-stick spray.
- Use a cookie scoop to drop cookie dough onto the baking sheet about 2 inches apart. These cookies will spread.
- Bake at 325 degrees for 17 to 20 minutes or until golden.
- Transfer cookies to wire racks to cool.
- Place powdered sugar, lemon zest, and 2 tablespoons pineapple juice in a small bowl. Stir to combine. Add more pineapple juice, about ½ teaspoon at a time, if needed to achieve spreading consistency.
- Spread the frosting on the cooled cookies.

- 1. Preheat oven to 350. Cream shortening and sugars together. Add egg and mix well. Add dry ingredients and mix well Add drained pineapple and mix well. Add nuts and flavoring, mix well. Drop by spoonful onto greased baking sheet. Bake for 15-20 minutes.
- 2. Cool cookies on wire racks. Mix powdered sugar and reserved pineapple juice to make icing. Drizzle icing on cooled cookies.

- 1. preheat your oven at 350 degrees In a large mixing bowl cream your butter, brown and white sugar. There is no need for a mixer on any part of this recipe.
- 2. add your eggs, pineapple and vanilla.
- 3. In another mixing bowl, blend your flour, soda, baking powder and salt. Gradually add the dry ingredients to the wet. Fold in your nuts.
- 4. Drop by spoonfuls on a lined cookie sheet with parchment paper. Bake for 12 to 15 minutes or until they start to brown.

SOFT PINEAPPLE COOKIES
These cookies are soft and fruity. Whenever I take them to a dinner or church event they always disappear. The recipe is an old one that has been used by many family membes. I really can't tell you where it originated.

- 1. Preheat the oven to 325 degrees. Grease cookie sheets. In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. In a separate bowl, combine the flour, baking powder, baking soda and salt. Gradually stir the flour mixture into the creamed mixture. Drop by rounded spoon fulls onto the prepared cookie sheets.
- 2. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. OPTIONAL FROSTING: Stir together ingredients adding water slowly until a thin frosting is achieved. Spread over cooled cookies.

I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

- 1. Mix the eggs, shortening and sugar together until batter is smooth and fully Incorporated. Add the pineapple and the orange and vanilla extracts and mix until incorporated.
- 2. Sift together the flour salt and baking soda. Add to the sugar mixture one third at a time mixing thoroughly after each addition. As soon as the mixture comes together add in the raisins, sunflower seeds, oats and dates if using
- 3. Mixed together on low speed or by hand just until everything is mixed together well.
- 4. Spoon the cookies out onto a cookie sheet that has been lined with parchment paper or a Silpat. Bake for approximately 10 to 15 minutes until cookies are golden brown and delicious. These are wonderful warm or cold.
