Number Of Ingredients 10

2 1/2-3 kg raw green pawpaw, cut in half length ways & de seeded
2 1/2 tablespoons cooking oil
2 ounces onions, finely chopped
1/2 teaspoon garlic, finely chopped
500 g lean ground beef
4 medium sized tomatoes, finely chopped
1/2 teaspoon pepper sauce
sweet chili sauce, to taste
salt & pepper
125 g grated parmesan cheese

Steps:

  • Pre heat oven to 180oC (350oF).
  • Heat oil in large frypan, and sauté onions and garlic.
  • Stir in beef; cook to well done.
  • Add tomatoes and other seasonings.
  • Cook briskly stirring occasionally until liquid has reduced.
  • Taste for seasoning--adjust if needed.
  • Spoon meat mixture into pawpaw shells.
  • Place shells side by side in shallow pan.
  • Place pan in centre of oven.
  • Pour in enough boiling water to come up to approx 1" of sides of pawpaw.
  • Sprinkle some grated cheese on top.
  • Bake for about 30 minutes until pawpaw shows no resistance when pierced with a skewer and top is delicately browned.
  • To serve, transfer the pawpaw shells to a large heated dish and top further with remaining cheese.

2 tablespoons all-purpose flour or 2 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups pawpaw, peeled and seeded

Steps:

  • Place all ingredients into stew pan and stir together.
  • Cook over medium heat until thickened.
  • Pour into unbaked pie shell and bake until the crust is done.

When it comes to pawpaw, accept no substitutes. Trust us; we tried. We went to a bunch of experts - scholars who specialize in fruit, plus chefs and cookbook authors who know all about the proud culinary history of Appalachia - and we asked them, "If a home cook doesn't happen to have any pawpaw, what combination of other fruits and vegetables might work well as a replacement?" We picked up passing nods to sweet potatoes, bananas, papayas, avocados, really ripe mangoes. But in the end everyone came back with variations on "Forget it, there's nothing like a pawpaw." The goopy-textured, tropical-ish fruit whose name sounds like a punch line on "Hee Haw" can be found scattered all over the country, but recipes (for cakes, pies, puddings) abound largely in West Virginia and nearby states like Kentucky, Ohio and Indiana. If you happen to secure some pawpaw, best to get out of its way, as is the case with this pudding. Pawpaw is a holiday guest who responds well to minimal interference.

1/2 cup/1 stick/113 grams butter, melted and slightly cooled, plus more for baking dish
2 cups/400 grams sugar
1 1/2 cups/190 grams all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
3 large eggs
2 cups /1 pound/454 grams pawpaw pulp, thawed if frozen (see note)
1 1/2 cups/355 milliliters whole milk
1 teaspoon pure vanilla extract
Lightly sweetened whipped cream, for serving

Steps:

  • Heat oven to 350 degrees. Grease a 13-by-9-by-2-inch baking dish.
  • In a large bowl, whisk together sugar, flour, baking powder, salt, cinnamon, ginger and nutmeg.
  • In another large bowl, whisk together eggs and pawpaw pulp until smooth. Whisk in milk and vanilla. Whisk in melted butter. Pour into sugar mixture and stir only until combined.
  • Pour batter into prepared dish. Bake 50 minutes or until just set in the center. Cool to room temperature on a wire rack before cutting. Serve with a dollop of whipped cream.

This is my recipe for pawpaw tarts which are just little papaya pies. They are little and are perfect for lunches, picnics, or any other place you want to take them. The tarts are very easy to make. The challenging thing is to find a green pawpaw. You may have to make a special trip to your local African, Oriental or Spanish store. But, it is certainly worth the trip.

3 cups papayas (1 large or two medium Papaya)
2 cups sugar
3 tablespoons lime juice (about 4 limes)
1 1/2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons margarine
1 pinch salt
4 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups margarine
1/2 cup sugar
1 1/3 cups milk

Steps:

  • Filling:.
  • Peel your pawpaw and remove the seeds. Cut up into chunks roughly 1 square inch. Place papaya in a pot. Cover with water, add salt, cover the pot, and boil until soft.
  • When done, drain off the water and cool. Use a cook spoon to mash and force the papaya through a strainer.
  • Squeeze the limes and add the juice. Be careful to not add any seeds. Stir in margarine, vanilla, and cinnamon(or nutmeg).
  • Add 1 1/2 cup of sugar, stir, and taste. Slowly add remaining sugar to your taste. I use the entire 2 cups because I like it very sweet. You may not. Mix well and set aside.
  • Preheat your oven to 350 degrees.
  • Pie Crust:.
  • Measure out and combine flour, salt, and baking powder in a mixing bowl. Use a fork to cut the butter into the flour. To cut, you simply mash the margarine into small pieces while mixing in the flour. Cut and mix until the small pieces of butter are more or less spread out in the flour.
  • Stir sugar in the milk. Pour sweetened milk into flour mixture. Fold milk into flour evenly.
  • Use your hands to gather dough into a ball. Place on lightly floured surface. Divide the dough into four pieces. Use a rolling pin to flatten each piece of dough.
  • Divide it into two sections for easy handling. Roll the dough out flat on a lightly floured surface as shown in the photo. Use a large round cookie cutter to cut the dough into circles.
  • Spoon the filling in to the center of the dough and fold over. Seal the edges with a fork.
  • Grease and flour a cookie sheet. Place the tarts on the cookie sheet. Bake at 350 degrees until golden brown (about 20-25 minutes.).
  • Use a spatula to remove from the cookie sheet. Enjoy!

1 cup white sugar
⅓ cup butter, softened
2 eggs
1 ½ cups pawpaw pulp
⅓ cup tepid water
1 ⅓ cups all-purpose flour
½ cup chopped walnuts
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of an 8-inch loaf pan with cooking spray.
  • Combine sugar and butter in a bowl; beat together until smooth. Beat in eggs. Add pawpaw pulp and water; beat until combined, about 30 seconds. Stir in flour, walnuts, baking soda, salt, and baking powder. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes. Allow to cool before slicing, about 30 minutes.

2 teaspoons butter
1 -2 minced garlic clove
1 -2 large onion, chopped
1 1/2 lbs ground beef
1 (14 ounce) can tomato sauce (or stewed tomatoes)
5 green pawpaw, peeled, halved, seeded
margarine, to taste
italian seasoning, to taste
garlic powder, to taste
salt, to taste
pepper, to taste
6 ripe tomatoes, sliced (optional)
1/2 cup grated cheddar cheese
1/2 cup grated parmesan cheese
seasoned dry bread crumb

Steps:

  • Saute the onions and garlic in butter until softened. Add the ground beef, season with salt and pepper, and cook until browned.
  • Drain and add the can of tomato sauce.
  • Simmer and adjust seasoning.
  • Keep ready.
  • Boil the pawpaws until tender. Drain, mash with a fork with a little margarine, and season with salt and pepper to taste.
  • In a buttered casserole, put down a layer of the pawpaws.
  • Put a layer of the ground meat mixture on top.
  • Now layer on slices of tomato, and sprinkle with grated cheese. Liberally sprinkle with breadcrumbs and dot with butter.
  • Bake at 350 degrees for 30 minutes or until bubbling hot and golden on top.
