VANILLA MERINGUES

2 egg whites, at room temperature
2 pinches cream of tartar
1/8 teaspoon salt
1/2 vanilla bean, seeds scraped from pod or 1 teaspoon vanilla extract
1/2 cup superfine sugar

Steps:

  • Preheat the oven to 200 degrees F. Use an electric mixer to beat egg whites with cream of tartar, salt, and vanilla. When whites begin to hold stiff peaks, gradually add half the sugar. When peaks become glossy, gently fold in remaining sugar.
  • Line a baking sheet with parchment paper, and use a pastry bag with a star tip or a resealable plastic bag with a corner cut out to form small mounds of meringue mixture, each about an inch wide and tall.
  • Bake meringues until hard, about 2 hours. Meringues are ready when they release from the parchment paper. Turn oven off, prop door open and allow meringues to sit in oven for another hour or so.
  • For pink vanilla meringues: After adding the first 1/4 cup sugar, add a drop or two of pink or red food coloring to mixture. Continue with Step 1.

AUNT JIMMY'S BUTTERSCOTCH MERINGUE PIE

This is one of my brother Gary's favorite pies made by my Aunt Jimmy. She was called Jimmy because when she was little she got a very short haircut which made her look like a boy so instead of her brother calling her by her right name, Sylvia, he called her "Jimmy". It's good after spicy food like barbecue.

2 1/4 cups milk
1 cup heavy cream
6 tablespoons unsalted butter
1 1/4 cups light brown sugar, packed
3 egg yolks
1/4 cup cornstarch
1/4 teaspoon salt
2 tablespoons Scotch
1 1/2 teaspoons pure vanilla extract
1 (9-inch) prebaked pie shell, your favorite recipe
3/4 cup egg whites
1/2 teaspoon cream of tartar
3/4 cup sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • Make the Filling: In a large saucepan, combine the milk and cream and bring to a simmer over medium heat. Immediately remove from the heat and set aside.
  • Melt the butter in a large, heavy skillet over medium-high heat. Stir in the brown sugar, raise the heat to medium-high, and cook, stirring constantly, until caramelized, 5 to 7 minutes. (You'll smell a characteristic nutty caramel odor when the butter browns, signaling that the mixture is ready.)
  • Whisking constantly, gradually add the butter/brown sugar mixture to the hot milk/cream mixture. If the mixture isn't smooth, blend for 20 seconds with a hand blender or pour through a fine sieve.
  • Put the egg yolks in a medium bowl. Whisk in about 1/2 cup of the hot milk mixture. Whisk in the cornstarch and salt until dissolved. Whisk the cornstarch mixture back into the hot milk mixture in the saucepan. Whisk in the Scotch.
  • While whisking constantly, cook over medium-high heat until thick and just boiling. When the mixture thickens, the whisk will leave trail marks on the bottom of the pot and the mixture will have a few large bubbles boiling up to the top.
  • Turn off the heat and whisk in the vanilla extract. Pour into the prebaked pie shell and set aside while you make the meringue.
  • Make the Meringue: In a standing mixer fitted with a whip attachment, whip the whites in a clean dry bowl on low speed until foamy. Add the cream of tartar and continue whipping on medium speed until soft peaks are formed. Gradually pour in the sugar and continue whipping on high speed until stiff and glossy. Pile the meringue onto the pie and swirl to cover, spreading it to the edge. (Making sure it touches the edge.) Bake the pie until the meringue is lightly browned, about 15 to 20 minutes.
  • Chill the pie, uncovered, at least 2 hours or overnight before serving.

VEGAN MERINGUES

Our tasters even preferred their malty flavor over regular egg white meringues. If you like, fold in chocolate chips or flavor with a little of your favorite extract.

One 15-ounce can chickpeas
1/4 teaspoon cream of tartar
Kosher salt
3/4 cup superfine sugar

Steps:

  • Preheat the oven to 250 degrees F. Line 2 baking sheets with parchment.
  • Strain the chickpeas directly into the bowl of a stand mixer. There should be about 3/4 cup liquid; reserve the chickpeas for another use. Add the cream of tartar and a pinch of salt to the liquid, and beat on medium-high speed until very foamy. While still beating, add the sugar, 1 tablespoon at a time, then continue to beat until the mixture forms stiff and glossy peaks, about 4 minutes.
  • Transfer the mixture to a large pastry bag fitted with a large star or round tip, and pipe 2-inch mounds about 2 inches apart onto the prepared baking sheets. Bake until the meringues are set and no longer glossy, about 2 hours, rotating the trays (from top to bottom) halfway through. Turn the oven off, and let the meringues sit in the closed oven until they have dried out inside, about 1 hour more. (The meringues will keep in an airtight container for up to 3 days.)

1 cup sugar
1 tsp. vanilla
2/3 cup chopped walnuts
20 round buttery crackers, coarsely broken
4 cups cut-up assorted fresh fruit (strawberries, blueberries, kiwi and peeled peaches)
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Preheat oven to 325°F. Beat egg whites in large bowl with electric mixer on high speed until soft peaks form. Add salt and baking powder. Gradually add sugar, beating until well blended after each addition; continue beating until stiff peaks form. Add vanilla; mix well. Gently stir in walnuts and crackers. Spread onto bottom and up side of well-greased 9-inch pie plate.
  • Bake 25 to 30 min. or until lightly browned. Cool completely on wire rack.
  • Fill with fruit and whipped topping just before serving.

8 ounces walnut halves (2 1/2 cups), toasted and finely ground (2 cups)
1 cup superfine sugar
1 1/2 cups confectioners' sugar
Pinch of salt
8 large egg whites, room temperature

Steps:

  • Preheat oven to 200 degrees. Line 3 baking sheets with parchment. Using a cake pan or a ruler, trace a 9-inch square on each piece of parchment.
  • Whisk walnuts, 3/4 cup superfine sugar, the confectioners' sugar, and salt.
  • With an electric mixer fitted with the whisk attachment, beat egg whites on medium-high speed until soft peaks form. Gradually add remaining 1/4 cup superfine sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold in walnut mixture with a spatula. Spread batter evenly onto traced squares on parchment, and smooth tops.
  • Bake for 2 1/2 hours. Turn off oven, and let cool in oven until completely dry, about 75 minutes.
  • Carefully peel meringue layers from parchment, and let cool completely on wire racks.

CRUNCHY MERINGUE COOKIES

5 large egg whites
1/8 teaspoon cream of tartar
3/4 cup granulated sugar (150 grams)
1 1/2 cups confectioners' sugar (180 grams)

Steps:

  • Preheat the oven to 200°F. Line 2 baking sheets with parchment paper.
  • Put the egg whites, cream of tartar, and 1/4 cup of the granulated sugar in the bowl of a standing mixer with the whisk and turn the mixer on to medium. Whip until the whites are foamy and then slightly increase the speed. Continue whipping until the whites have tripled in volume and are fluffy but still soft. The whites should just be starting to hold the trail of the whisk along the sides of the bowl.
  • With the motor running, very slowly sprinkle another 1/4 cup of the granulated sugar onto the whites between the bowl and the edge of the whisk. Slightly increase the mixer speed and whip until the whites start to turn glossy but are still soft. Slowly sprinkle in the remaining 1/4 cup granulated sugar and increase the heat to medium-high. Whip for 2 to 3 minutes longer, until very stiff and glossy but not dry. Transfer the whites to a very large mixing bowl.
  • Put the confectioners' sugar into a fine-mesh strainer. Sift about one quarter of it onto the whipped whites. Using the largest rubber spatula you have, gently fold the sugar into the meringue, drawing the spatula through the meringue and pulling it up and over itself from the sides of the bowl in. Move slowly and precisely so you don't knock the air out of the whites. Continue sifting and folding in the sugar in 2 or 3 more additions. Once the whites are smooth with no lumps of confectioners' sugar, they are ready.
  • The meringue can be transferred to a pastry bag with a star tip or into a resealable plastic food bag with the corner snipped and used to pipe stars, circles, or any shape you like onto the lined baking sheets. You can make the cookies as small as dimes to sprinkle over ice cream or large enough to sandwich ice cream between them. Or use 2 spoons to mound the meringue into pillows.
  • Bake for 1 hour, rotating and switching the pans halfway through. Baking time may vary depending on the size of the meringues; the cookies should feel dry, light, and hollow and have no give when you press on them. If they still feel soft, bake for 15 minutes longer and test again. Turn the oven off and let the meringues cool completely in the oven. Store the cooled meringues in an airtight container for up to 2 weeks.
