Serve this old-fashioned Fruit Cocktail Cake up for dessert or invite your friends for coffee! Made from scratch, NO box mix needed!

1 1/2 cups sugar
2 cups all-purpose flour
2 large eggs (lightly beaten)
2 teaspoons vanilla
2 teaspoons baking soda
3/4 teaspoon salt
1 can (16-ounce) fruit cocktail with syrup (undrained)
1/2 cup butter
1/2 cup brown sugar (firmly packed)
1 cup sugar
1 cup evaporated milk
1 teaspoon vanilla
1 1/2 cups sweetened shredded coconut
3/4 cup pecans (chopped)
Reddi Wip
maraschino cherries

Steps:

  • Adjust an oven rack to medium position. Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
  • In a large mixing bowl, stir together all cake ingredients until well combined. Pour into prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Meanwhile, make the topping by combining all the ingredients in a saucepan and bring to a boil over medium heat. Continue to boil, stirring constantly, for 2 minutes. Pour over hot cake and smooth evenly with an offset spatula.
  • Top individual slices of cake with a dollop of Reddi Wip and Maraschino cherries.

Number Of Ingredients 11

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cup white granulated sugar
2 eggs
4 tablespoons butter (, softened)
1 teaspoon vanilla extract
1 15 1/2 ounce can fruit cocktail in syrup, undrained
1/4 cup brown sugar
1 cup nuts (I used pecans)

Steps:

  • Whisk together the flour, baking soda, salt and nutmeg and set aside. Cream the white sugar, butter, eggs and vanilla extract with a mixer. Add the two together and continue mixing. Fold in the fruit cocktail and mix with a spoon.
  • Spray a 9 x 13 baking dish with cooking spray and spread the cake batter in the dish. Sprinkle the 1/4 cup brown sugar over the top of the batter along with the nuts. Bake in a preheated 350 degree oven for 35 to 40 minutes checking for doneness since ovens vary.
  • Serve with whipped cream or ice cream on top. This cake does not need frosting. It is just that good but you could add about any type of frosting if you want.

CAKE INGREDIENTS
1 1/2 c sugar
1/2 c vegetable oil
2 eggs
2 c plain flour
2 tsp baking soda
1/2 tsp salt
1 can(s) fruit cocktail with syrup (15 oz can)
TOPPING INGREDIENTS
1 stick butter
3/4 c sugar
1/2 c evaporated milk
1 tsp vanilla flavor
1/2 c chopped pecans

Steps:

  • 1. CAKE: Beat eggs; add sugar and oil and mix well. Sift flour, salt, & soda and add to egg mixture. Add fruit cocktail with syrup. Mix with electric mixer until fruit is well mixed.
  • 2. Pour into greased and floured tube pan. Bake for 45-50 minutes at 325 degrees. Cool 10 minutes in pan. Remove, and frost while still warm with this topping:
  • 3. TOPPING: boil milk, sugar, and butter for about 5 minutes. Add nuts and vanilla. Pour over cake while still warm.
  • 4. We like assembling this cake in a large glass bowl. The topping will run down the sides of the cake and collect underneath, where it can be spooned over each slice. If you use a cake plate, let the topping cool somewhat first or it will run all over your cake plate and even drip off.

TOPPING:
1/2 cup packed brown sugar
1/2 cup sweetened shredded coconut
SAUCE:
1/4 cup evaporated milk
3/4 cup sugar
1 teaspoon vanilla extract
1/2 cup butter, cubed
1/2 cup sweetened shredded coconut
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine all cake ingredients; mix well. Pour into a 13x9-in. pan and sprinkle with topping ingredients. Bake at 350° for 35-40 minutes. Meanwhile, combine all sauce ingredients in a medium saucepan and bring to a boil. When cake is done and still warm, pour sauce over cake. Cool to room temperature.

2 cups all-purpose flour
2 teaspoons baking soda
2 pinches salt
2 eggs
1 ½ cups white sugar
1 (15.25 ounce) can fruit cocktail with juice
½ cup brown sugar
½ cup chopped walnuts
¾ cup white sugar
½ cup butter
1 (5 ounce) can evaporated milk
1 (7 ounce) package flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking soda and salt. Set aside.
  • In a large bowl, Beat eggs and 1 1/2 cups white sugar together until smooth. Beat in flour mixture and fruit cocktail with juice. Spread into prepared pan. Mix together the brown sugar and chopped nuts; sprinkle on top of cake.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and immediately poke holes in cake with fork. Pour topping over cake.
  • To make the topping: In a small saucepan, combine sugar, butter and evaporated milk. Bring to a boil, and stir in coconut.
