GRANDMA'S FRUIT COCKTAIL CAKE
Serve this old-fashioned Fruit Cocktail Cake up for dessert or invite your friends for coffee! Made from scratch, NO box mix needed!

Steps:
- Adjust an oven rack to medium position. Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
- In a large mixing bowl, stir together all cake ingredients until well combined. Pour into prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, make the topping by combining all the ingredients in a saucepan and bring to a boil over medium heat. Continue to boil, stirring constantly, for 2 minutes. Pour over hot cake and smooth evenly with an offset spatula.
- Top individual slices of cake with a dollop of Reddi Wip and Maraschino cherries.

- Whisk together the flour, baking soda, salt and nutmeg and set aside. Cream the white sugar, butter, eggs and vanilla extract with a mixer. Add the two together and continue mixing. Fold in the fruit cocktail and mix with a spoon.
- Spray a 9 x 13 baking dish with cooking spray and spread the cake batter in the dish. Sprinkle the 1/4 cup brown sugar over the top of the batter along with the nuts. Bake in a preheated 350 degree oven for 35 to 40 minutes checking for doneness since ovens vary.
- Serve with whipped cream or ice cream on top. This cake does not need frosting. It is just that good but you could add about any type of frosting if you want.

- 1. CAKE: Beat eggs; add sugar and oil and mix well. Sift flour, salt, & soda and add to egg mixture. Add fruit cocktail with syrup. Mix with electric mixer until fruit is well mixed.
- 2. Pour into greased and floured tube pan. Bake for 45-50 minutes at 325 degrees. Cool 10 minutes in pan. Remove, and frost while still warm with this topping:
- 3. TOPPING: boil milk, sugar, and butter for about 5 minutes. Add nuts and vanilla. Pour over cake while still warm.
- 4. We like assembling this cake in a large glass bowl. The topping will run down the sides of the cake and collect underneath, where it can be spooned over each slice. If you use a cake plate, let the topping cool somewhat first or it will run all over your cake plate and even drip off.

This is my son's favorite cake, and when he asks for it for his special birthday cake, he usually gets it! It's easy to make, and a good dessert to take to potlucks or social functions. There's always someone who wants the recipe, and I'm more than happy to oblige.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking soda and salt. Set aside.
- In a large bowl, Beat eggs and 1 1/2 cups white sugar together until smooth. Beat in flour mixture and fruit cocktail with juice. Spread into prepared pan. Mix together the brown sugar and chopped nuts; sprinkle on top of cake.
