Steps:

  • Preheat oven to 375 degrees.
  • Butter a casserole dish.
  • Combine the ingredients in the order listed.
  • Pour into prepared casserole dish.

Fried Oysters with Horseradish Cream and Tomato Corn Salsa image

1/4 cup blanched corn
4 ripe Italian plum tomatoes, peeled, seeded and diced
1/4 cup minced onions
1 teaspoon minced jalapeno peppers
2 tablespoons chopped fresh cilantro leaves
1 tablespoon freshly squeezed lime juice
1 teaspoon freshly squeezed lemon juice
Salt and black pepper
3/4 cup freshly grated horseradish or bottled, if not prepared with cream
3 tablespoons minced shallots
2 teaspoons minced garlic
2 teaspoons Dijon mustard
Ground white pepper
1 1/2 cups heavy cream
1 cup all-purpose flour
2 tablespoons Essence, recipe follows
1 cup masa harina
2 large eggs
1 cup milk
36 large freshly shucked oysters, liquor drained and reserved
1/2 cup olive oil
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the corn, tomatoes, onions, jalapenos, cilantro, lime juice, and lemon juice. Mix well. Season the salsa with salt and pepper. Set the salsa aside. In a saucepan, combine the horseradish, shallots, garlic, mustard, white pepper and cream. Season with salt and pepper. Bring the liquid to a boil, whisking gently. Reduce the heat and simmer, stirring occasionally, until the sauce is thick enough to coat the back of a spoon, for about 12 minutes. Remove from the heat and keep warm.
  • In a small bowl, season the flour with Essence. In another bowl, season the masa with Essence. In a third bowl, beat the eggs with the milk. Season the oysters with Essence. Dredge the oysters in the seasoned flour. Dip the oysters in the egg wash, letting the excess drip off. Dredge the oysters in the seasoned masa, coating each side completely. In a large saute pan, heat the olive oil. When the oil is hot, but not smoking, carefully lay the oysters in the hot oil. Pan-fry the oysters for about 1 1/2 minutes on each side or until golden brown. Remove the oysters form the pan and drain on a paper-lined plate. Season the oysters with Essence. Serve the oysters with the horseradish cream and salsa.

These Southern fried oysters are coated with a simple cornmeal batter. Serve them in po'boy sandwiches, as an appetizer, or add them to a salad.

For the Fried Oysters
Vegetable oil (for frying)
1 quart oysters (about 2 cups drained oysters)
2 large eggs (beaten)
2 cups cornmeal
1 teaspoon sugar
2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons flour
For the Tartar Sauce
1 cup mayonnaise
1/3 cup dill relish (or finely chopped dill pickle)
2 teaspoons capers (drained and chopped)
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
Optional: 2 tablespoons green onion (finely chopped)

Steps:

  • Gather the ingredients.
  • Pat the drained oysters dry with paper towels or a clean kitchen towel.
  • In a medium-sized bowl, beat the eggs.
  • Add the oysters to the egg bowl and set aside for 10 minutes.
  • In a medium bowl, combine the cornmeal, sugar, pepper, salt, and flour.
  • Lift each oyster out of the egg mixture and allow the excess moisture to drip off before rolling them in the cornmeal mixture to evenly coat. Repeat the process with all oysters.
  • Pour about 3 inches of vegetable oil in a heavy, deep saucepan. Place the pan over medium-high heat and bring it to a temperature of 370 F.
  • Carefully add the oysters to the hot oil. Do not overcrowd the pan.
  • Fry each batch of 6 to 8 oysters for about 2 to 4 minutes, or until they are golden brown.
  • Use a metal slotted spoon to remove the oysters to paper towels to drain. Reserve.
  • Gather the ingredients.
  • In a bowl, combine the mayonnaise with the dill relish, capers, Dijon mustard, lemon juice, and black pepper. Mix well.
  • If using, add the green onion to the sauce and stir it into the mixture, or reserve the onion to garnish the finished oysters. Stir to blend thoroughly.
  • Serve the sauce alongside the fried oysters and enjoy.

1 cup butter, melted
½ (16 ounce) package saltine crackers, crushed
2 (8 ounce) cans oysters
1 ½ tablespoons heavy whipping cream
1 teaspoon Worcestershire sauce
2 (14.75 ounce) cans cream-style corn

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13 inch casserole dish. Drain the oysters, reserving juice.
  • In a small mixing bowl combine margarine and crushed saltine crackers. Cut the oysters into small pieces, set aside. In a small mixing bowl combine cream, oyster juice and Worcestershire sauce.
  • Spread one can of corn onto the bottom of the casserole dish. Layer 1/2 of the oysters over the corn, 1/2 of the cracker mixture. Repeat layering with remaining ingredients. Pour the oyster juice mixture over the top of the entire casserole. Cover the casserole dish with aluminum foil.
  • Bake casserole for 20 minutes. Remove foil and bake an additional 30 minutes.

Though made entirely of corn, these traditional summer fritters resemble fried oysters -- hence the name, from Emeril Lagasse's book "Farm to Fork."

4 ears fresh corn
2 eggs, separated
2 tablespoons heavy cream
2 tablespoons minced jalapeno
1 cup all-purpose flour
2 teaspoons baking powder
1 1/4 teaspoons salt
1/2 teaspoon cayenne pepper
Pinch of sugar
Vegetable oil, for frying
Emeril's Original Essence or other Creole seasoning, for garnish

Steps:

  • Holding the base of an ear of corn in a medium bowl, slice downward, cutting halfway through the kernels. Using the back of the knife or a small spoon, scrape downward along the cob to extract the milk, letting it fall into the bowl with the cut kernels. Cut again along the cob, this time cutting close enough to remove the remaining half of the kernels. Repeat with the remaining ears.
  • In a small bowl, whisk the egg yolks until pale and slightly thickened, about 2 minutes. Then add the yolks to the corn. Stir in the heavy cream and jalapeno.
  • Stir the flour, baking powder, salt, cayenne, and sugar together in a bowl. Then stir the flour mixture into the corn mixture until just combined. Do not overmix.
  • Beat the egg whites until medium to stiff peaks form. Fold the whites into the corn mixture until thoroughly combined.
  • Fill a heavy-bottomed Dutch oven or a deep iron skillet halfway with vegetable oil (so it is 2 to 4 inches deep). Heat the oil over medium-high heat until it reaches 350 degrees.
  • When the oil is hot, carefully add 2-tablespoon scoops of the corn mixture, working in batches and being careful not to overcrowd the pan. (While they are cooking, the fritters may spatter hot oil, so be careful; a splatter screen may come in handy.) Fry the fritters for 6 minutes, or until they are golden and cooked through, turning them as needed for even color. Remove, and drain on a paper towel-lined plate. Season with the Essence, and serve immediately.

SEAFOOD CORN CHOWDER

This makes a big pot of thick seafood chowder, you almost need a fork to eat it! You can find crab and shrimp combo in the refrigerator section near the seafood - you could sub 1 can crab meat and 1 can baby shrimp if you can't locate the crab/shrimp combo.

1 large onion, diced
1 large potato, diced
1 bay leaf
1/2 teaspoon dried marjoram
1/8 teaspoon cayenne
1 (15 ounce) can fat-free chicken broth
1 (17 ounce) can cream-style corn
1 (8 ounce) can corn, drained (or 1 cup frozen corn)
1 1/2 cups skim milk
1/4 teaspoon fresh ground black pepper
1 (7 ounce) jar roasted red peppers, drained and diced
1 (7 ounce) package crab, and shrimp combo (see note above)

Steps:

  • Heat saucepan over medium high heat. Spray with cooking spray and saute onions until transparent.
  • Add potato, bay leaf, marjoram, cayenne and chicken broth. Bring to boil, cover, reduce heat and cook until potato is soft, 8-10 minutes.
  • Add creamed corn, canned corn, milk and freshly ground pepper.
  • Over medium-high heat, heat until hot, not boiling.
  • Add red peppers and the package of crab/shrimp, continue stirring until heated through, 2-4 minutes.

¼ cup freshly grated Parmesan cheese

Steps:

  • In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

1/3 cup flour or 1/3 cup cornmeal
1 egg

Steps:

  • Put the frozen corn in a colander. Rinse it until the ice crystals melt.
  • Pour the corn into a bowl.
  • Stir in the milk, flour or corn meal, salt, and pepper.
  • Lay paper towels on top of a plate and set it aside.
  • Set a skillet over medium-high heat on the stove.
  • Heat the butter and oil in the skillet until the butter is melted.
  • Put tablespoon-fulls of batter in the hot skillet.
  • Cook until golden-brown. Repeat with the other side.
  • Drain the oysters on the paper towels and cover with foil to keep them warm.
  • Repeat with the others and serve hot.
