It's a classic way to serve seasonal asparagus, and so easy. This recipe can be served as a side, starter or for brunch alongside soft boiled eggs, like in our asparagus and pancetta recipe.

2 bunches of asparagus (about 24 spears), woody ends removed
Small handful fresh mint leaves, roughly chopped
2 tbsp olive oil
Grated zest of ½ lemon
8 slices Parma ham

Steps:

  • Preheat the oven to 200C/fan180C/gas 6. Cook the asparagus spears in salted boiling water for 2 minutes. Drain, refresh in cold water, then drain again. Set aside.
  • Using a pestle and mortar, crush the mint with the olive oil and lemon zest. Add to the asparagus and stir gently to coat.
  • Make bundles of 3 spears and wrap each in a Parma ham slice. Place in a baking tray and bake in the oven for 10 minutes until the ham is crisp.

Canola oil spray
1 pound thinly sliced serrano ham (about 24 slices)
1 pound asparagus, stalks trimmed to equal lengths
1 tablespoon orange zest and 2 tablespoons juice
Flaky sea salt

Steps:

  • Preheat the oven to 425 degrees F. Lightly grease a baking sheet with canola oil spray.
  • Lay a slice of ham on a work surface. Place a stalk of asparagus perpendicular to the ham, with the tip of the asparagus just higher than the top edge of the ham. Roll the asparagus on a diagonal, tightly wrapping the ham around the stalk as you go. (The ham should cover the entire stalk except for about an inch on the top and bottom ends.) Repeat with the remaining asparagus and ham.
  • Place the asparagus, seam-side down, on the prepared baking sheet and lightly grease the tops with canola oil spray. Bake until the ham is crispy and the asparagus has softened and begun to char at the tips, about 15 minutes. Immediately pour the orange juice over the hot asparagus and season with salt. (The orange juice will almost completely evaporate on the hot baking sheet, but it will infuse the asparagus with orange flavor.)
  • Transfer the asparagus to a serving plate and garnish with the orange zest. Serve immediately.

1/4 cup all-purpose flour
2 cups milk
1/2 cup shredded cheddar cheese
1/4 teaspoon salt

24 fresh or frozen asparagus spears
8 thin slices fully cooked ham (about 1/2 pound)
1/4 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, melt butter; stir in flour until smooth. Gradually stir in the milk. Bring to a boil. Cook and stir until thickened, 2-3 minutes., Stir in cheese, salt and pepper. Remove from the heat. Place three asparagus spears on each ham slice. Roll up; secure with toothpicks if necessary. , Place in 13x9-in. baking dish; top with cheese sauce. Sprinkle with crumbs. Bake, uncovered, until heated through, 20 minutes.

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with Parmesan cheese, garlic, salt, and pepper. Arrange the asparagus onto a baking sheet in a single layer.
  • Bake in the preheated oven until just tender, 12 to 15 minutes depending on thickness. Sprinkle with lemon juice just before serving.

1 tablespoon olive oil
16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

2 cups cubed fully cooked ham
2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup evaporated milk
1/2 cup shredded process cheese (Velveeta)
3 tablespoons finely chopped onion
1 package (10 ounces) frozen asparagus spears, thawed
1/2 cup crushed cornflakes
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the ham, rice, soup, milk, cheese and onion; mix well. Spoon half into a greased 2-qt. baking dish. Top with asparagus and remaining ham mixture. Combine cornflakes crumbs and butter; sprinkle over top. Bake, uncovered, at 375° for 30-35 minutes or until heated through.

24 asparagus spears
12 slices Parma ham

Steps:

  • Preheat the oven to 200 C / Gas 6. Wash and trim the bottom ends from the asparagus. Boil the Asparagus for 3-4 minutes then drain them and let them cool down.
  • Cut each slice of Parma ham in half.
  • Wrap each asparagus spear with a half slice of ham.
  • Brush a baking tray with olive oil and arrange the wrapped spears in a single layer. Season with salt and pepper.
  • Bake in the oven for 10 minutes for thin asparagus, or slightly longer for thick stalks

2 thin bunches asparagus, ends trimmed
2 tablespoons extra-virgin olive oil, plus more for serving
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. Spread out asparagus spears in a large shallow roasting pan. Drizzle with olive oil; sprinkle with salt and pepper. Shake roasting pan gently so asparagus is completely coated in oil.
  • Roast in oven until spears are just tender. Cooking time will depend on thickness of asparagus, about 10 minutes for medium-thick asparagus. Pencil asparagus will take much less time; thick stalks will take more. Shake pan halfway through cooking time to keep spears from sticking. 2 teaspoons walnut oil or 2 teaspoons olive oil
1 onion, finely chopped
1 garlic clove, crushed
115 g parma ham, cut into thin strips
1 tablespoon cornflour
175 ml vegetable stock
70 ml dry white wine
1 tablespoon light soy sauce
2 teaspoons Dijon mustard
salt and pepper
rosemary sprig, to garnish

Steps:

  • Trim the woody ends from the asparagus and cut the stems into 1 cm lengths.
  • In a saucepan, heat the oil over a high heat and cook the asparagus, onion and galric for 5 minutes.
  • Reduce the heat, add the ham and cook for 1 minutes.
  • In a bowl, blend the cornflour, stock, wine , soy sauce, mustard and salt and pepper and add to the pan.
  • Bring to the boil, stirring and continue to cook, stirring until the mixture thickens.
  • Simmer for 5 minutes.
  • Garnish with rosemary sprigs and serve with the freshly cooked linguine.
