BUCKWHEAT CREPES WITH ASPARAGUS, HAM AND GRUYèRE

Buckwheat Crepes With Asparagus, Ham and Gruyère image

In Brittany, large buckwheat crepes are known as galettes and are filled with all sorts of savory ingredients. A classic one is made with ham and cheese. This scaled-down rendition adds sweet asparagus, which goes well with the nutty flavor of buckwheat flour. Traditionally they are served with a glass of sparkling cider. Have them as a first course or alongside fried eggs for a more substantial meal.

Categories     brunch, pancakes, main course

Time 3h

Yield 6 servings

Number Of Ingredients 9

1 cup/120 grams buckwheat flour
1/2 cup/60 grams all-purpose flour
2 eggs
2 1/2 cups buttermilk
1/2 teaspoon salt, plus more as needed
2 tablespoons butter, plus more for pan
1 1/2 pounds medium asparagus, trimmed and bottom parts peeled, if desired
6 cooked ham slices
2 cups grated Gruyère or Comté cheese

Steps:

  • Make the batter: Whisk together flours, eggs, buttermilk and salt until well combined. Put the batter in the fridge for at least 2 hours or, preferably, overnight. If necessary, thin batter with a little more buttermilk or water, to the consistency of heavy cream.
  • Heat a crepe pan or well-seasoned cast iron skillet, about 8 inches in diameter, over medium-high heat. Use a piece of paper towel to rub a little butter in the pan, then quickly ladle in about 1/4 cup of batter. Swirl the pan to spread the batter all the way to the perimeter. Let crepe brown on one side for a minute or so, until crisp. Flip it over with a spatula (or carefully with your fingers) and cook one minute more. Don't worry about browning the second side. Adjust heat if crepe browns too quickly; the pan needn't be scorching hot. Remove from heat if crepe is cooking too quickly.
  • Remove the crepe from the pan and set it aside while you continue to make 5 more. Stack crepes on top of each other as they are finished. (Crepes may be made in advance.)
  • Bring a medium pot of generously salted water to a boil. Cook the asparagus for 2 minutes, or just until it is firm-tender, then drain and spread on a clean kitchen towel to cool.
  • Heat oven to 400 degrees. Fill the crepes by laying each one top-side down, place a slice of ham on top, sprinkle generously with cheese, and lay 3 asparagus spears on top, off to one side. Fold over to make a half-moon.
  • Put the filled crepes in one layer on a baking sheet. Drizzle with a little melted butter, then bake until they are crisp and the cheese is melted, about 5 to 7 minutes. Serve immediately.

BUCKWHEAT CREPES

Buckwheat Crepes image

These savory buckwheat crepes go well with any sort of condiments. I like to put some cheese in a line across the center and fold both sides in to look like a wrap.

Time 50m

Yield 16

Number Of Ingredients 8

3 large eggs
1 tablespoon white sugar
salt to taste
2 ½ cups milk
1 ½ cups buckwheat flour
2 ½ tablespoons buckwheat flour
1 ¼ cups whole wheat flour
2 tablespoons vegetable oil, or more as needed, divided

Steps:

  • Whisk eggs, sugar, and salt together in a large bowl. Pour in milk and whisk to combine. Gradually add 1 1/2 cups plus 2 1/2 tablespoons buckwheat flour and whole wheat flour, whisking to combine. Don't be afraid if the mixture looks too watery; it works well. Stir in 1 tablespoon vegetable oil.
  • Heat a frying pan over medium-high heat. Brush the bottom with a little oil and pour in 1 ladle of batter in a swirl, so it spreads evenly into a thin layer. ASPARAGUS IN BUCKWHEAT CREPES

Asparagus in Buckwheat Crepes image

I am looking for interesting ways to use some of the flour I have on hand - one of which is buckwheat and thought this looked promising and oh-so elegant. Recipe source: Bon Appetit (April 1986)

ASPARAGUS PROSCIUTTO CREPES WITH WHITE WINE BRIE SAUCE FOR TWO

Asparagus Prosciutto Crepes With White Wine Brie Sauce for Two image

I wanted to make a relatively easy appetizer; turned out it's filling enough to be a main course. I used Bergy's All Purpose Dinner crepes, but cut the recipe in half since there are only two of us. I added one more egg because I like eggy, runny crepes. It actually didn't take me very long. 67 minutes from start to finish (that includes eating time). I'm not great with sauces, but this one worked for me.

Provided by Austenparker

Categories     < 4 Hours

Time 1h5m

Yield 6 Filled Crepes, 2 serving(s)

Number Of Ingredients 14

24 asparagus spears, cooked (I steamed mine)
1 (8 ounce) package brie cheese
6 slices prosciutto, thinly sliced
1/4 tablespoon butter (for sauteing)
4 medium baby bella mushrooms (washed and sliced)
1/4 cup onion, diced
3 tablespoons butter
3 tablespoons flour
2 cups chicken stock (or chicken bouillon)
1/2 cup white wine (I used Pino Grigio)
1 teaspoon garlic powder
pepper
1/2 cup sour cream (I was out of milk,so I used up what I had)
1 teaspoon dried parsley

Steps:

  • Cook the asparagus to your liking and set aside.
  • Remove the rind from the brie and tear or cut into pieces; set aside.
  • In a medium skillet, melt the 1/4 tablespoon butter; add the mushrooms; saute for about 4 minutes.
  • Add the onion and continue to saute until the onion is translucent (about 3 more minutes). Set aside.
  • In a medium sauce pan, melt the 3 tablespoons butter; add the flour, stirring until smooth. I cooked this mixture on medium-medium high for about two minutes trying to get it to brown, but no luck.
  • Slowly add the chicken stock, one 1/2 cup at a time, stirring continuously to avoid lumps.
  • Once the stock is incorporated, slowly stir in the white wine as you stir to avoid lumps.
  • Add the garlic powder and ground black pepper.
  • Turn heat up to medium high and stir so the mixture is very hot, but not boiling.
  • Add the sour cream and stir briskly. The lumps will dissipate as you continue to cook the sauce.
  • Stir in the brie pieces; turn heat down to medium low.
  • Add in the parsley and sauteed mushrooms and onions.
  • Continue to heat the sauce, stirring occasionally until all lumps are removed.
  • At this point, you can either create your crepes or use your prepared crepes. I made my crepes while my sauce softly simmered.
  • Place one slice of prosciutto on the crepe.
  • Place four spears of asparagus on the crepe. Roll up the crepe.
  • Top with the sauce.
  • Serve and enjoy!

BUCKWHEAT CRêPE MADAMES

Buckwheat crêpe madames image

Enjoy these buckwheat pancakes with eggs, cheese and ham for breakfast or brunch. They're good for Pancake Day or something different at the weekend

Provided by Cassie Best

Categories     Breakfast, Brunch, Lunch, Snack, Supper

Time 50m

Number Of Ingredients 9

80g buckwheat flour
5 medium eggs
250ml milk
2 tsp Dijon mustard
4 tbsp single cream
100g mature gruyère , comté or cheddar, grated
butter , for frying
100g ham , torn
fried mushrooms or steamed spinach, to serve (optional)

Steps:

  • Mix the flour, 1 egg, the milk and a pinch of salt in a jug or bowl. Set aside for 30 mins, or up to 3 hrs. Mash together the mustard, cream and cheese in another bowl. Heat the oven to 200C/180C fan/gas 6, and line two baking trays with baking parchment or foil.
  • Melt the butter in a large frying pan, then once foaming, add enough batter to just cover the pan, swirling it to cover the surface in a thin layer (pour any excess back into the batter bowl). Cook until the surface is set and the underside is browning, carefully flip and cook for another minute or 2, then take off the heat.
  • Spoon a quarter of the cheese mixture onto the middle of the pancake, using the spoon to create space in the centre to hold an egg. Crack one into the space and lay a few pieces of ham around the edges. Fold each side of the pancake in towards the centre to make a square. Cook in the pan for another 30 secs-1 min, then transfer to a baking tray. Repeat with the rest of the pancakes, then bake for 6-7 mins until the egg whites are set. Serve with fried mushrooms or wilted spinach, if you like.

BUCKWHEAT CRêPES

Buckwheat Crêpes image

My favorite French street food, these are easy crêpes to make. If you keep them in the freezer, you can pull one out and top it with blanched spinach and a fried or poached egg for a quick and delicious meal. In France the crepe is made on a large, flat, hot griddle, and the egg is cracked right on top of it. That doesn't work well in a home crêpe pan. It's easier to have the crêpe already made and then top it with the fried egg.

Categories     brunch, main course

Time 2h15m

Yield About 12 8-inch crêpes

Number Of Ingredients 13

1 cup low-fat (2 percent) milk
1/3 cup water
3 large eggs
1/2 teaspoon salt
2/3 cup buckwheat flour
1/2 cup unbleached white flour
3 tablespoons canola oil
6 ounces baby spinach
Salt, preferably kosher salt
freshly ground pepper to taste
2 buckwheat crêpes, above
2 eggs, poached or fried for four minutes
2 tablespoons grated Gruyère cheese

Steps:

  • Place the milk, water, eggs and salt in a blender. Cover the blender, and turn on at low speed. Add the flours, then the canola oil, and increase the speed to high. Blend for one minute. Transfer to a bowl, cover and refrigerate for one to two hours.
  • Place a seasoned 7- or 8-inch crêpe pan over medium heat. Brush with butter or oil, and when the pan is hot, remove from the heat and ladle in about 3 tablespoons batter. Tilt or swirl the pan to distribute the batter evenly, and return to the heat. Cook for about one minute, until you can easily loosen the edges with a spatula. Turn and cook on the other side for 30 seconds. Turn onto a plate. Continue until all of the batter is used.
  • Bring a large pot of generously salted water to a boil, and add the spinach. Blanch for 20 seconds, and transfer to a bowl of ice water. Drain and squeeze dry. Chop and season with salt and pepper.
  • Heat the crêpes in a dry skillet over medium heat (or use the skillet you used to fry your eggs). Top with a spoonful of spinach, and top the spinach with the egg, setting the egg to one side so you can fold the crêpe over. Sprinkle the cheese over the top, fold the crêpe over, and transfer to a plate with a spatula. Serve hot.
